Roll warm cookies in additional confectioners' sugar; cool completely on wire racks. Roll cooled cookies again in confectioners' sugar.

A pretty cookie with a mellow Maple flavour, perfect for your Christmas trays. I am posting this recipe for safe keeping. Of all the cookies my dear Aunt made for Christmas, this has been my favourite for many years.

- Beat the margarine, sugar and extract together.
- In a separate bowl, stir the flour and salt together, then beat into the margarine mixture until fluffy.
- Roll into 1-inch balls and place on a sprayed cookie sheet.
- Gently press a pecan half onto each cookie.
- Bake 12 minutes at 350°F; let cool slightly on pans before lifting onto cooling racks.
- Keeps 2 weeks in a covered tin, and freezes well.
- Note: This recipe does not call for eggs.

Steps:
- Preheat oven to 375 degrees. Line cookie sheets with parchment paper and set aside.
- In a medium bowl, whisk flour, cornstarch and salt until combined.
- In a large bowl, add powdered sugar, butter, cream cheese and vanilla and beat at medium speed until light and fluffy.
- Add flour mixture to butter mixture, stirring until combined. (Note: dough will be dry and crumbly).
- Shape dough into 1-inch balls (be careful not to overwork dough) and place on prepared cookie sheets.
- Bake for 8 to 10 minutes, or until bottoms of cookies are lightly browned. Cool 5 minutes of pan and then move to wire rack to cool completely.
- GLAZE: In a medium bowl, whisk powdered sugar and lemon juice until smooth. Dip the tops of cooled cookies into glaze and place on wire rack. Decorate with sprinkles, as desired. Let cookies stand until glaze is set.

- 1. Combine butter, cream ,flour. mix well, cover and refrigerate for 1-2 hrs. or til dough is easy to handle.
- 2. remove about 1/3 chilled dough, let sit at room temp for about 10 min. then roll out on floured surface 1 /8 in. thick and cut w/1 1/2 " round cookie cutter (or you may use a design if you want).
- 3. place cutout in plate filled with sugar, turn to coat and put on ungreased cookie sheet and prick w/fork a few times. bake 375 for 7-10 minutes remove and cool.
- 4. for filling: cream butter & confectioners sugar and add maple flavoring/extract. if making with cream cheese, add that to ingredients and tint w/food coloring (if for Christmas)then just cover 1/2 cookie with filling and top with other half.
- 5. Note: these cookies are like layers of pastry. be gentle when frosting them and enjoy!

- Place the medium pot (b) for cooling down and mixing the boiled syrup into the freezer. This pot can be smaller than the one to boil your syrup. Prepare a saucepot or stainless steel bowl to use as an ice bath. Add a generous amount of ice cubes to the bottom and keep it in the fridge until you’re ready for it. Getting those saucepots prepared before you start is key.
- Attached your candy thermometer to a medium to large saucepot*. On low to medium heat, bring 2 cups of pure maple syrup to a gentle boil. Do not stir the syrup while it’s boiling. Keep an eye on your boiling syrup at all times, don’t walk away. If your syrup boils too close to the edge, reduce your heat to prevent overflowing. Once the syrup reaches 234° F (some wait until 235° F, but that makes it thicker), remove it from the heat.
- Immediately transfer the boiled syrup to the medium pot (b) placed overtop the larger pot (c) with the ice cubes. Be very careful hot maple syrup can burn you! Cooldown the maple syrup to about 95° F. Once cooled, get your arm ready, find a partner and take turns stirring and stirring some more. The process takes about 30 minutes to transform the syrup into a gorgeous golden, thickened maple cream.
