Steps:
- Add the coleslaw mix to a large bowl. Crumble the dry ramen noodles into the coleslaw and then add the mandarin oranges and edamame. Add the green onions, slivered almonds and black sesame seeds and toss.
- In a small bowl, whisk the rice vinegar, vegetable oil, soy sauce, sugar and sesame oil and freshly ground black pepper in a small bowl. Drizzle over the slaw mix and toss to combine. Refrigerate for 1 hour for flavors to meld.

These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

Steps:
- Stir soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper together in a small bowl for the secret sauce.
- Place secret sauce near the stove. Place garlic, butter, Parmesan cheese, and green onion in individual bowls within easy reach.
- Melt butter in a skillet over medium heat. Add garlic; cook and stir just until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet slightly firm to the bite, about 12 minutes.
- Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.
- Plate noodles. Garnish with red pepper flakes and green onions.

CANTONESE-STYLE PAN-FRIED NOODLES
An easy Cantonese-style pan-fried noodle dish that comes together so quickly! These taste just like your favorite restaurant's version and now it's easy to make them at home!

- Bring a large stockpot of water to boil. While the water is boiling, separate the greens from the whites of the scallion. Cut into one-inch pieces then quarter the 1-inch piece vertically so you end up with thinly julienned scallions, set aside. In a bowl, combine the oyster sauce, soy sauce, sugar, minced garlic, red pepper flakes, salt, and 1 teaspoon of sesame oil, stir to combine, set aside.
- When the water comes to a boil, add the noodles and allow them to boil for 2-4 minutes (according to package directions). Drain and rinse under cold running water.
- Heat a large wok or a 16-18 inch skillet over high heat. Let the skillet heat for several minutes until it becomes SCREAMING HOT. Drizzle with 1 tablespoon of sesame oil and 1 tablespoon of canola oil. When the pan becomes very hot and the oil starts to shimmer, add the noodles in a thin even layer. Grab the handle and carefully swirl the pan so the oil evenly coats all the noodles. Allow the noodles to cook for 4-6 minute or until they become crispy.
- Flip the noodles over using a large spatula. Do this carefully, don't worry if you cannot get all of them to turn at once. Do it in portions if necessary. Drizzle the remaining 1 tablespoon of sesame oil and 1 tablespoon of canola oil around the perimeters of the pan and again, lift the skillet with handle and swirl the pan to allow the oil to distribute. Let the noodles fry for an additional 3-5 minutes. Remove the noodles to a plate.
- Heat the remaining 1 teaspoon of sesame oil, along with the white part of the scallion and let sizzle for just 10 seconds. Add the shredded carrots if using, and let cook for an additional 10 seconds. Add the noodles back into the skillet and toss. Separate the noodles so there aren't any large clumps. Toss in the shredded cabbage mix, if using and drizzle with the soy sauce mixture and toss continuously for 1-2 minutes or until the sauce distributes evenly over the noodles.
- Add the bean sprouts if using and the greens of scallions. Toss to combine and serve immediately.

- Combine the Sauce ingredients in a small bowl and mix.
- Place rice vermicelli noodles in a large bowl filled with boiled water and soak as per packet instructions. Drain and set aside.
- Heat 1 tbsp of oil in a wok or heavy based fry pan over medium heat. Add the shrimp/prawns, cook until just cooked - about 2 1/2 to 3 minutes. Remove and set aside.
- Add the egg and spread it out to make a thin omelette. Once set, use a spatula to roll it up, remove from the wok and slice (while still rolled up).
- Return the wok to medium heat and add the remaining 1 tbsp of oil. Add the garlic, ginger and onion, cook for 2 minutes until onion is slightly softened.
- Add capsicum and cook for 1 minute.
- Add noodles and Sauce, give it a few tosses. Then add the egg, pork, shrimp/prawns, chillies (if using). Toss until the sauce coats all the noodles and everything is heated through - about 1 to 2 minutes.
- Serve immediately.

SPICY MANDARIN NOODLES
I created this for the Dining on a Dollar cooking contest, November 2008. Since the contest was a penny-pinching contest, I did not use meat or very many exotic ingredients. Just basics you might have around the house. I did not waste or throw anything away, all of the juice from the oranges is used as well as the sauce packet from the ramen noodles. The ramen sit in a marinade before they are cooked so this softens the noodles and as they sit, the starch from the noodles thickens the sauce so be sure and let them sit for at least the 45 minutes. Then the noodles cook in their marinade giving them a spicy orange flavor. I hope you like them!

- In a food processor or blender; pour in the oranges with their juice, sambal, vinegar, and the seasoning packet for the ramen noodles. Mix together until the oranges are finely chopped into a sauce.
- In a large bowl; put the ramen noodles and drained bamboo shoots. Pour the orange mixture over them to cover.
- Let the noodles soak for 45 minutes to an hour until they absorb lots of the liquid and get soft.
- Heat the noodles and shoots with the orange marinade in a skillet over medium heat for about 5 minutes until the sauce bubbles.

MANDARIN PORK STIR-FRY WITH SESAME NOODLES
When the budget is tight try dressing up leftovers and serving as a stir-fry over ramen noodles. This can be made with uncooked pork loin or with leftover pork. If using precooked pork you only need to reheat the pork with the other ingredients. This inexpensive recipe makes a delicious meal for a family of four or six. If serving to children you might need to adjust the Sambal Oelek accordingly.

- In a small bowl, whisk together soy sauce, cold water, cornstarch and Sambal olek; set aside.
- Coat a cool, nonstick wok with cooking spray. Preheat wok over high heat, then add 1 teaspoon oil. When the oil is hot, add pork strips and cook 3-4 minutes or until pork is browned and cooked through, stirring constantly. Remove pork from wok and set aside. If using leftover pork loin strips; skip this step and add the meat in only to warm after the vegetables are cooked.
- To the wok add the pepper strips, onions, garlic, carrot and cook 2-3 minutes or until vegetables are crisp tender, stirring constantly. Add mushrooms and cook an additional 2-3 minutes, stirring constantly.
- Return the cooked pork back to wok. Stir soy sauce mixture well and pour it over the ingredients in the wok; stir in the grated ginger. While stirring constantly, heat for 1 minute or until the sauce thickens and bubbles; add mandarin oranges and toss gently to coat.
- Cook the ramen noodles as per package directions, drain and toss with 2 teaspoons sesame oil.
- Serve stir-fry over the noodles and garnish with toasted sesame seeds.

- To make the marinade, combine the soy sauce, oyster sauce, sugar and ginger and stir until the sugar is dissolved. Place the pork in the marinade and let sit for 10 minutes. Drain and reserve the marinade for later.
- Heat the oil in a wok or heavy skillet on high heat and fry the pork for one minute or until done. Remove the pork and set aside. Next fry the white parts of the cabbage and green onions along with the garlic for 30 seconds or until tender. Return the pork to the pan along with the reserved marinade, the sesame oil, chicken/cornstarch mixture and the green parts of the cabbage and green onions. Cook for 30 seconds.
