TASTY MAPLE TRAIL MIX
Someone shared this recipe with me and I adjusted it to my and my family's liking. It's easy to make and provides a nice snack option than the other items that seem to fill up my pantry!

- Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
- Stir the maple syrup, vanilla extract, and cinnamon together in a small saucepan over medium heat until it begins to simmer. Meanwhile, combine the rolled oats, pecans, almonds, raisins, cranberries, and sunflower seeds in a large mixing bowl. Pour the hot maple syrup over top, and stir until evenly mixed. Spread onto prepared baking sheet.
- Bake in the preheated oven for 15 minutes. Remove from oven, scrape onto a cold baking sheet, and cool to room temperature. Break into clumps and stir in the chocolate covered peanuts once cool.

LOW CARB MAPLE BACON NUT MIX
If you are looking for a new low carb snack, try this maple bacon roasted nut mix. Bits of bacon scattered among roasted nuts that are flavored with maple make the perfect salty, sweet snack. Only 4.4g net carbs per serving.

Steps:
- Preheat oven to 350 degrees - cook bacon 30 minutes325 for 20 minutes.
- Lay the 6 pieces of bacon out on a cookie sheet. Place into preheated oven and cook for about 30 minutes until the bacon is crispy. Watch that it doesn't burn.
- Take out the bacon, crumble it and set aside. Take the nuts and coat them with the maple syrup and sweetener.
- Place the nuts on the cookie sheet and mix in the bacon grease. Spread the nuts evenly on the cookie sheet, turn the oven down to 325 degrees and bake for about 20 minutes until the nuts are nice and browned but not burnt.Let cool down completely for a few hours so they can harden. Store in an airtight container in the refrigerator.
- NOTE: If not low carb, use real maple syrup in the same amount and disregard the extra sweetener.You can use substitutes for the Lakanto maple syrup. Please read post for other ideas.
HOMEMADE SMOKED MAPLE BACON
Steps:
- Gather the ingredients.
- Rinse the pork belly under cold water.
- Pat it dry with paper towels or a clean dishcloth.
- Combine the maple syrup, salt, pepper, and curing salt (if using) in a small bowl.
- Rub the seasoning mixture into all sides of the pork belly, using your scrupulously cleaned hands. Spend a couple of minutes massaging the seasoning/curing mixture into the meat.
- Place the pork belly, along with any leftover curing mixture, into a plastic bag and seal it shut. Store it lengthwise in the refrigerator for 10 to 14 days, turning the bag over occasionally. The bacon should be fully cured at this point, with a firm texture and no soft spots.
- Preheat oven to 200 F. Rinse the bacon.
- Again pat it thoroughly dry with paper towels or a clean, dry dishtowel.
- Place the bacon on a rack over a pan and roast the cured bacon in a 200 F oven until the internal temperature reaches 150 F. This should take about 2 hours.
- Remove from oven and baste the cured and roasted bacon with the liquid smoke. Use a pastry brush to evenly coat all sides and allow it to set on the counter to air-dry for 30 minutes.
- Store the bacon in a tightly sealed container or bag in the refrigerator for up to a month, or in the freezer for up to a year.

- Preheat oven to 250°. In a large bowl, combine cereals, pretzels and pecans. , In a small microwave-safe dish, combine maple syrup and butter. Cover and microwave on high 45 seconds or until butter is melted. Stir in vanilla. Pour over cereal mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake 45 minutes, stirring every 15 minutes. Cool on a wire rack. Store in an airtight container.

MAPLE BACON DIP

Steps:
- In a medium skillet over medium heat, fry the bacon until slightly crisp, 10 to 12 minutes. Drain on a paper towel and set aside.
- Place the yogurt, maple syrup, brown sugar, vanilla and maple flavoring in a medium bowl. Mix together until smooth and fully combined.
- Chop the bacon into pieces. Fold two-thirds of the bacon into the yogurt mix and transfer to a serving dish. Garnish with the remaining bacon.
- Cut the apples into slices and toss in the lemon juice. Serve with the dip.

- Line 2 sheet pans with waxed paper, then set aside.
- Add the popcorn, bacon, pretzels and nuts to a large bowl. Mix and set aside.
- Add the sugar, butter, maple syrup, corn syrup and salt to a large, heavy-bottomed pot fitted with a candy thermometer and place over a medium-low heat. When the butter has melted, stir together, then turn up the heat to medium-high. Cook, stirring occasionally, until the candy thermometer reads "hard-crack stage" (300 degrees F), 4 to 5 minutes.
- Remove from the heat and stir in the maple extract. Carefully pour over the snack mix and toss using two wooden spoons. Transfer to the prepared sheet pans and spread out to allow it to cool, about 10 minutes. Break into clusters and transfer to a large serving bowl.

- In a large bowl, combine the flour, salt, baking powder, pepper, and onion powder. Use a pastry cutter or the back of two forks to cut the butter into the dry ingredients until pea-sized clumps are throughout. Stir in the bacon.
