1 head romaine lettuce - rinsed, dried and chopped
2 (11 ounce) cans mandarin oranges, drained
6 green onions, thinly sliced
2 tablespoons white sugar
½ cup sliced almonds
¼ cup red wine vinegar
½ cup olive oil
1 tablespoon white sugar
⅛ teaspoon crushed red pepper flakes
ground black pepper to taste

Steps:

  • In a large bowl, combine the romaine lettuce, oranges and green onions.
  • Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
  • Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
  • Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

1/2 small head lettuce, torn into bite-size pieces (3 cups)
1/2 bunch romaine lettuce, torn into bite-size pieces (3 cups)
2 medium celery stalks, chopped (1 cup)
2 medium green onions, thinly sliced (2 tablespoons)
1 can (11 oz) mandarin orange segments, drained

Steps:

  • In 1-quart saucepan, cook almonds and 4 teaspoons sugar over low heat about 10 minutes, stirring constantly, until sugar is melted and almonds are coated; cool and break apart.
  • In tightly covered container, shake all dressing ingredients. Refrigerate until serving time.
  • In large bowl, toss salad ingredients, dressing and almonds. Serve immediately.

VINAIGRETTE:

1 tablespoon plus 1-1/2 teaspoons honey
1 tablespoon white wine vinegar

3/4 cup mandarin orange juice (from 6 to 8 mandarin oranges)
2 tablespoons red wine vinegar ​(or good-quality balsamic vinegar )
2 tablespoons brown sugar
1 shallot ​(minced)
1/4 teaspoon kosher salt (or to taste)
1 to 1 1/2 cups extra-virgin olive oil

Steps:

  • Gather the ingredients.
  • Place the cider vinegar , mandarin orange juice, red wine vinegar (or balsamic vinegar), brown sugar, shallots, and kosher salt in a blender. Pulse to combine the ingredients.
  • While the blender is running, very slowly add olive oil in a steady stream through the top opening of the blender.
  • Transfer to a salad cruet or jar with a lid.
  • Refrigerate any leftover vinaigrette for up to one week. After that, throw out any unused portion of this salad dressing.
  • Enjoy.

The ladies at our old church always made this for dinners. When I asked for the recipe, they gave it to me on an old recipe card, written in beautiful cursive script. When reading it, I thought the mix of ingredients sounded odd, but it is absolutely delcious. It's a wonderful green salad that is wonderful for company. It's also good as a main course with a chicken breast on top. Very adaptable - you can add other fruit, too. Strawberries and blueberries.

1/2 head iceberg lettuce
1/2 head romaine lettuce
1 cup celery, chopped

1 (5-ounce) can hearts of palm, sliced
1/4 cup crumbled Gorgonzola cheese
1/4 cup chopped walnuts

Steps:

  • Measure 1/4 cup of reserved mandarin juice. In a small bowl, whisk together juice and vinaigrette; set aside.
  • In large bowl, toss together salad mix, hearts of palm, and mandarin segments with mandarin dressing. Transfer salad to serving platter and top with remaining ingredients.

1/2 c. sliced almonds
2 Tbsp. granulated sugar
1 c. celery (diced)
1 11 oz. can mandarin oranges (drained)
1/2 head iceberg lettuce (chopped)
1/2 head romaine lettuce (chopped)
2 whole green onions (diced)
1/2 tsp. salt
1/4 cup canola or vegetable oil
2 Tbsp. granulated sugar
1/8 tsp. ground pepper
2 Tbsp. white vinegar
1 dash Tobasco sauce ((or other hot sauce))

Steps:

  • In a small pan over medium heat, heat almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved. Watch carefully!! They will burn easily!
  • Set almonds aside to cool on a piece of parchment paper and then store in an airtight container until ready to mix with salad.
  • Mix the dressing ingredients together. I use a jar so that I can shake it all together and store in the refrigerator.
  • Dice the celery and green onions and chop the romaine and iceberg lettuces.
  • Throw everything except the oranges, almonds and dressing into a bowl and mix together. Just before serving, add almonds and oranges and drizzle with dressing. Toss to coat and serve!

1 tablespoon olive oil
2 tablespoons red wine vinegar

3 cups Baby Spinach
1 cup chopped red cabbage

Steps:

  • Drain mandarin oranges, reserving oranges in a large bowl and juice in a medium bowl.
  • To the mandarin juice, add olive oil, vinegar, dijon mustard and pepper. Whisk until blended.
  • In the large bowl, add lettuce, spinach and cabbage to the reserved oranges.
  • Pour dressing over all and toss well to combine.

This colorful salad is a delightful way to freshen up winter meals. I mix the dressing in advance so I can pull the salad together quickly at dinnertime. For a complete meal, we enjoy the salad with fish or chicken, although you can hardly go wrong with steak, pork, pasta, or a veggie burger.

3 tablespoons (45ml) sherry vinegar*
2 tablespoons (30ml) freshly squeezed orange or mandarin juice
2 tablespoons (24g) sugar
2 tablespoons minced shallots
1 teaspoon dry mustard
2 teaspoons (10ml) extra virgin olive oil
½ teaspoon salt
5 cups (about 5 ounces or 4 large handfuls) mix of lettuces (For a colorful mix of soft and crisp, I like butter and romaine and sometimes add some spinach)
1 lightly rounded cup orange sections (about 2-3 clementines/satsumas, 1 large orange, or 1 (11-ounce can) mandarin oranges, well drained)
1 small or ½ a large avocado, chopped
¼ cup thinly sliced red onion
¼ cup (1 ounce) crumbled feta cheese
Optional: ¼ cup toasted or salted pistachios, chopped or slivered almonds, or nuts/seeds of choice

Steps:

  • To prepare the vinaigrette, combine the sherry vinegar through salt in a small bowl or jar; stir with a whisk or screw on the lid and shake well. Set aside. Storage: The vinaigrette will keep for a week or more in the refrigerator and may be doubled. To prepare the salad, combine the lettuces, orange sections, avocado, onions, and feta in a large bowl. Add the nuts or seeds, if using. Pour about half of the vinaigrette over salad mixture-just enough to lightly but evenly coat-and toss gently to coat.

  • In a small skillet over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar has dissolved. This burns easily ,so stir constantly. It may take about 10 minutes, depending on the heat of your burner. Cool almonds. (These may also be made ahead and stored for future use.)
  • Combine lettuce, celery and onions in a large bowl. (If you want to make ahead, I always line the bowl with a paper towel. Add the lettuce. Cover the top of the bowl with a paper towel and store in the fridge until ready to use. Add chopped celery and green onions before serving.)
  • Combine all dressing ingredients together . Shake or whisk until sugar is dissolved. Chill until ready to toss salad.
  • When ready to serve add almonds and oranges and toss with the dressing. (This is also great with feta cheese, or slices of chicken if you choose to make this a main course.)
