Ingredients

1 box yellow cake mix ((plus ingredients the box mix calls for))
11 ounces mandarin oranges ((drained))
20 ounces crushed pineapple ((drained))
3.4 ounces instant vanilla pudding mix ((dry))
12 ounces Cool Whip or stabilized whipped cream

Steps:

Prepare cake batter according to the directions on the box.
Beat in the drained oranges until blended.
Pour into a greased 9x13" baking pan.
Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Allow the cakes to cool.
In a bowl, combine the drained pineapple and dry vanilla pudding mix.
Fold in the Cool Whip.
Spread the frosting over the top of the cake.
Store this cake in the refrigerator.

Mandarin Orange Cake with Pineapple Frosting is so light and refreshing and begins with a cake mix and mandarin oranges, then topped with a frosting made with crushed pineapple and vanilla pudding. Also known as Pig Pickin' cake, this simple cake recipe is absolutely amazing!

Ingredients

Cake:
1 yellow cake mix
1/2 cup oil
4 eggs
11 oz can mandarin oranges (with the juice)
Frosting:
8 oz Cool Whip
1 sm. can crushed pineapple (8 oz)
1 sm. pkg vanilla instant pudding

Steps:

For cake: Mix all ingredients together and bake at 350 for 35 minutes. If you make the cake in a bundt pan (rather than a 9X13), the cook time will be closer to 45 minutes.
Once the cake is cooled, mix the pineapple and pudding together. Let set for a few minutes until slightly thickened and then fold in the Cool Whip. Spread on cake and keep refrigerated until ready to serve. Enjoy!

18 ounces yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
11 ounces mandarin oranges in juice
20 ounces crushed pineapple in juice
9 ounces frozen whipped topping, thawed
3 1/2 ounces vanilla instant pudding mix

Steps:

Prepare the yellow cake mix according to the directions on the box, EXCEPT substitute the can of mandarin oranges (with juice) for the water. Beat the mandarin oranges in with the other ingredients with an electric hand mixer. Bake according to directions.
To make the topping, stir together canned crushed pineapple (with juice), thawed whipped topping, and vanilla pudding mix. Spread over cake evenly once the cake has cooled.

1 box duncan hines golden cake mix
1 can(s) mandarin oranges
4 large eggs
1/2 c crisco oil
9 oz cool whip
16 oz crushed pineapple with juice
3 1/2 oz package vanilla instant pudding

Steps:

1. Mix cake mix, eggs,mandarin oranges and crisco oil for 3 min. and pour into 3 9 inch layer pans. Bake for 20 min at 350 degrees. Cool
2. Frosting-Mix pineapple and pudding then fold in cool whip. Frost between layers and top. Keep this cake refrigerated for best results. Enjoy:)
