GRANDMOTHER'S ORANGE SALAD

Steps:
- Drain oranges and pineapple, reserving juices. Set oranges and pineapple aside. Add water to juices to measure 2 cups. Place in a saucepan and bring to a boil; pour over gelatin in a large bowl. Stir until gelatin is dissolved. Stir in sherbet until smooth. , Chill until partially set (watch carefully). Fold in oranges, pineapple and bananas. Pour into an oiled 6-cup mold. Chill until firm.

This is one of those great recipes that my Grandma's buddies used to make at our church functions, and that we always looked forward to.

Steps:
- Lightly grease a ring mold or 9x9-inch square pan.
- Drain the mandarin oranges and reserve juice. Add cold water to the juice, if necessary, to make 1 cup of liquid.
- In a mixing bowl, combine the boiling water and 1 cup mandarin orange liquid. Dissolve gelatin in this mixture, and refrigerate until it begins to set. Using an electric mixer, beat in sour cream and softened sherbet at medium speed until fluffy and well-blended. Gently stir in mandarin oranges and pineapple chunks. Pour mixture into ring mold or prepared pan and chill overnight.

This is a great Easter or summer salad. It has a very light taste with the sweetness of Mandarin oranges and orange sherbet!

- Whisk the gelatin into the boiling water until dissolved. Allow to cool for 10 minutes, then stir in the orange sherbet until completely melted. Once the gelatin begins to thicken, stir in the drained mandarin oranges. Pour into a gelatin mold, and refrigerate until set, about 6 hours.

TRIPLE ORANGE JELLO SALAD
Another one of Mom's recipes. (I know I know, What can I say, I love her cooking!) She wouldn't give me the recipe for years but then I managed to work it out of her... and then I ran right here to share! Ok, so I've had it a long time, but I still thought I'd share anyway. Enjoy!

Steps:
- Pour boiling water into a bowl and add jello. Stir until dissolved, then add orange sherbet and stir until it melts completely. (It helps if you put the sherbet in the refrigerator for an hour or two to soften it before adding it to the Jello).
- Refrigerate about 2 hours or until thickened.
- Pour Jello and orange segments into a food processor. Add Cool Whip and whip in processor just until blended. Refrigerate 2 hours or overnight.
- ***Note, as first reviewer suggested, you can either add entire can of oranges to salad and blend in processor or add 1/2 then stir in the other 1/2 of whole oranges after blending in processor. It's up to you and whether or not you like whole oranges or if you want the salad to be smoother. (Thanks Pismo!).
- Serve and enjoy!

- 1. Dissolve Jello in 2 cups boiling water.
- 2. Add sherbet (that has been removed from freezer for 10 minutes) to Jello and stir until it dissolves.
- 3. Chill until partly set.
- 4. Add the cool whip and mandarin oranges. Mix thoroughly.
- 5. Turn into a mold or medium sized dish. Refrigerate until set.

- In a medium bowl, stir hot water into the Jell-O powdered gelatin until it is completely dissolved. Add the mandarin orange juice and the softened sherbet and continue to mix until the sherbet is melted.
- Spray a jello mold (or an 8x8-inch glass pan) with nonstick spray. Pour the Jell-O mixture into the mold and gently scatter the orange slices into the mixture.
- Refrigerate for several hours (or overnight) until well set. Carefully turn out the chilled jello mold onto a decorative plate (see tips below). Or if you used a square dish, you can just put it out for scooping and serving. Keep refrigerated until ready to serve.
