This refreshing blackberry cocktail is how you take advantage of prime berry season during the summer months. I've also used other types of fruit, including raspberries, kiwi and strawberries. -Donna Noel, Gray, Maine

Number Of Ingredients 7

4 fresh or frozen blackberries, thawed
5 fresh mint leaves
1 tablespoon maple syrup
1 lime wedge
1/4 cup club soda, chilled
1-1/2 ounces light rum
1/2 to 3/4 cup ice cubes

Steps:

  • In a glass, muddle the blackberries and mint with maple syrup. Squeeze lime wedge into the glass. Stir in club soda and rum. Strain into a chilled glass; serve with ice.

½ cup fresh blackberries
¼ cup raw sugar
6 large mint leaves
1 tablespoon lemon juice
1 tablespoon lime juice
4 fluid ounces lemon-lime-flavored carbonated beverage (such as 7UP®), or as needed
2 fluid ounces vodka
4 cubes ice, or as desired

Steps:

  • Combine blackberries, raw sugar, mint leaves, lemon juice, and lime juice in a tall glass; muddle until mint leaves and blackberries are slightly crushed. Add lemon-lime beverage and vodka. Fill a cocktail shaker with ice; add blackberry mixture. Cover shaker and shake; pour into a glass.

Try this recipe. It's like a sassy twist on the classic Latin combo of fresh mint, lime, and rum. The maple adds depth, pairs well, and tastes great on a hot summer day.

1 cup maple syrup (I personally like the pure maple from Coombs Family Farms)
1 cup packed fresh mint leaf, plus
2 sprigs of fresh mint
fresh lime juice
light rum
club soda

Steps:

  • Heat syrup to a simmer in small saucepan. Remove from heat. Reserve 15 of the mint leaves. Add the remaining mint leaves to the syrup and let steep until cool, then strain (If you like more of a mint taste refrigerate for up to 1 week).
  • In a cocktail shaker, muddle the 15 reserved mint leaves with 1 part lime juice and 1 part mint maple syrup. Add ice and 1 part rum. Shake well. Fill a highball glass with ice. Pour the drink into glass. Top off with Club soda. Garnish the drink with mint sprig. Enjoy!

This is certainly an option, although it isn’t necessary).
  • Add desired amount of fresh blackberries and chopped basil to each glass, then fill with ice. Pour 1-½ ounces of white rum into each glass, followed by 1 ounce of lime juice and 3 to 4 tablespoons (to taste) of blackberry syrup. Fill the remainder of each glass with sparkling water (or soda water), stir, and garnish with lime wedges.
