3 habanero peppers, stemmed (and seeded for less heat)
½ mango, peeled and pitted
3 tablespoons white vinegar
1 garlic clove
2½ tablespoons muscovado or dark brown sugar
1½ teaspoons maple syrup
1 teaspoon salt

Steps:

  • Combine the habaneros with the mango, vinegar and garlic in a blender, and process until smooth.
  • Boil the sugar with 2 tablespoons water and add the habanero and mango purée.
  • Simmer, uncovered, for 20 minutes.
  • Season with the maple syrup and salt.

2 tablespoons extra virgin olive oil
1 large sweet onion, chopped
7 ripe mangoes, cored and chopped
1 fresh peach, chopped
⅓ cup honey
15 habanero peppers, stemmed, or more to taste
¼ cup yellow mustard
2 ½ tablespoons salt
2 ½ tablespoons paprika
1 ½ tablespoons ground white pepper
1 tablespoon ground cumin
⅓ teaspoon ground allspice
¼ cup light brown sugar
1 ½ cups white vinegar
½ cup apple cider vinegar

Steps:

  • Heat olive oil in a skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes.
  • Combine the onion, mangoes, peach, honey, habanero peppers, and mustard in a food processor. Process until smooth; mix in salt, paprika, white pepper, cumin, and allspice. Add brown sugar; continue to process until well combined.
  • Pour mango-habanero mixture into a large saucepan. Bring to a boil. Add white vinegar and apple cider vinegar, stirring frequently until thoroughly combined. Boil until thickened, 10 to 12 minutes. Pour sauce into jars or containers.

Sweet mango habanero sauce is a spicy, bold accent to so many dishes, including traditional kielbasa recipes! You'll love this version which sautes Polish sausage with tenderizing ingredients like salsa and honey. For a fun serving option, plate the sausage bites with slices of French bread to make finger sandwiches.

2 tbsp olive oil
12-ounces Kielbasa, sliced on the bias
Juice of 1 lime
1 cup LA VICTORIA® Mango Habanero Salsa
2 tsp honey
3 tbsp freshly chopped cilantro
Salt and freshly ground pepper
French bread slices, for serving

Steps:

  • Heat olive oil in large saute pan over medium heat. Add sliced kielbasa and cook, turning often, until sausage pieces are golden brown and cooked through. Remove browned kielbasa and set aside. Drain off fat from pan and return pan to stove over medium heat. Add lime juice to pan to deglaze, scraping up any browned bits from bottom of pan. Add LA VICTORIA® Mango Habanero Salsa, honey and cilantro and stir to combine. Season with salt and pepper. Add sliced sausage back to pan. Cook 2 minutes to meld the flavors. Serve sausage bites with French bread slices.

Coconut-Date Bites image

2 cups dried dates, pitted
1/4 cup raw walnuts
1 teaspoon vanilla extract
1/2 cup unsweetened shredded coconut

Steps:

  • In a food processor, pulse the dates to create a thick paste. Add the walnuts, vanilla and 1/4 cup of the coconut and pulse until incorporated and a thick paste forms again. Using a spatula, transfer the date mixture to a medium bowl.
  • Pour the remaining 1/4 cup coconut into a separate small, shallow bowl.
  • Using a spoon, scoop out about 2 tablespoons of the date mixture and, with clean hands, work into a small rectangular bar 2 to 2 1/2 inches by 1 inch (or roll into balls). Coat the date bar with the coconut in the bowl, delicately pressing the coconut onto the bar. Continue with the remaining date mixture and coconut.
  • Serve in mini paper cupcake liners. Store in an airtight container for up to 1 week.
