1 stick (1/2 cup) unsalted butter, room temperature, plus more for baking dish
1 small or 1/2 medium pineapple (about 1 3/4 pounds), peeled, cored, and cut into 1/2-inch pieces
2 ripe mangoes, peeled and cut into 1/2-inch pieces
2 tablespoons dark-brown sugar
3/4 cup plus 2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish. Toss pineapple, mangoes, and brown sugar together in a bowl. In a separate bowl, whisk together flour, cinnamon, salt, and baking soda.
  • Beat butter and granulated sugar in a mixing bowl until fluffy, about 2 minutes. Beat in vanilla. Add eggs, one at a time, beating well after each. Add flour mixture; beat until just combined. Measure out 1 cup fruit mixture; fold rest into batter.
  • Spread batter into prepared baking dish; sprinkle reserved fruit over the top. Bake until golden on top and a cake tester inserted in the center comes out clean, 45 to 50 minutes. Serve warm.

Unsalted butter, for baking dish
1 tablespoon grated lime zest, plus 1 tablespoon lime juice
1 cup diced pineapple, plus 6 thin rings
1/2 recipe Classic Yellow Cake Batter
Confectioners' sugar, for dusting (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish. Stir lime zest and juice and diced pineapple into batter. Spread in baking dish. Bake 15 minutes, then remove from oven and quickly arrange pineapple rings on top. Bake until top is golden brown and a toothpick inserted in center of cake comes out with a few moist crumbs attached, about 25 minutes. (Tent with foil if browning too quickly.) Let cool in dish on a wire rack 20 minutes. Dust with confectioners' sugar, if desired.

8 mangoes - peeled, seeded, and sliced
2 cups water
½ cup white sugar
2 cups white sugar
½ cup butter, softened
2 cups all-purpose flour
4 teaspoons baking powder
¼ teaspoon salt
1 cup milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine mangoes, water, and 1/2 cup white sugar in a saucepan over medium heat; simmer until sugar is dissolved, 5 to 6 minutes. Drain syrup from mangoes, reserving syrup.
  • Beat 2 cups sugar and butter together in a bowl using an electric mixer until smooth and creamy. Whisk flour, baking powder, and salt together in a separate bowl until combined. Slowly mix flour mixture, alternating with milk, into creamed butter mixture, beating well after each addition. Stir vanilla extract into batter; pour into a 9x13-inch baking dish.
  • Arrange mangoes on top of the batter and pour 2 cups reserved syrup over mangoes.
  • Bake in the preheated oven until a toothpick inserted in the center of the cobbler comes out clean, 40 to 45 minutes.

1 mango (peeled, cut into a 1/4" dice)
1/2 cup pineapple (cut into a 1/4" dice)
1/2 red bell pepper (cut into a 1/4" dice)
1/4 cup red onion (finely diced)
1 jalapeño (finely diced)
1 red chili pepper (finely diced)
1 lime (zested and juiced)
3 tablespoons cilantro leaves (chopped)
1 1" knob ginger (peeled)

Steps:

  • In a medium bowl combine the diced, mango, pineapple, bell pepper, red onion, jalapeño and chili pepper. Toss to combine.
  • Add the lime zest, lime juice and cilantro. Toss to combine.
  • Use a microplane grater to grate the ginger onto a cutting board. Carefully scoop the ginger pulp into a fine mesh sieve. Rest the sieve over a small bowl and press on the ginger pulp to press out the juices and capture it in the bowl. Discard the ginger solids. Add the juice to the salsa and toss to combine.
  • Taste for seasonings adding salt and freshly ground pepper if desired.
  • Serve with chicken, pork, fish or shellfish.

1 cup canned unsweetened coconut milk
1 ⅓ cups mango juice from concentrate ((see note))

Steps:

  • Combine all ingredients in a blender. Blend until smooth puree forms. Add more liquid if needed.
  • Fill popsicle molds with the mixture. I use a small spoon. Freeze overnight.
  • Run each popsicle under warm water for a few seconds to release.
