APPLE MAPLE TURKEY BURGERS WITH MAPLE-DIJON SAUCE

Steps:
- Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
- For Maple-Dijon Sauce: In a small bowl, stir to combine mayonnaise, Dijon mustard, and 2 tablespoons maple syrup; set aside.
- For Turkey Burgers: In a medium bowl, mix together all ingredients for burgers. Wet hands to prevent sticking and shape into 4 patties.
- Place burgers on hot oiled grill for 5 to 6 minutes per side or until done.
- Serve on buns with traditional burger condiments and a dollop of maple-Dijon sauce.

MAPLE APPLE CHICKEN BURGERS
Chicken burgers topped with grilled Granny Smith apples and onions. Topped with a sauce similar to a mild honey mustard, but using real maple syrup instead of honey. We use the Burger or Hot Dog Buns recipe from this site to make our own burger buns, but you could substitute a potato hamburger bun from the grocery store.

Steps:
- Make the 'secret sauce' by whisking the mayonnaise, 2 tablespoons maple syrup, and the Dijon mustard together in a small bowl; set aside.
- Heat 2 tablespoons canola oil in a skillet over medium heat; cook and stir the onion and about half the chopped apple in the hot oil until soft, 7 to 10 minutes. Set aside.
- Mix the remaining uncooked apple, the ground chicken, 2 tablespoons maple syrup, Italian seasoning, egg, salt, and pepper together in bowl. Shape the burger mixture into 6 balls; the mixture will be loose, but that is okay.
- Heat 1 tablespoon canola oil in a large skillet over medium heat. Place one of the balls into the hot oil and flatten with the back of spoon to create a patty. Cook until slightly brown on one side and then flip and cook the other side until cooked through, 5 to 7 minutes per side; repeat for each portion.
- To assemble, place the chicken burgers on buns; top with the grilled apple and onions. Pour some secret sauce over the top of each burger. More secret sauce can be served on the side if desired.

- 1. Cut bacon into super small pieces with either a knife or kitchen shears. Place bacon in a frying pan and cook until bacon is crispy. 2. Dice onion and apple. I like to use one of those little chopping devices for this to get it really fine, but that's up to you and your kitchen to decide. 3. Chop the rosemary. 4. When the bacon is cooked, remove it from the pan, then add the onion so it can cook in the bacon fat. Saute for 5 minutes over medium-high heat and stir occasionally until onion is translucent. 5. Add the apple and rosemary and continue to sauté for 5-8 minutes, until onion is browned and both onion and apple are soft. 6. Combine the ground chicken, bacon, apple and onion mix, and salt in a bowl. Mix using your hands and form the meat into four patties. 7. Use the same frying pan you've been using to cook your burgers. You may need to add some coconut oil to the bottom of the pan to keep it greased. 8. Cook patties on medium heat and flip every 3-5 minutes. 9. While your burgers are cooking, make your cranberry sauce! 10. Combine everything in a small saucepan and bring to a boil over high heat. 11. Reduce heat and simmer uncovered for 8-10 minutes, stirring occasionally, until berries have popped and the sauce has thickened. 12. Refrigerate in a serving bowl until you're ready to serve everything!
