Yield 10 scones.

Number Of Ingredients 7

2-1/2 cups biscuit/baking mix
2 tablespoons brown sugar
3 tablespoons cold butter
1/2 cup thawed nonalcoholic pina colada mix
1 cup chopped peeled mango
3 tablespoons sweetened shredded coconut
1/4 cup macadamia nuts, chopped

Steps:

  • In a large bowl, combine biscuit mix and brown sugar. Cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in pina colada mix just until moistened. Fold in mango., Turn onto a floured surface; knead 10 times. Pat into a 9-in. x 7-in. rectangle. Cut into 10 rectangles; separate rectangles and place on a greased baking sheet. Melt remaining butter; brush over scones. , Bake at 400° for 12 minutes. Sprinkle with coconut and nuts; bake 2-4 minutes longer or until golden brown. Serve warm.

These Bakery Style Mango Scones are one of our favorite breakfast treats! They're golden brown and crispy on the outside, moist and delicious on the inside, and drizzled with a sweet vanilla glaze. The perfect scones...with a fun flavor twist. This easy recipe makes a delicious addition to any breakfast, brunch, or afternoon tea, and can also double as dessert. If you love all things mango, these Mango Scones are sure to become one of your new favorites!

Number Of Ingredients 11

2 1/2 c. all purpose flour
1/4 c. granulated sugar
1 Tbsp baking powder
1/4 tsp. salt
6 Tbsp. unsalted butter, cold
1 beaten egg
1/2 c. half & half or light cream
1 c. chopped mango (fresh or frozen)
1 c. powdered sugar
4 tsp. milk or half & half
1/2 tsp. vanilla

Steps:

  • Preheat oven to 400° F.
  • In a medium mixing bowl, combine flour, granulated sugar, baking powder and salt. Mix well; set aside.
  • Add cold butter in very small pieces (I like to use a cheese grater and grate the butter directly into the mixing bowl).
  • Use a fork or pastry blender to combine butter with dry ingredients.
  • Add beaten egg and half & half or light cream. Mix just until combined.
  • Fold in chopped mango.
  • Transfer dough to a lightly floured surface; form it into an 8 inch disc. Cut into 8 equal wedges and place wedges on an ungreased baking sheet.
  • Bake at 400° for 15 minutes or until golden brown.
  • Cool 10 minutes on baking sheet, then remove to a wire rack to cool completely.
  • Once cool, combine icing ingredients and drizzle scones with icing as desired.

2 1/4 Cup flour
1/3 Cup sugar
2 1/4 Tsp. baking powder
1/2 Tsp. baking soda
1/4 Tsp. salt
1/2 Cup butter (cold, cut into pieces)
8 Oz. pineapple (crushed, undrained - chunks will work, too )
1 Tsp. vanilla
1/4 Cup almonds (slices or chopped )
2 Tbsp. milk (or cream for brushing on top before baking)
1 Cup icing sugar
3 Tbsp. lemon juice (fresh (about from 1 lemon))

Steps:

  • Preheat oven to 400 degrees F. Place parchment paper onto baking sheet and set aside.
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Cut in butter with a pastry blender or 2 forks until mixture resembles coarse crumbs.
  • Make a well in center and then stir in the pineapple with liquid and vanilla. Blend until dry ingredients are just moistened and stick together.
  • On a floured work surface, gently knead pat dough to 1/2 inch thickness. Cut with floured 2 to 3 inch biscuit cutter (mine was 2.5"). Place on the prepared baking sheet.
  • Brush the tops of scones with milk or cream. Sprinkle nuts over scones. Bake 12 to 15 minutes.
