MAMA IULIUCCI'S FAMOUS MEAT-A-BALLS (ITALIAN MEATBALLS)
Here it is, my mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!

Steps:
- Mix all ingredients gently in a large bowl until well combined.
- Roll meatballs 1 1/2- 1 3/4" in diameter.
- Heat about 1/4" of oil over medium heat in a large frying pan.
- Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.
- Drop meatballs in your favorite sauce (I highly recommend My Mama Iuliucci's"Don't Skip a Step" Spaghetti Sauce recipe#26947) and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.
- Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.

- In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
- In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

- 1. Place meatballs in a very large baking dish. Preheat oven to 350 degrees.
- 2. Combine jelly, worcestershire sauce, and brown sugar in a large saucepan over medium heat. Heat to boiling, stirring frequently to prevent sticking. Stir in ketchup and return to a boil. Lower heat and simmer about 10 minutes, stirring occasionally.
- 3. Pour sauce over meatballs; stir to coat well. Bake meatballs for 25-30 minutes, until sauce is somewhat reduced.
- 4. Place meatballs and sauce in a large slow cooker on low to keep warm while serving. Serve with toothpicks.
- 5. To make my meatballs: Beat egg and add to meat and cracker crumbs with seasonings in a large bowl. Mix well with hands until all combined. Form into 1-1/4" meatballs. Place on foil-covered baking sheet. Bake at 400° about 15 minutes.
- 6. Chris Langel gave me a recipe for potlatch seasoning! 2 tsp. salt, 3/4 tsp. ground cumin, 1/2 tsp. dried oregano, crushed, 1/4 tsp. garlic powder, 1/4 tsp. chili powder, 1/8 tsp. white pepper = about 4 tsp.
MAMMA LEONE'S-STYLE SPAGHETTI AND MEATBALLS WITH MOZZARELLA

- For the sauce, heat a large Dutch oven over medium heat with oil, 6 slow turns of the pan
- Add onions, garlic, salt and pepper, and cook slowly until very soft, 15 minutes, stirring frequently and lowering the heat if the onions begin to brown
- Add tomatoes and break them up, add passata, cheese rind and basil, and simmer at a low bubble for a minimum of 30 minutes
- For the meatballs, sauté the onions and garlic in olive oil in a small skillet over medium-low heat until very soft, about 15 minutes
- Add a splash of water if the onions begin to brown; let cool
- Soak the bread in milk for 10 minutes then squeeze out excess liquid and crumble into moist crumbs
- Place meats in a bowl and season with salt and pepper
- Add breadcrumbs and season with allspice or cloves
- Add fennel seeds, red pepper flakes, grated cheeses and eggs to the bowl and mix
- Roll large meatballs about 2 ½-inches in diameter and arrange in a baking dish or casserole; drizzle with EVOO
- (Tip: The meatballs freeze well but do not add mozzarella if freezing them
- ) Bake meatballs at 375 °F for about 15 minutes then cover with about half of the sauce and mozzarella, and bake about 15 minutes more
- Meanwhile, bring a large pot of water to rolling boil, add salt to liberally season water and cook pasta 1-2 minutes less than al dente
- Reserve 1 cup of starchy water and drain pasta
- Toss pasta with half the sauce and add starchy water and more grated cheese if you like
- Drizzle with EVOO to gloss the sauce and pasta once it emulsifies
- Top with torn basil and serve
- Pass meatballs at the table to place on top of pasta

- 1. Combine ALL meatball ingredients into a large bowl. Mix well. Roll into tightly packed balls, approximately 2 inches in diameter. Fry over medium heat until browned on all sides. Place aside on a plate or pan.
- 2. In a large pot or saucepan, sauté onion in olive oil until soft. Add garlic and cook 2 minutes longer.
- 3. Add parsley, bay leaves, basil, and oregano. Cook for an additional 1-2 minutes.
- 4. Add remaining ingredients and stir well, simmering for at least 30 minutes.
- 5. *If you are cooking meatballs* Carefully drop the browned meatballs into the sauce. Simmer for at least 90 minutes, stirring occasionally to avoid burning on the bottom of the pot.
MAMMA MIA MEAT SAUCE
My mother clipped this recipe out of USA Weekend back in 1993 - it was always the sauce she made while I was growing up (it's a recipe by Kathie Lee Gifford). Now that I cook myself, I've taken the recipe and adapted it to a few of my own 'likes' and now use this as my sauce for pasta, lasagna and ravioli! Can't be beat! (this recipe freezes very well!)

- In large saucepan or Dutch oven (at least 6 quarts), brown ground beef until no longer pink; drain.
- Add remaining ingredients and bring to boil.
- Reduce heat; simmer for 2-3 hours (the longer the better for my own tastes), stirring occasionally.
- If sauce tastes a little on the acidic side (from tomato sauce/paste), add the sugar.
- Serve over pasta!
