JULIE'S KIWI MANDARIN DRESSING
Once upon a time, in the recipe request section of an online bulletin board, someone asked for a kiwi mandarin salad dressing. I looked all over for one online, but no luck. So I went to the store and got myself a bunch o' kiwis and such, and came up with one of my own. I had it with dinner that night, and it was darn tasty! The folks on the other board have had it, too, and say they really like it.

Steps:
- Peel the kiwis, then whir them in the food processor until they're thoroughly liquified.
- They won't be completely liquid because they have a fair amount of fiber in them.
- Place in a bowl.
- If using canned mandarins, rinse them well (they usually come in syrup).
- If using fresh, peel and separate the mandarins.
- Then process them well.
- Put a sieve over the bowl with the kiwis and pour the processed mandarins into the sieve to separate the juice from the pulp.
- Add the remaining ingredients and whisk well.
- Pour over field greens salad mix and enjoy!
- Pine nuts make a nice garnish for this dressing.
- Note: I created this recipe as a request from a user on an online bulletin board.
- Fresh mandarins are preferred, rather than canned, for sure.
- Also, other people who've tried this recipe really like it- one substituted balsamic vinegar, but it's such a strong vinegar (and would cover the taste of the kiwi) I think the rice vinegar is better.

MANDARIN ORANGE SALAD WITH KIWI
This is only a 1 point salad. You don't need to add any dressing to this because of the flavors of the fruit. You can add a nice light vinegrate.

SPINACH, STRAWBERRY, MANDARIN SALAD WITH POPPY SEED DRESSING
This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

Steps:
- Combine all dressing ingredients, mix well and refrigerate.
- Make well ahead to allow flavors to blend.
- Taste dressing and adjust sugar/vinegar for your sweet/tart taste preferences.
- Tear fresh spinach into bite sized pieces, wash and pat dry.
- Wash strawberries, drain, pat dry and cut in thirds.
- Shake dressing container well and toss with spinach, strawberries, kiwi and mandarin orange sections just before serving, otherwise the spinach will wilt.
- This makes a wonderfully tart, slightly sweet and very colorful salad!
LAST MINUTE FRUIT SALAD
I had to come up with a last minute salad for a church function and had no time to get to the store to buy ingredients. Luckily, I had lots of fruit in the house and came up with this quick yet colorful and tasty salad. I feel almost silly sharing it, as it is really very easy, but I did get a recipe request and left with a nearly empty bowl. Cook time is actually chilling time.

Steps:
- If you have an egg slicer,us this to slice your berries thinly, otherwise, use a knife to slice into very thin slices.
- Wash kiwfruit and pat dry.
- Using a very sharp knife, slice kiwi thinly- leaving the skin ON.
- Lay each slice of kiwi flat and use the knife point to cut a slit in the ring of skin left on each slice.
- The remaining skin should easily peel off (if it is stubborn, just trace along the outer edge of the slice with your knife)- you'll end up with nice even slices of kiwi.
- In a large decorative serving bowl, gently combine berries, kiwi slices, mandarin oranges, and pineapple chunks- don't stir too hard or you'll crush the fruit.
- Chop cherries and add to the bowl.
- Add just a couple of Tablespoons of each of the the reserved fruit canning juices to taste- not too much, just enough to moisten.
- Add the sugar and gently stir to combine.
- Cover& Chill at least 30 minutes.
- Can be made up to 3 hours in advance- but don't make too early or the fruit will get soggy.
