3/4 pound boneless skinless chicken breast, cubed
1/4 cup reduced-sodium teriyaki sauce
2 teaspoons canola oil
8 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1 medium carrot, shredded
1/4 cup slivered almonds, toasted
3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow dish, combine chicken and teriyaki sauce. Cover and refrigerate 1-2 hours. , Drain and discard marinade. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook and stir until no longer pink, 5-7 minutes. Refrigerate until chilled., In a large bowl, combine salad greens, chicken, oranges, carrot, almonds and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Drizzle over salad; toss to coat.

2 tablespoons low-sodium soy sauce
3 tablespoons rice vinegar
1 teaspoon minced fresh ginger (see note)
2 tablespoons olive oil
1 teaspoon sesame oil
1-2 teaspoons chile-garlic sauce (see note)
1 clove garlic (finely minced or pressed through a garlic press)
1 tablespoon honey
Salt and pepper to taste
3-4 cups shredded cabbage (can use coleslaw mix)
3-4 cups chopped romaine lettuce
2 cans (11-ounces each) mandarin oranges (drained)
3 cups cooked chopped chicken
3 green onions (chopped)
1-2 cups chow mein noodles or toasted (chopped almonds (or both))

Steps:

  • For the dressing, whisk together all the ingredients and season to taste with salt and pepper. Set aside or refrigerate until ready to use (it can be made several days in advance and refrigerated).
  • In a large bowl, toss together all the salad ingredients except for the chow mein noodles.
  • When ready to serve, pour the dressing over the salad and toss to combine (add the dressing gradually if you like less dressing - you may not need to add it all). Sprinkle the chow mein noodles or almonds on top and serve immediately.

10 ounces mixed salad greens (I like the butter lettuce mix or the romaine mix)
15 ounces mandarin oranges, well-drained
6 ounces of cooked and sliced chicken breasts
2 very thin slices red onions, cut in half and sliced into crescents
1/4 cup pecans, toasted
1/2 cup of bottled light Italian dressing or 1/2 cup balsamic vinaigrette dressing
2 ripe avocados, pitted, peeled and cut into chunks (I use Haas avocados, the dark-skinned avocados, but California avocados could also be used)

Steps:

  • In a large salad bowl, combine salad greens, mandarin oranges, chicken, onion and pecans.
  • In a small bowl, combine dressing and 1/2 cup avocado cubes. Mash and blend into dressing. Add remaining avocado cubes and dressing to salad. Toss and serve.

1/2 cup water
1/3 cup vinegar
3 tablespoons brown sugar
3 tablespoons vegetable oil, divided

2 chicken bouillon cubes
1/3 to 1/2 cup mayonnaise
2 tablespoons honey
2 tablespoons lemon juice
2 teaspoons minced parsley
2 teaspoons ground mustard
1/4 teaspoon dried minced onion
1 package (10 ounces) ready-to-serve salad or 4 cups torn lettuce
1 can (11 ounces) mandarin oranges, drained
1 cup chow mein noodles
1 green onion, thinly sliced
2 tablespoons sliced almonds

  • In a skillet, combine chicken, water, vinegar, brown sugar, 1 tablespoon oil, soy sauce and bouillon. Cook and stir over medium heat for 15-20 minutes or until chicken is tender and liquid has evaporated. , Meanwhile, for dressing, whisk mayonnaise, honey, lemon juice, parsley, mustard, onion and remaining oil until blended. 1 lb boneless skinless chicken breast, cubed
1/4 cup low-sodium teriyaki sauce
8 cups mixed salad greens, torn
2 (11 ounce) cans mandarin oranges, drained well
2 large carrots, shredded
1/2 cup almonds, slivered and toasted
3 tablespoons green onions, sliced very thin
2 tablespoons white wine vinegar or 2 tablespoons cider vinegar
2 tablespoons extra virgin olive oil
1 tablespoon low sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper (or to taste)

Steps:

  • In a zippered plastic bag (gallon size), combine the chicken and teriyaki sauce. Seal the bag, turn to coat and refrigerate for 1-2 hours to marinate.

1 1/2 cups white vinegar
1 tablespoon lemon juice
2 tablespoons Dijon mustard
1 garlic clove, minced
1/4 teaspoon black pepper
2 tablespoons fresh tarragon or 1 tablespoon dried tarragon
2/3 cup vegetable oil
4 (4 ounce) boneless skinless chicken breasts
8 large fresh spinach leaves
16 unsweetened mandarin orange segments
4 green onions, tops included, finely chopped

Steps:

  • Marinade: In a large resealable plastic bag, mix vinegar, lemon juice, mustard, garlic, pepper, tarragon and oil. Remove and reserve 1/2 cup for dressing the final salad.
  • Slice chicken into strips about 2-inches long. (Chicken that is partially frozen is easier to slice). Add chicken pieces to marinade in the bag; seal and refrigerate for 1 hour.
  • Meanwhile, wash and thoroughly dry spinach leaves. Line 4 salad plates with leaves and refrigerate until ready to serve.
  • Drain mandarin oranges and chill segments.
  • Coat a nonstick skillet with cooking spray. Remove chicken from marinade (discard marinade) and add to the skillet.Saute chicken strips for 7-10 minutes, until chicken is cooked through.
  • Assembly: divide chicken equally among 4 spinach lined plates. Top each plate with 4 orange segments and 1/4 of the green onions. Drizzle each plate with 2 tablespoons of the reserved marinade/dressing.
  • Serve immediately.

3 cups diced cooked chicken (see directions)
1 cup diced celery
2 tablespoons lemon juice
1 tablespoon minced onion
1/2 teaspoon salt
1/3 cup mayonnaise
1 cup green seedless grape
1 (11 ounce) can mandarin oranges, drained
1 (2 ounce) package slivered almonds, toasted
1 leaf lettuce
additional mandarin orange section (optional)
clusters green grape (optional)

Steps:

  • I recommend baked chicken for the salad. Heat oven to 350 degrees - sprinkle chicken with salt and pepper, then after it's cooled a bit, chop chicken and sprinkle with olive oil (if I have chicken with skin, I skip the oil). Bake until done then after it's cooled a bit, chop chicken.
  • After you have cooked the chicken, combine the first 5 ingredients; stir well. Cover and chill.
  • Add mayonnaise, grapes, oranges, and almonds to chicken mixture; toss well. Serve on lettuce. Garnish with additional orange slices and grape clusters, if desired. Yield: 6 servings.
