Categories     Dessert

Time 2h20m

Yield 6

Number Of Ingredients 6

2 medium to large ripe mangoes
1/2 cup water
1 packet (3 teaspoons) plain gelatin
1/3 cup white sugar
1 cup good-quality coconut milk
Optional: shaved coconut

Steps:

  • Gather the ingredients.
  • Cut the mango into pieces and scoop out the flesh from the skin, including around the stone. Place the mango flesh in a food processor or blender and blitz to create a smooth puree. Leave the mango in the machine.
  • In a saucepan, heat up the water until it reaches a rolling boil. Remove from the heat. While stirring the water with a whisk or fork, sprinkle the gelatin over the surface and stir briskly to prevent any lumps.
  • Add the sugar to the hot water/gelatin mixture and stir to dissolve.
  • Add this mixture to the mango in the food processor/blender. Add the coconut milk and blitz briefly until the ingredients are combined.
  • Pour the pudding into dessert bowls or cups and place in the refrigerator for at least 2 hours (or up to 24 if making ahead).
  • Serve cold on its own or with some shaved coconut on top if you like.

  • Pour water into a microwave-safe bowl. Sprinkle gelatin over the top and let it sit for 5 minutes to soften.
  • Transfer water and gelatin to the microwave and heat on high for 1 minute. Whisk in sugar and continue whisking until gelatin and sugar are both fully dissolved. (If they are not easily dissolving, microwave the mixture for another minute and then continue whisking. Be sure there are no unincorporated pieces of gelatin in this mixture or the pudding will have lumps.)
  • Place small bowls or glasses on a sheet pan (this will make it easier to transfer to the fridge). Fill with pudding. Tap the pan lightly on the counter to remove any air bubbles.

  • Transfer soaked tapioca pearls mixture (pearls and any unabsorbed liquid) into a saucepan and add coconut milk, sweetener, vanilla, and salt. Bring contents to a boil on medium heat, stirring occasionally. Reduce heat and simmer for 20 minutes continuing to stir occasionally.
  • Remove from heat and allow the pudding to cool. Divide it between some glass bowls or jars into portions. If you like it hot, dive in after letting it cool off to an eating temperature (10 minutes). Traditionally it’s eaten cold, and that’s how I like it, so I chill mine overnight (it makes a lovely breakfast treat by the way!). Prior to eating, stir in the chopped mango (or skip if you’re feeling like a traditional plain tapioca pudding only) and enjoy!

  • In a blender, add coconut cream and mangoes. Blend on high speed until smooth. If the mixture is not sweet enough for your liking, you can add a little honey or other sweetener and blend again. Keep in mind that the coconut and mango flavor will be more pronounced once the mixture sets in the fridge.
  • Pour mixture into individual serving bowls. Chill for several hours in the fridge to firm up and set. Top with lightly whipped coconut cream, fresh mangoes and any other toppings you desire. (To make the lightly whipped coconut cream topping, I opened another can of coconut cream and whipped the cream with a little of the coconut water by hand so that the consistency would be a thin cream spread across the entire cup. If you desire a thicker cream, you can whip just the chilled cream by itself with a hand mixer to thicken it. Then you can pipe or add a dollop of it on top.)
