4 mandarin oranges (peeled and segmented)
¼ cup diced red onion
¼ cup chopped cilantro
1 jalapeno (deseeded and finely diced)
2 tablespoons lime juice (from one lime)
¼ teaspoon kosher salt

Steps:

  • Once you've peeled and segmented the mandarin oranges, slice each segment into quarters.
  • In a small bowl, stir together the oranges, red onion, cilantro, jalapeno, lime juice, and salt.
  • Serve with tortilla chips or use as a topping on grilled seafood.

1 medium cucumber, peeled and sliced into very thin rounds (app. 2 cups)
1 (11 ounce) can mandarin oranges, drained
1 medium sweet onion, sliced into very thin rings (app. 1 cup)
2 teaspoons granulated sugar
1/3 cup white vinegar
1 teaspoon chopped fresh tarragon
salt & pepper, to taste

Steps:

  • In a serving bowl, combine the cucumbers, oranges, and onion rings.
  • In a small bowl, stir together the sugar and vinegar until the sugar dissolves.
  • Pour the vinegar mixture over the cucumber salad. Toss well.
  • Add chopped tarragon. Season with salt and pepper.
  • Chill 1 hour before serving.

This is such a fresh and light salsa. I made this one day when I needed some extra ingredients and decided to throw some cucumbers in. I now make this for every picnic or party I go to. It is requested. Wherever I am, I have to give the recipe to someone. I keep this in my fridge at all times and all my kids love it. A great way to get them to eat their veggies.
