Maple-Bacon Muffins image

Serve these warm muffins made using Gold Medal® all-purpose flour and bacon - perfect for a delicious breakfast.

Number Of Ingredients 9

1 2/3 cups Gold Medal™ all-purpose flour
1/3 cup packed brown sugar
2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup milk
1/2 cup real maple syrup
1/3 cup butter, melted
1 egg
6 slices bacon, crisply cooked, crumbled (1/2 cup)

Steps:

  • Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • In large bowl, mix flour, brown sugar, baking soda and salt. In medium bowl, stir milk, syrup, butter and egg until blended. Add milk mixture to flour mixture; stir just until dry ingredients are moistened. Stir in bacon. Fill muffin cups three-fourths full.
  • Bake 16 to 18 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

Number Of Ingredients 8

2 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1 large egg
1/2 cup 2% milk
1/2 cup canola oil
2/3 cup maple syrup
8 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the egg, milk, oil and syrup. Stir into dry ingredients just until moistened. Fold in bacon., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire tack. Serve warm. Refrigerate leftovers.

This apple muffin makes a tender moist muffin with the combination of applesauce and buttermilk. As with most all muffin recipes, don't over mix the batter or else the muffins may become tougher. The batter makes a bit more than 12 muffins worth but it is better to have a bit extra batter to accommodate for different people's scooping methods. Our favorite way to scoop batter into muffin cups is to use a large cookie scoop.

2 cups (250g) all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 cup (60ml) canola oil (or vegetable oil)
3/4 cup (165g) packed brown sugar
2 large eggs
1 cup (245g) unsweetened applesauce
1 teaspoon vanilla extract
3/4 cup (180ml) buttermilk
1/2 pound (about 1 large - 225g) baking apple ( *see Note 1, peeled cored, and cut into small pieces)
1/2 pound (225g) bacon (, cut into 1 1/2-inch pieces)
1/4 cup (1/2 stick or 60g) unsalted butter
1/4 cup (60ml) maple syrup
1/4 cup (55g) packed brown sugar

Steps:

  • Preheat oven to 375°F. Lightly oil a 12-capacity muffin tray or line with baking cups.
  • Whisk together the flour, cinnamon, baking powder, and salt. Set aside.
  • In a large bowl, whisk together the oil and brown sugar. Whisk in the eggs one at a time. Whisk in the applesauce and vanilla extract.Fold in half of the flour mixture. Stir in the buttermilk. Fold in the remaining flour mixture until just combined. Gently stir in the apple pieces.
  • Scoop the batter into the prepared muffin pan and tap the pan on the counter a few times to release any air bubbles.
  • Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the middle of the muffins. Let cool for about 15 minutes and then remove the muffins from the pan and place on a cooling rack.
  • Make the maple bacon glaze. In a large skillet cook the bacon pieces until nearly crisp, or to your preferred crispness. Remove the bacon from the skillet and drain off the majority of the rendered bacon fat.
  • Over medium-low heat, melt the butter in the skillet which the bacon was cooked in. Stir in the maple syrup and brown sugar, mixing until the sugar is dissolved. Add the bacon to the maple/butter sauce.
  • Place a few pieces of bacon on each muffin and drizzle the maple sauce over the muffin. Allow to cool slightly and serve.

6 tablespoons cold unsalted butter, cut into small pieces
6 tablespoons sugar
1/2 teaspoon salt
6 tablespoons all-purpose flour
1 tablespoon pure maple syrup
2 1/4 cups all-purpose flour
1/2 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup pure maple syrup, room temperature
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup plain yogurt

Steps:

  • Make the streusel: In a medium bowl, combine oats, butter, sugar, salt and flour and work with hands until mixture is no longer dry and large clumps form. Add maple syrup and mix to combine. Cover and refrigerate.
  • Make the muffins: Preheat oven to 400 degrees with racks in upper and lower thirds. Line 2 standard 12-cup muffin tins with baking cups. In a medium bowl, whisk together flour, oats, baking powder, baking soda, and salt.
  • With an electric mixer on medium speed, beat butter, maple syrup, and sugar until pale and fluffy, 3 to 5 minutes. Add eggs, one at a time, beating well after each addition; mix in vanilla.
  • Reduce mixer to low. Add flour in 3 additions, alternating with 2 batches of yogurt; beat until combined. Transfer batter evenly amongst 24 muffin tins (a scant 1/4 cup per tin). Remove streusel from refrigerator and break up into small pieces. Scatter evenly over the top of the muffins. Bake, rotating once, until tops spring back and a toothpick inserted into the middle comes out clean, 16 to 18 minutes. Let cool 5 minutes in tin, then transfer to a wire rack to cool completely. Brush muffins with more maple syrup while warm, if desired.
