CLASSIC MEATLOAF RECIPE

This Classic Meatloaf recipe was my dad's claim to fame, at least in our house! It's tender and juicy and has a uniquely delicious flavor. The brown sugar and ketchup glaze just puts this meatloaf over the top!

2 pounds ground beef (85/15)
1/2 cup minced onion
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire
1 cup crushed crackers (quick cook oats or breadcrumbs)
2 teaspoons Porterhouse seasoning
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
  • Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
  • Shape into a loaf and place into a loaf pan.
  • In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
  • Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
  • Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

1 tablespoon butter
1 tablespoon minced garlic
1 onion, chopped
1 cup chopped celery
2 eggs
2 pounds lean ground beef
1 tablespoon Cajun seasoning
1 cup seasoned bread crumbs
1 pitted black olive, cut in half
1 cup ketchup

Steps:

  • Melt the butter in a skillet over medium heat. Cook and stir the garlic, onion, and celery in the hot butter until the onion has softened and turned translucent, about 10 minutes. Transfer the vegetables to a mixing bowl, and allow to cool to just warm.
  • Preheat an oven to 350 degrees F (175 degrees C). Place a sheet of aluminum foil onto a baking sheet, and spray with nonstick cooking spray.
  • Crack the eggs into the mixing bowl with the vegetables, and mix until the egg is smooth. Add the ground beef, Cajun seasoning, and bread crumbs. Mix with your hands until the mixture is evenly blended. Form the meat mixture into the shape of a stick man.
  • Bake in the preheated oven until no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Once done, place the olive halves onto the head for eyes, and pour the ketchup onto the abdomen. Return to oven, and bake 10 more minutes. Serve with a plastic knife impaled in the abdomen for effect.

1 cup dried bread crumbs
1/2 cup milk

2 tablespoons Worcestershire sauce

1/2 teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.
  • In a large mixing bowl, knead together the ground beef, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
  • Shape the meat into a loaf and put it into the prepared pan. Bake in the 350 degree oven for 45 minutes.
  • Mix up the glaze in a small bowl by whisking together the ketchup, brown sugar, and Worcestershire sauce. Brush it over the hot meatloaf.
  • Increase the oven temperature to 400 degrees and bake an additional 15 minutes, or until the meatloaf reaches an internal temperature of 160 degrees F.

2 tablespoons extra virgin olive oil
1/2 onion, diced
1/2 green bell pepper, diced
2 garlic cloves, minced
1 cup potato chips, crushed
1 cup monterey jack pepper cheese, grated
3/4 cup Ritz cracker, crushed
1/4 cup barbecue sauce
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon kosher salt
1 tablespoon Tabasco sauce
1 egg
1 teaspoon thyme
1 teaspoon basil
1 teaspoon liquid smoke

Steps:

  • Preheat oven to 350 degrees.
  • In a medium skillet, saute the onion, bell pepper and garlic until translucent. Drain.
  • Combine the onion, bell pepper and garlic with all other ingredients except for the bacon in a large bowl. Mix well.
  • In a medium casserole dish, form the mix into a loaf about 8-10" long and 4-6" wide.
  • Cut bacon slices in half and place over loaf forming a covering over the entire loaf.

1 pound bacon
2 eggs
½ cup chopped onion
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
2 pounds ground beef
¾ cup soft bread crumbs
3 cups shredded Cheddar cheese
1 cup barbeque sauce
2 cups shredded Swiss cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x15-inch baking dish.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until beginning to brown, but still limp. Remove 1/4 of the bacon to drain on a paper towel-lined plate. Cut each strip in half, and set aside. Continue cooking the remaining bacon until evenly browned, about 10 minutes total. Drain the bacon slices on a paper towel-lined plate. Crumble once cool.
  • Beat the eggs with 1/4 of the crumbled bacon in a large mixing bowl. Stir in the onions, salt, and black pepper. Mix in the ground beef and bread crumbs until evenly mixed. Cover a work surface with two 20-inch sheets of waxed paper. Pat the beef mixture into a 14x18-inch rectangle. Sprinkle evenly with Cheddar cheese and the remaining crumbled bacon. Roll the beef into a cylinder from one of the short ends to form a 14-inch-long loaf. Pinch the ends to seal in the cheese. Place into the prepared baking dish.
  • Bake in the preheated oven for 30 minutes, then brush with the barbeque sauce, and return to the oven for 20 minutes longer. Remove the manloaf from the oven, and drape with the precooked bacon strips. Sprinkle with the shredded Swiss cheese, and bake to an internal temperature of 160 degrees F (70 degrees C), about 15 minutes more. Let stand for 10 to 15 minutes before slicing.

2 pounds lean ground beef
1 red onion, coarsely chopped
¾ cup Italian-seasoned bread crumbs
2 eggs
1 pinch salt and ground black pepper to taste
1 (8 ounce) package shredded smoked mozzarella cheese
1 teaspoon vegetable oil, or as needed
4 slices hardwood smoked bacon
1 ½ teaspoons Dijon mustard, divided

1 red bell pepper, sliced into strips
½ cup sliced fresh mushrooms
1 (8 ounce) package crumbled aged feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, red onion, bread crumbs, eggs, salt, and pepper together in a large bowl. Divide mixture in half. Press half of the mixture in the bottom of a loaf pan.
  • Run 2 fingers lengthwise down the center of the beef mixture. Fill hollowed space with mozzarella cheese. Mold remaining beef mixture around cheese, pressing down firmly.
  • Heat oil in a large skillet over medium-high heat. Cook bacon slices until lightly browned, about 5 minutes. Arrange bacon slices over beef mixture.
  • Cook and stir 3/4 teaspoon mustard and 3/4 teaspoon Worcestershire sauce in the bacon grease in the skillet for 1 minute. Add bell pepper; cook until softened, 3 to 4 minutes. Spread bell pepper over bacon.
  • Place remaining mustard, Worcestershire sauce, and mushrooms in the skillet; cook and stir until soft, about 5 minutes. Spread evenly over bell pepper. Scatter feta cheese over mushrooms.
  • Cover loaf pan with aluminum foil; place on top of a baking sheet.
  • Bake in the preheated oven until an instant-read thermometer inserted into the beef reads at least 160 degrees F (71 degrees C), 60 to 90 minutes.

One of my favorite comfort foods of all time is meatloaf, we have it for dinner, then have the leftovers for sandwiches for lunch the next day. This spinach packed meat loaf is a big winner in my books!!

1 lb ground pork
1 cup bread, crumbs
2 cups fresh spinach, chopped
2 tablespoons parsley, chopped
2 tablespoons basil, chopped
2 large eggs
1/4 cup beef stock
1/4 cup ketchup
2 teaspoons frank's hot sauce
1 teaspoon Worcestershire sauce
1 roma tomato, finely chopped
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Place the beef, pork, bread crumbs, spinach and other greens in a large bowl, and mix lightly.
  • In a separate bowl, mix all the wet ingredients, tomatoes, pepper and salt. Pour this over the meat mixture, and mix until it comes together.
  • Form the mixture into a loaf on a sheet pan, and refrigerate for 1 hour.
  • Preheat oven to 350°F Bake for 1 hour and 15 minutes or until the internal temperature reaches 165°F Let stand for 5 minutes before serving.
  • EMBELLISHMENT: Some people like a glaze on meat loaf. If you are one of these people, simply brush the outside of the loaf with ketchup halfway through the cooking process.
