30 Cloves ((for studding the ham, optional - mainly for decorative purposes))

APRICOT-GLAZED HAM

Apricot-Glazed Ham image

Provided by Katie Lee Biegel

Categories     main-dish

Time 2h55m

Yield 8 to 10 servings

Number Of Ingredients 9

One 7- to 8-pound cured smoked ham, bone in
2 cups apricot jam
2 tablespoons unsalted butter, plus more for greasing the foil
2 tablespoons Dijon mustard
2 tablespoons minced fresh sage
1 tablespoon red wine vinegar
1 bay leaf
Pinch of ground cloves
Pinch of cinnamon

Steps:

  • Preheat the oven to 375 degree F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a knife to lightly score the fat in a diamond pattern, taking care not to cut into the meat. Bake the ham for 1 hour.
  • While the ham is baking, make the glaze. In a small saucepan, combine the jam, butter, mustard, sage, vinegar, bay leaf, cloves and cinnamon over medium-low heat. Cook, stirring, until the glaze is thin and syrupy.
  • After the ham has baked 1 hour, brush with about half of the glaze and return to the oven. Cook, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 1 to 1 1/2 hours longer. If the glaze starts to burn, tent with a piece of greased foil.
  • Remove the ham from the oven and tent with a piece of greased foil. Let rest for about 10 minutes before carving.

Gordon Ramsay's succulent maple-glazed ham is perfect for a Boxing Day feast

Provided by Gordon Ramsay

Categories     Dinner, Lunch, Main course

Time 3h10m

Number Of Ingredients 10

1 whole leg of gammon, smoked or unsmoked, around 5kg weight bone-in
1 cinnamon stick
1 tsp peppercorns
1 tsp coriander seeds
2 bay leaves
about 25 whole cloves
200ml maple syrup
2 tbsp coarse-grain mustard
2 tbsp Worcestershire sauce
2 tbsp soy sauce

Steps:

  • Put the gammon in a very large pan and cover with cold water. Add the spices and bay. Bring to the boil, then turn down and simmer for around 1 hr 50 mins, topping up the water level with boiling water, if necessary. Scoop off any scum that rises to the top every now and then.
  • Carefully pour the liquid away (I like to keep it for making soup), then let the ham cool a little while you heat the oven to 190C/fan 170C/gas 5. Lift the ham into a large roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern, then stud cloves all over the ham. Can now be chilled for up to 2 days.
  • Mix the glaze ingredients in a jug. Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 35 mins, basting with the pan juices 3-4 times as it bakes. Turn the pan around a few times during cooking so the fat colours evenly. Remove from the oven and allow to rest for 15 mins before carving. Can be roasted on the day or up to 2 days ahead and served cold.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 3h

Number Of Ingredients 5

1 bone-in fully cooked half ham (about 10 pounds), rind removed
1 1/2 cups apricot jam
1 1/2 cups bourbon
1/4 cup lemon juice (from 2 lemons)
1/2 teaspoon ground pepper

Steps:

  • Preheat oven to 375 degrees, with rack in lower third. Wrap ham in a large piece of parchment-lined foil and place, cut side down, on a foil-lined rimmed baking sheet; bake 1 hour. MAPLE-GLAZED SMOKED VERMONT HAM

Maple-Glazed Smoked Vermont Ham image

Dijon mustard counters the sweet maple syrup and apricot jam, giving this ham a more nuanced flavor.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 8

1 smoked bone-in ham (10 to 12 pounds), room temperature
1/2 cup apricot jam
2 tablespoons Dijon mustard
3/4 cup pure maple syrup
2 tablespoons dark rum
1 garlic clove, minced
Fresh bay leaves, for garnish (optional)

  • After 4 hours, remove ham from the oven, and brush with glaze. Continue baking the ham, glazing every 15 minutes, until an instant-read thermometer inserted into thickest part of the ham (avoiding bone) registers 140 degrees, about 1 hour more. Remove from oven, and transfer to a carving board or platter. Garnish ham with bay leaves and kumquats, if desired. Slice thinly around the bone, and serve hot or at room temperature.
