Shrimp,papaya & avocado with a lemon & cumin spiced dressing. What a nice dish for hot balmy seaside dinning, am posting for ZWT.

1 tablespoon parsley (fresh-chopped)
1/4 teaspoon cumin
1/4 cup lemon juice
3/4 cup olive oil
1/4 teaspoon ground pepper
1/2 small red onion (chopped)
1 lb medium shrimp (cooked over med. high heat in water for 3 min.)
1 large papaya (peeled,seeded and sliced thin)
1 large avocado (large, peeled, pitted and thinly sliced)
salt and pepper
salad greens

Steps:

  • Whisk together dressing ingredients in a small bowl, chil until ready to serve.
  • On individual salad plates, place salad greens, cooled shrimp, avocado & papaya on top,.
  • Sprinkle with chopped onions, salt and pepper and drizzle dressing over top.

3 tablespoons picante sauce or 3 tablespoons salsa
1 tablespoon mangoes or 1 tablespoon peach chutney
1 tablespoon Dijon mustard
1 tablespoon lime juice
4 cups torn boston lettuce or 4 cups red leaf lettuce
6 ounces cooked medium shrimp or 6 ounces large shrimp, peeled and deveined
1/2 cup diced ripe avocado
1/2 cup diced ripe mangoes or 1/2 cup papaya
1/3 cup red bell peppers or 1/3 cup yellow bell pepper, strips
2 tablespoons chopped cilantro (optional)

Steps:

  • Combine in a small bowl picante sauce, chutney mustard and lime juice; mix well.
  • In medium bowl, combine remaining ingredients.
  • Add chutney mixture; toss well and transfer to serving plates.

The shrimp I've found that were the right size were Canadian shrimp; the fish counter at my supermarket had them available frozen upon request.

3 tablespoons fresh lime juice
2 tablespoons canola oil
1 tablespoon sugar
2 large firm-ripe mangoes, peeled, seeded, and cut into 3/4 inch cubes (2 lbs. total)
2 medium firm-ripe avocados, peeled, seeded, and cut into 3/4 inch cubes (1 lb. total)
2/3 cup thinly sliced green onion
2/3 cup chopped cilantro leaf
1 tablespoon minced fresh hot chili pepper (or 1/2 tsp. dried red chile flakes)
1 lb peeled cooked shrimp (sized 70 to 110 per lb.)

Steps:

  • Whisk together all dressing ingredients in a large bowl.
  • Add all salad ingredients and gently toss to combine.
  • Serve immediately, or cover and chill up to 1 hour.

2 papaya, cut in half lengthwise, seeds removed
1 cup cooked rock shrimp or other cooked shrimp chopped in small pieces
1 avocado, peeled and cut in small dice
3 jalapeno chiles, seeded, minced
1 large red onion, cut in very small dice
1 mango, peeled, cut in small dice
1/4 cup chop cilantro
2 limes, juiced
1/4 cup olive oil
Salt and pepper

Steps:

  • Partially scoop out the meat from the papaya, leaving about a 1/2 inch layer of fruit and cut the removed papaya in small dice.
  • Combine with the remaining ingredients and spoon back into the papaya shells. Chill for up to 2 hours or enjoy immediately.
