MANDARIN ORANGE AND SHERBET RING WITH AMBROSIA FILLING
Planning a baby or bridal shower, a spring or summer party? This "to die for" combination will have your guests begging for the recipe. You can make it the day before and the jello ring or ambrosia can be served on their own.

Steps:
- Bring juice to a boil, add jello and stir until disolved.
- Add sherbet and stir until melted.
- Add oranges, then pour into a 1 1/2 qt lightly oiled ring mold.
- Refrigerate until firm, or overnight.
- Combine all Ambrosia ingredients and refrigerate 3 hours or overnight.
- Unmold jello ring, fill center with Ambrosia, spoon the rest around the mold.

MANDARIN JAM

Steps:
- Wipe mandarins with a damp cloth, cut mandarins in half horizontally then in half again.
- Using fingers, remove seeds and discard them.
- Peel away skin and reserve it.
- Using a sharp knife cut skin into fine slivers.
- It is only necessary to use the skins of 4 mandarins.
- Place mandarin pulp in food processor, process to seconds or until pulp is chopped.
- (If you do not have a processor, chop fruit finely).
- Place pulp in large pan, add mandarin rind, white Sugar and water, mix well.
- Mixture should be not more than 5cm (2in) deep in pan.
- Stir jam over medium heat until sugar has dissolved, increase heat slightly, boil gently, uncovered without stirring 50-55 mins.
- Check occasionally during last 10 mins of cooking time to make sure mixture is not burning on base of pan.
- After 50 mins start testing to see if jam will jell when tested on a cold saucer.
- (Place saucer in freezer for a few minutes) Remove scum from surface, pour jam into hot sterilized jars.
- Seal when cold.

MANDARIN ORANGE SHERBET SALAD
My grandmother used to make this during the summer but I rediscovered the recipe and served it for the Holidays last year. Nice, cool salad!

Steps:
- 1. Dissolve Jello in 2 cups boiling water.
- 2. Add sherbet (that has been removed from freezer for 10 minutes) to Jello and stir until it dissolves.
- 3. Chill until partly set.
- 4. Add the cool whip and mandarin oranges. Mix thoroughly.
- 5. Turn into a mold or medium sized dish. Refrigerate until set.

- Whisk the gelatin into the boiling water until dissolved. Allow to cool for 10 minutes, then stir in the orange sherbet until completely melted. Once the gelatin begins to thicken, stir in the drained mandarin oranges. Pour into a gelatin mold, and refrigerate until set, about 6 hours.

Steps:
- Mix sugar and corn starch in double boiler.
- Add beaten egg yolk and orange juice. Cook for 10 - 15 minutes or until thick.
- Remove from heat, add butter and peel.
- Cool.
- Lemon Cream Filling 1 egg yolk, beaten 1/2 cup sugar 2 Tbsp corn starch 1/4 cup lemon juice 1/8 tsp grated lemon peel 1/2 tsp butter 1/2 cup water.
- Combine yolk, sugar, corn starch, 1/2 cup water, lemon juice, lemon peel and cook in double boiler for 15 minutes. Add butter.
- Cool.
