Mangoes Foster With Creme Fraiche (By Bobby Flay) image

I first saw Bobby Flay prepare this on the Food Network in 2007. It was a featured recipe during a segment called "Boy Meets Grill" in the episode called Dinner on the Grill. It looked so good so I just had to try it. It was an immediate hit with my family. I have made this on the grill (as Bobby Flay prepared it) as well as on my stovetop, and it comes out fantastic each time.

Number Of Ingredients 8

3 slightly under-ripe mangoes
1/2 cup unsalted butter (1 stick)
1/2 cup packed light brown sugar
1/3 cup Bourbon
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup chopped toasted pecans
1/2 cup creme fraiche (optional) or 1/2 cup sour cream (optional)

Steps:

  • Heat the grill to high.
  • Halve each mango and remove the pits. (To make it easier, I have cut the mangoes in quarters because it makes it easier to cut them away from the pit.) Remove the peels from each mango half. Cut diamond shapes about 1/2-inch deep in the top of the mango flesh, but be careful to not cut all the way through.
  • Place a medium saucepan on the grates of the grill (or on stove top over medium heat). Add the butter and brown sugar to the pan. Cook, stirring occasionally until the sugar has melted and the sauce thickens slightly, about 5 minutes.
  • Remove the pan from the heat and add the bourbon. Using a long match, ignite the bourbon and allow the flames to subside. Stir in the cinnamon, salt and chopped pecans.
  • Top mangoes with the sauce and garnish with a dollop of creme fraiche or sour cream, if using. (I usually skip the sour cream and just sprinkle a little extra chopped pecans).

Grilled Peaches with Creme Fraiche and Molasses image

Vegetable oil, for brushing
8 peaches, halved and pitted
8 ounces creme fraiche
1/4 cup molasses

Steps:

  • Brush peaches with oil and place on the grill, cut-side down. Grill until golden brown, about 1 1/2 minutes. Turn the peaches over and grill another 45 seconds. Remove the peaches to a plate and place a tablespoon of creme fraiche in the indentation of each peach. Drizzle with the molasses.

I just saw Bobby Flay make this on his show Brunch At Bobby's. It looked SO good I am putting it here for safe-keeping. I am sure any thick bread would work fine if you can't find brioche.

3/4 cup sugar
1/2 cup fresh orange juice
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
2 oranges, segmented
1 teaspoon orange zest
6 large eggs, lightly beaten
1 1/2 cups heavy cream
1 cup milk
3/4 cup fresh orange juice
2 teaspoons vanilla extract
1 teaspoon orange zest
1/2 teaspoon fine sea salt
eight 1 3/4-inch-thick slices day-old brioche bread
6 tablespoons unsalted butter, plus more for serving
4 tablespoons canola oil

Steps:

  • For the syrup:
  • Combine the sugar and orange juice in a medium high-sided saute pan over high heat and cook until caramelized, about 2 minutes; do not stir. Whisk in the butter and vanilla extract until melted.
  • Stir in the oranges and zest.
  • For the French toast:.
  • In a baking dish, whisk together the eggs, cream, milk, orange juice, vanilla extract, orange zest and salt until combined.
  • Soak the bread slices in the egg mixture until completely soaked through, at least 15 seconds per side.
  • Heat 2 tablespoons butter and 1 tablespoon oil in in a large saute pan over medium-high heat until it begins to sizzle.
  • Add 3 slices bread at a time and cook, turning once, until golden and crisp on both sides, about 2 minutes per side.
  • Repeat with the remaining bread.
  • Serve the orange marmalade syrup over the French toast.

Feta and Scallion Dip With Olive Oil and Lemon (Bobby Flay) image

DH and I made this tasty dip from my "Boy Gets Grill" cookbook. We easily halved the recipe to suit four people. I got lots of compliments from the friends I served it to. It is pretty lemony, so if you are not a fan of lemons, this may not be for you. Also, my feta was Bulgarian and it was extremely salty so I did not add any extra salt to the recipe. Also, we cheated and just used store bought pita chips.

12 scallions, dark green and pale green parts only, chopped
1 scallion, thinly sliced for garnish
1/4 cup extra virgin olive oil, plus extra for brushing the pitas
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1 lb feta, crumbled
salt, to taste
fresh ground black pepper, to taste
6 pocketless pita breads

Steps:

  • Combine the chopped scallions, oil, lemon zest and lemon juice in a food processor and process until smooth. (If you don't have a food processor, you can use an electric mixer or a wooden spoon instead, but the dip will not be as smooth). Add the feta and process until smooth.
  • Scrape the mixture into a serving bowl. (The dip can be made up to this point a few hours in advance, covered and kept refrigerated). Bring to cool room temperature before serving).
  • When ready to serve, season to taste with salt and pepper and garnish with the sliced scallion.
  • Heat your grill to high.
  • Brush the pitas with a little oil and sprinkle with salt and pepper. Grill the pitas for 1 minute on each side, until lightly browned. Remove from the grill and cut each pita into 8 wedges for serving. Serve warm with the dip.
