Steps:
- In 8 x 8 square baking dish, add chicken thighs, garlic, oregano, salt and pepper. Using your hands, toss to coat and let stand for 10 minutes. Preheat oven to 450 degrees F.
- Toss chicken again, making sure to spread garlic and spices evenly, and arrange in a single layer skin side up, tucking in skin underneath. You want things tight.
- Bake uncovered for 30-40 minutes or until thermometer reads at least 165 degrees F, skin starts to brown and lots of juices accumulate in the dish.
- Using a syringe/baster, pour juice over the thighs and then if you like more crispy skin (who doesn't?!) broil to your likeness.
- Remove from the oven, cover and let stand for 5 minutes to allow juices to settle.
- Serve warm, skin removed for healthier version with brown rice, quinoa or cauliflower risotto. It's a restaurant quality date night dinner.

- Put all ingredients apart from the chicken in a food processor and process until you have a smooth marinade. Add the marinade and the meat to a freezer bag, shake and massage the bag, making sure your chicken is coated with the marinade. Place the bag in a bowl and refrigerate for at least 4 hours or overnight.
- Now you have 2 options. You can either bake the chicken without the marinade. I personally prefer the latter and reduce the marinade in a separate pot.
- Preheat oven to 200 Celsius and put the chicken in a baking dish WITHOUT marinade. If your thighs come with skin on put them skin side up and bake for 25 minutes. Heat out the Marinade in a pot and reduce slightly. Glaze the chicken with the marinade twice - once right when you put it in (it's fine if the marinade is not yet very thick) and once after you turn your chicken midway through the baking time, so after about 12 minutes. Your cooking time depends on the size of the thighs and depends on whether there are bones and skin on them or not. The version you see in the picture was made with boneless, skinless thighs and I baked it for about 20 minutes. Generally, the inside temperature should be 70 degree

- In a medium bowl, whisk together the shallots, apple cider, maple syrup, ginger, vinegar, chopped thyme, salt and pepper. Set aside.
- Heat a large, heavy bottomed, oven-proof pan over medium-high heat (I used an enameled cast-iron braising skillet). While the skillet heats, season the chicken thighs with salt and pepper. Add enough olive oil to coat the bottom of the skillet.
- Place the thighs skin-side-down into the skillet. Cook until the skin is golden-brown, about 5-6 minutes.

- Mix the everything except the chicken and sweet potatoes in a small saucepan and bring to the boil over high heat. Cook until the mixture reduces by half, then remove from heat and set aside to cool slightly.
- Set your oven to 400°F/200˚C, combination steam setting. If you have variable steam settings, use 80% or 100%. If not, don't worry! Just set to combi steam at the correct temperature and the oven will work out the humidity.
- Mix the chicken with the sauce in a snug-fitting tray or baking dish. Toss the sweet potatoes with the oil and extra cumin and place in a single layer on another tray (I use the perforated tray which came with my steam oven).
- Put the sweet potatoes into the oven. If you’re using chicken thighs, put them in now (potatoes on bottom shelf and chicken above), and cook everything for approximately 20-25 mins until it’s all tender and browning at the edges. If you’re using tenderloins, cook the sweet potatoes for 10 minutes first, then add the tray of chicken and cook for a further 12-15 minutes.
