- This and other similar fruit drinks, which translate literally as "fresh water," are served all over Mexico and they're a cinch to replicate at home. The key is to strain the pulpy fruit to make a clearer liquid. Instead of melon, you could use strawberries, pineapple, or mango -- any fruit that is soft enough to puree.
- Puree cantaloupe and pour through a fine sieve to eliminate pulp. In a pitcher, mix strained fruit puree with water and season with sugar and lime juice, to taste.

- Combine sugar and 1/4 cup water in a small saucepan and cook over low heat until the sugar melts, 3 to 4 minutes. Remove from the heat and set aside to cool, about 15 minutes.
- Combine mangoes, the simple syrup (water and sugar mixture), lime juice, and 1 cup of water in the bowl of an electric blender; blend until smooth, then strain through a fine sieve into a pitcher. Add remaining water and fresh mint, stir, and chill for at least 2 hours before serving.

- Peel the mangoes and remove all the flesh from the pit. Put the flesh directly into a blender or food processor. Squeeze the juice out of any remaining flesh on the pit that is too difficult or rough to cut away from the pit.
- Add 3 tablespoons of cane sugar and 3 1/2 cups of cold water to the blender or food processor and puree until completely smooth.
- Place a fine-mesh strainer or sieve over a pitcher and pour the contents of the blender through the sieve. You should only end up discarding about 2 tablespoons or so of the fibrous pulp left behind from the mango flesh.
