From my DD's Children's World Cookbook & Posted for ZWT-5. A very healthy, slushy fruit drink that can also be served as a dessert. Although coconut in fresh, dried or liquid form, is an important ingredient in Caribbean Cooking, this recipe does not depend on it if there is an allergy or personal preference not to use it. Enjoy!

Number Of Ingredients 5

2 mangoes, peeled and chopped
1 lemon, juice of (or lime)
2/3 cup whipping cream
5 ounces plain yogurt
1 tablespoon coconut milk (optional)

Steps:

  • Put mango pieces in blender & liquidize (or mash well in a bowl with a fork).
  • Stir the lime or lemon juice into the mango puree, mixing well.
  • In another bowl, whisk the cream until it starts to thicken, but not enough to form peaks. Set aside.
  • Stir in the yogurt & coconut milk (if using) into the mango mixture.
  • Gently fold the cream into the mango mixture.
  • Pour the fool into bowls or glasses and put them into the refrigerator to chill until serving time.
  • Decorate with slices of mango before serving.

This Asian-inspired dessert is a creamy, fruity end to a quick mid-week menu of Thai green chicken curry, baked rice and quick Thai salad.

400g ready-diced ripe mango
Grated zest and juice of ½ lime
150ml double cream
2 tsp light brown soft sugar
50ml Greek yogurt
1 tbsp peeled or desiccated coconut, toasted
Bonne Maman coconut biscuits to serve

Steps:

  • Place the mango and lime juice in a food processor and whizz to a smooth purée.
  • Whip the cream, sugar and yogurt together until the mixture forms soft peaks. Stir through half the mango purée then fold in the rest to make a rippled effect. Spoon among 4 small glasses and top with the toasted coconut and lime zest. Place in the fridge until ready to serve. Serve with coconut biscuits on the side

Canned mangoes are excellent in this dessert if ripe fresh ones are unavailable. Use a drained (1-lb 14-oz) can of mango slices in syrup. If the canned fruits you buy are Alphonso mangoes (our favorite variety of mango), add an additional 1/2 cup cream.

1 1/4 teaspoons unflavored gelatin
1 1/2 tablespoons fresh lime juice
3 large very ripe mangoes, flesh coarsely chopped (4 cups)
1/4 cup sugar, or to taste depending on sweetness of mangoes
3/4 cup heavy cream
Accompaniment: Chocolate-anise straws

Steps:

  • Sprinkle gelatin over juice in a small heatproof cup and let stand 1 minute to soften. Purée mangoes with sugar in a blender until very smooth and force through a sieve into a large bowl.
  • Melt softened gelatin in cup in a pan of simmering water or in a microwave and stir into purée. Beat cream with an electric mixer until it just holds stiff peaks and gently fold into purée.
  • Chill fool, covered, at least 8 hours.

Super light and fluffy, sweet and tangy. Love it. The original recipe called for a whole cup of sugar, but I halved it for health and it tasted just fine.

2 mangoes
1/2 teaspoon fresh grated ginger
1/2 cup confectioners' sugar
1/2 teaspoon lime juice
1 cup whipping cream

Steps:

  • Peel and cut the mangoes into small pieces and dump them in a blender.
  • Put aside enough slices to garnish.
  • Add the ginger, sugar and lime juice to the blender and blend until smooth.
  • In a separate bowl, whip the cream (I would suggest an electric mixer) until peaks form.
  • Fold the mango mixture into the whipped cream, a bit at a time.
  • Stir, then gradually add more, until they are all mixed together.
  • Pour the mixture into bowls and chill for one hour before serving.

Peel and juice of 1 lime
1 cup sugar
1/4 cup water
1 pint heavy cream
1 1/4 cups sugar
1/3 cup corn syrup
1/4 cup water
Chocolate chips for garnish

Steps:

  • Sugar sticks: Thoroughly oil a sheet pan. In a small saucepan bring sugar, corn syrup and water to a boil. Cook until mixture reaches the hard crack stage (295 to 310 degrees F). Remove pan from heat. Being careful (caramelized sugar can cause a very bad burn) quickly spoon large swirls onto prepared sheet pan. Allow to cool completely. Release swirls from pan. Store in a cool dry place.
  • In a small saucepan combine lime juice and peel, sugar and water. Bring to a boil and reduce to approximately 1 cup. Allow to cool, cover and refrigerate syrup overnight. Strain out peel and pulp of lime. Whip cream to stiff peaks with 1/4 cup syrup. Spoon into martini glasses. Serve garnished with sugar swirls and chocolate chips.
