MANDARIN PASTA SALAD



Mandarin Pasta Salad image

I developed this recipe when I was asked to bring a salad to a birthday party for my husband's grandfather. Guests raved about my creative dish! -Kathleen Dougherty, Williamsville, Illinois

1 package (1 pound) angel hair pasta or thin spaghetti, broken into thirds
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 garlic cloves, minced
2 tablespoons butter
1-1/2 teaspoons seasoned salt
1 can (8 ounces) sliced water chestnuts, drained
2 cans (11 ounces each) mandarin oranges
1 package (6 ounces) frozen snow peas, thawed and drained
2 cups sliced fresh mushrooms
2 cups shredded carrots
2 bunches green onions, sliced
DRESSING:
2/3 cup canola oil
1/2 cup white wine vinegar
3 tablespoons soy sauce
1 garlic clove, minced
1 tablespoon sugar
1 tablespoon honey
1/2 teaspoon ground ginger
3 tablespoons sesame seeds, toasted

Steps:

  • Cook pasta according to package directions. Drain and rinse with cold water; set aside. In a large skillet, saute chicken and garlic in butter until chicken is no longer pink; sprinkle with seasoned salt. Remove with a slotted spoon; set aside., In the same skillet, saute water chestnuts for 2-3 minutes. Drain oranges, reserve 1/2 cup juice. In a large serving bowl, combine oranges, pasta, chicken, water chestnuts, peas, mushrooms, carrots and onions., In a jar with a tight-fitting lid, combine the oil, vinegar, soy sauce, garlic, sugar, honey, ginger and reserved mandarin orange juice; shake well. Pour over pasta mixture and toss. Sprinkle with sesame seeds. Refrigerate until serving.

I had this at a party and couldn't get it off my mind. It's a fruity Asian chicken salad that even my family's picky eaters enjoy. I bake my own chicken for more flavor, which adds to the prep time, but pre-cooked or canned chicken will also work just fine.

1 teaspoon finely chopped, peeled fresh ginger
⅓ cup rice vinegar
¼ cup orange juice
¼ cup vegetable oil
1 teaspoon toasted sesame oil
1 (1 ounce) package dry onion soup mix
2 teaspoons white sugar
1 clove garlic, pressed
1 (8 ounce) package bow tie (farfalle) pasta
½ cucumber - scored, halved lengthwise, seeded, and sliced
½ cup diced red bell pepper
½ cup coarsely chopped red onion
2 diced Roma tomatoes
1 carrot, shredded
1 (6 ounce) bag fresh spinach
1 (11 ounce) can mandarin orange segments, drained
2 cups diced cooked chicken
½ cup sliced almonds, toasted

Steps:

  • To make the dressing, whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended. Cover, and refrigerate until needed.
  • Bring a large pot of lightly salted water to a boil. Add the bowtie pasta and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water. Place pasta in a large bowl.
  • To make the salad, toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta. Pour the dressing over the salad mixture, and toss again to coat evenly. Serve immediately.

1 package dry ramen noodles
1 15- ounce can mandarin oranges (drained)
1 cup frozen shelled edamame beans (thawed)
6 green onions (whites and greens chopped)
1/4 cup slivered almonds*
1 tablespoon black sesame seeds
7 tablespoons seasoned rice vinegar
2 tablespoons vegetable or grapeseed oil
3 teaspoons light soy sauce
3 teaspoons sugar
4 teaspoons sesame oil (add more to taste if you prefer a strong sesame taste)
Freshly ground black pepper

Steps:

  • Add the coleslaw mix to a large bowl. Crumble the dry ramen noodles into the coleslaw and then add the mandarin oranges and edamame. Add the green onions, slivered almonds and black sesame seeds and toss.
  • In a small bowl, whisk the rice vinegar, vegetable oil, soy sauce, sugar and sesame oil and freshly ground black pepper in a small bowl. Drizzle over the slaw mix and toss to combine. Refrigerate for 1 hour for flavors to meld.

8 ounces bowtie pasta noodles
4 cups spinach leaves
½ cup craisins
⅓ cup pine nuts (or cashews)
1 4-ounce can mandarin oranges (drained)
¼ cup cilantro leaves (roughly chopped)
⅓ cup teriyaki sauce ((the thicker, the better!))
⅓ cup rice wine vinegar ((may sub apple cider vinegar))
½ teaspoon garlic powder
½ teaspoon onion powder ((if you have it))
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon sugar
½ cup oil ((such as vegetable oil, canola oil, olive oil))

Steps:

  • Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
  • While pasta is boiling, prepare the dressing. In a jar combine all dressing ingredients. Cover and shake to combine. Chill until ready to use.
  • In a large bowl toss together pasta, spinach, raisins, nuts, mandarin oranges, and cilantro. Just before serving pour dressing over salad, toss, and serve.

¼ cup rice vinegar
¼ cup sugar
¼ cup vegetable oil
2 (3 ounce) packages ramen noodles with seasoning packet
½ head romaine lettuce, chopped
1 (10 ounce) can mandarin orange segments, drained
¼ cup slivered almonds

Steps:

  • In a microwave-safe bowl, mix together vinegar, sugar, and oil. Microwave on high until sugar dissolves, about 1 minute. Mix well, and set aside to cool.
  • Crush ramen noodles in the packages. Pour into salad dressing.
  • In a salad bowl, toss romaine lettuce with oranges, almonds, and salad dressing.

1 lb dried linguine, broken into fourths
1/4 cup soy sauce, I use Tamari I think it's a better quality soy
1/4 cup water (because of the soy sauce..I used about half of the water the recipe calls for)
2 tablespoons olive oil
2 tablespoons lemon juice
1 garlic clove, minced
1 tablespoon grated fresh ginger
2 cups small cherry tomatoes, halved
3/4 cup carrot, cut into thin bite size strips
1 1/2 cups fresh pea pods, sliced
1/2 cup sliced green onion
4 tablespoons sesame seeds, toasted
1/2 teaspoon crushed red pepper flakes

Steps:

  • Cook the linguine according to pkg directions. Drain linguine and transfer to an extra large mixing bowl.
  • In a jar with a screw top lid, combine soy sauce, water, olive oil, lemon juice, garlic, ginger and I also added a pinch or two of crushed red chili pods. Cover and shake well.
  • Pour over hot linguine; toss gently to coat. Cool.
  • Add the tomato, carrot, pea pods and green onions to linguine mixture; toss gently to combine. Cover and chill for 2 to 24 hours.
  • Let stand at room temperature for 1 hour before serving.
  • Add sesame seeds. Toss gently before serving.

A better, healthy version of the original Asian ramen salad with fresh ingredients. Ramen salad is a quick and easy favorite at any potluck!

1 package ramen noodles ((3 ounces))
2/3 cup sliced almonds
2 tablespoons sesame seeds
1 bag coleslaw mix ((16 ounces))
1 1/2 cups shelled frozen edamame (thawed)
1 cup shredded carrots
4 scallions (thinly sliced (both white and green parts))
1/2 cup canned mandarin orange segments in light syrup (rinsed and drained)
1/4 cup rice vinegar
3 tablespoons extra-virgin olive oil
2 tablespoons honey (substitute agave if vegan)
1 tablespoon low-sodium soy sauce
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F. Crumble the ramen noodles onto a baking sheet and spread them in a single layer along with the almonds. Bake for 5 minutes, remove from the oven, add the sesame seeds, and toss, then bake for 1 to 3 additional minutes until fragrant and golden. Watch closely so that the mixture does not burn. Set aside.
  • In a small bowl, briskly stir together all of the dressing ingredients: rice vinegar, olive oil, honey, soy sauce, salt, and pepper. (Alternatively, you can shake them together in a mason jar with a tight-fitting lid.)
  • In a serving bowl, toss together the coleslaw, edamame, carrots, scallions, and toasted ramen and almonds. Drizzle the dressing over the top, then toss again to combine. Sprinkle the oranges over the top, then refrigerate until ready to serve.

100g buckwheat soba noodles
2 tsp sesame oil
3 tsp stem ginger syrup plus one ball, finely chopped
2 skinless salmon fillets
1 heaped tbsp sesame seeds (black, white or a mixture)
3 mandarins or clemantines, 2 peeled and finely sliced, 1 juiced
5 tsp white wine vinegar
4 spring onions , finely shredded into matchsticks
4 baby turnips , or 1 large, finely sliced
50g Chinese cabbage , finely shredded

Steps:

  • Cook the noodles following pack instructions, then drain and tip into a bowl. Meanwhile, heat the grill. Mix together 1 tsp sesame oil with 1 tsp ginger syrup and brush over the salmon fillets. Sprinkle on the sesame seeds to stick, then grill for 5-8 mins until just cooked through.
  • Whisk together the remaining sesame oil and ginger syrup with the mandarin juice and white wine vinegar. Toss this dressing through the noodles to coat, then season.
  • Scatter over the chopped ginger, spring onions, turnips, cabbage and mandarin slices, and toss once more to combine. Divide between two plates and top with the salmon to serve.

I have been making this salad for at least 25 years. I think I got it from my friend, Cloetta. We served it at a church party for over 150. I like to make this the day before and refrigerate, individually, in ziploc bags. When we are ready to eat mix together. (Add chow mein noodles last if desired. I don't use them at all)

3 tablespoons green onions (some tops)
2 tablespoons sesame seeds, toasted
1 (3 ounce) package almonds, toasted

5 ounces chow mein noodles (optional)

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vinegar
3/4 cup salad oil

Steps:

  • Wash, dry and tear lettuce. I like to prepare my lettuce hours earlier and refrigerate in a ziploc bag, so that it will be crisp.
  • Wash and chop onions.
  • Toast sesame seeds and almonds in small skillet. I don't toast them together.
