FORGOTTEN COOKIES
These meringues are crispy on the outside and marshmallow-y on the inside, with bits of chocolate throughout. The best part of this recipe is that you turn off the heat once the cookies go in the oven, so you can truly forget about them until the morning. A spring-loaded ice cream scoop makes fast work of forming the meringues and you can use any size you like.

Steps:
- Position 2 oven racks in the center of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
- Beat the egg whites and salt in a large bowl on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Beat in the sugar, 1 tablespoon at a time, then add the vanilla extract. Continue beating until the meringue is thick, glossy and holds stiff peaks, about 6 minutes. Gently fold in the chocolate chips with a rubber spatula.
- Using a spring-loaded ice-cream scoop (or 2 spoons, using one to nudge the meringue off the other), scoop the meringue into mounds about 2 inches apart on the prepared baking sheets. Sprinkle each cookie with a few more chocolate chips.
- Put the baking sheets in the oven, then immediately turn off the oven. Let the meringues stand in the oven until dry, at least 4 hours and up to overnight.
CLASSIC FORGOTTEN COOKIES WITH VARIATIONS
These meringue-like "forgotten" cookies are (purposely) left in the oven all night and are perfect for holiday parties and family gatherings.

- Gather the ingredients. Preheat the oven to 350 F and line a cookie sheet with foil and grease it with butter.
- Beat the egg whites until foamy. You can do this by hand with a whisk , but it's much faster to use a hand mixer or a standing mixer on medium speed.
- Gradually add the sugar and continue beating the egg whites until they hold stiff peaks .
- Add the vanilla and salt. Blend well.
- Using a spatula, fold in the pecans and chocolate chips by hand.
- Drop dough by teaspoonfuls onto the prepared cookie sheet.
- Put the cookies in the preheated oven and then turn the oven off .
- Leave the cookies in the oven overnight, keeping the door closed so the heat doesn't escape too quickly, for about 10 hours.

MAMMY'S FORGOTTEN COOKIES
One of my favorite times when I was a kid was spending the night with my paternal grandmother, Lorah Nell Green. I called her Mammy. But it was a really good night when we would make Forgotten Cookies and left them in the oven over night! I was always amazed how they would "cook" with the oven off! Now, they are favorites of my grown children!

- Preheat oven to 325 degrees
- Beat egg whites and salt until it is foamy. Slowly add the sugar a couple of tablespoons at a time, this is important. Beat after each addition until stiff peaks form.
- Stir in the vanilla and then fold in the chocolate chips.
- Drop by tablespoons on a wax paper lined cookie sheet and place the sheets in the preheated oven.
- After 2 minutes, turn the oven off. Leave the cookies in the oven overnight. In the morning, remove from the cookie sheet and store in airtight containers, lined with paper towels to absorb any moisture.

FORGOTTEN COOKIES
This is an adopted recipe which I have just made...September 2005. These are very easy to make but if you are thinking they will be like meringues like I did.....they are not. They come out like small flat cookies. Very sweet, so someone with a sweet tooth will more than likely love these. Please make sure that you do put them on baking paper lined trays to cook as they will stick to the tray if you don't. Ideal way to use up egg whites left over from recipes using only yolks.
