GARLIC ALMOND SHRIMP

"This attractive and delicious stir-fry makes a perfect dinner for two," says Nancy Zimmerman of Cape May Court House, New Jersey. "Mandarin oranges and snow peas add color and flavor, plus it's quick and easy to make."

Number Of Ingredients 13

1 can (11 ounces) mandarin oranges
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 tablespoon reduced-sodium soy sauce
1 package (6 ounces) frozen snow peas, thawed
1 cup sliced fresh mushrooms
1 small onion, thinly sliced
1 teaspoon canola oil
1/2 pound uncooked medium shrimp, peeled and deveined
1 small garlic clove, minced
3 tablespoons slivered almonds, toasted
Hot cooked rice, optional

Steps:

  • Drain oranges, reserving juice; set oranges aside. In a small bowl, combine cornstarch, salt, ginger and reserved juice until smooth. Stir in soy sauce; set aside., In a large nonstick skillet or wok, stir-fry the peas, mushrooms and onion in oil for 2-3 minutes or until crisp-tender. Add shrimp and garlic; stir-fry 3 minutes longer. , Stir cornstarch mixture and add to the pan. Add oranges. Bring to a boil; cook and stir for 2 minutes or until thickened. Sprinkle with almonds. Serve with rice if desired.

1 head romaine lettuce, chopped,washed,and dried
2 (11 ounce) cans mandarin oranges, drained
6 long stem green onions, finely chopped
1/2 cup sliced almonds
2 tablespoons sugar
1/4 cup red wine vinegar
1/2 cup olive oil
1 tablespoon sugar
1/8 teaspoon red pepper flakes
fresh ground black pepper

Steps:

  • In a large bowl, combine the Romaine, drained oranges, and chopped onions.
  • Heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.
  • Turn onto plate and cool for 10 minutes.
  • Combine remaining ingredients in a jar with a tight fitting lid; shake vigorously.
  • Pour salad dressing over lettuce mixture; toss.
  • Sprinkle with sugared almonds.

This wonderful tossed salad is great for a special salad or even a main course. It's one of my most requested recipes. Omit or increase ingredients to suit your taste. Serves 8 as salad, 4-6 as main dish.

1/2 cup sugar
2 teaspoons paprika
1 1/2 teaspoons salt
1 tablespoon dry mustard
1/2 cup red wine vinegar
1 cup salad oil
2 heads romaine lettuce, cut in bite-sized pieces
2 (11 ounce) cans mandarin oranges
1 cup slivered almonds, toasted
1 lb fresh shrimp
2 ripe avocados, chopped
1 red onion, sliced into thin rings
2 tablespoons toasted sesame seeds

Steps:

  • Mix dressing ingredients and let sit over night or at least 3 hours in refrigerator.
  • Toast almonds and sesame seeds in frying pan.
  • Chop salad into bite-size pieces.
  • Slice onion into thin rings.
  • Cut avocado into 1/2 inch cubes.
  • Sprinkle lemon juice on avocado if not serving immediately.
  • Combine all salad ingredients including drained oranges and shrimp.
  • Toss, dress and serve.

EASY MANDARIN ALMOND SALAD



Easy Mandarin Almond Salad image

Of all the salads listed by the same name, none are as simple as the recipe I always use. (Remember, I'm a lazy cook!!)

1/2 head iceberg lettuce
1 (8 ounce) can mandarin orange pieces, drained
1/4 cup sliced almonds (or slivered, see note)
1/4 cup vegetable oil
1/4 cup vinegar
1/4 cup sugar

Steps:

  • For dressing: mix oil, vinegar and sugar in a small bowl. Set aside.
  • Tear lettuce into serving bowl. Add mandarin slices and almonds.
  • Mix in dressing, adding only as much as desired.
  • Serve. Garnish with green onion if desired.
  • *Note: You can toast almonds in a frying pan until brown, stirring regularly -- especially when they start getting dark. I also usually add a generous sprinkling of sugar to candy the almonds. The almonds will be soft when you take them off the element, but once they cool, they'll become crispy. You'll also have fun cleaning the pan!

1/2 pound fresh or frozen medium shrimp in shells
1 cup boiling water
1 cup sliced fresh mushrooms (3 ounces)
1/2 cup uncooked regular long-grain rice
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 small onion, thinly sliced
2 garlic cloves, finely chopped
1/2 cup whole almonds, toasted
1 can (11 ounces) mandarin orange segments, drained
1 package (6 ounces) frozen snow (Chinese) pea pods, thawed and drained
Soy sauce, if desired

Steps:

  • Peel shrimp. (If shrimp are frozen, do not thaw; peel in cold water.) Make a shallow cut lengthwise down back of each shrimp; wash out vein.
  • Heat oven to 350°F. Mix water, mushrooms, rice, salt, ginger, onion, garlic and shrimp in ungreased square baking dish, 8x8x2 inches. Cover tightly and bake 35 to 40 minutes or until liquid is absorbed and shrimp are pink and firm.
  • Stir in almonds, orange segments and pea pods. Cover and let stand about 3 minutes or until pea pods are hot. Serve with soy sauce.
