MAPLE-BACON CHOCOLATE CHIP COOKIES

This recipe was born out of a challenge to include bacon in a cookie batter. While that has been done before, the inclusion of chocolate chips and maple together in a whipped batter make this a sweet-yet-savory chewy cookie treat!

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, room temperature
¾ cup packed brown sugar
¾ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon maple extract
⅓ cup chopped cooked bacon
1 cup bittersweet chocolate chips

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Whisk together the flour, baking powder, baking soda, and salt; set aside.
  • Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. Stir in the bacon and chocolate chips. Scoop by rounded tablespoonfuls onto prepared cookie sheets.
  • Bake in the preheated oven until edges turn golden brown, 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

1/2 cup butter, softened
3/4 cup packed brown sugar
2 large eggs, room temperature
1 tablespoon 2% milk
1 teaspoon vanilla extract
3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1/2 teaspoon baking powder
1/4 teaspoon salt
4 bacon strips, cooked and crumbled
1/3 cup chopped pecans, toasted
1 cup confectioners' sugar
2 tablespoons maple syrup
1/2 to 1 teaspoon maple flavoring, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs, milk and vanilla. Combine flour, oats, baking powder and salt; gradually add to creamed mixture. Fold in bacon and pecans. , Spread into a greased 9-in. square baking pan. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool on a wire rack. For glaze, in a small bowl, mix confectioners' sugar, syrup and if desired, maple flavoring. Drizzle over bars; let stand until set.

Continue to cook the bacon until crisp and dark in spots (about 10 – 15 minutes more). Let the bacon cool completely, then chop into small bits.
  • Combine flour, baking soda and sea salt in a medium bowl, whisking to combine. Set aside. Add butter and sugar to a stand mixer fitted with the paddle attachment. Cream sugar on medium speed until light and fluffy (2 – 3 minutes). You can also use a hand mixer here. Add the egg, vanilla extract and maple extract, mixing until incorporated. Add the maple syrup, and mix until well incorporated. Add the dry ingredients (flour mixture) to the wet ingredients (butter-egg mixture) in 3 additions, beating at a lower speed until each addition is just incorporated. Fold in the reserved, chopped candied bacon. Cover the cookie dough with plastic wrap, and let chill in the refrigerator for 1 hour.
  • Preheat an oven to 350°F and place a rack in the center of the oven. Scoop 1 tablespoon of cookie dough, and, using your hands, roll into a ball. Place balls on a parchment-lined baking sheet 2 inches apart. Bake for 10 – 12 minutes until the cookies turn lightly golden around the edges. Allow to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
