My mother came across this fudge recipe in a newspaper some 40 years ago. One taste and you'll see why it doesn't take long for a big batch to disappear. -Linda First, Hinsdale, Illinois

Number Of Ingredients 7

1 tablespoon plus 1/2 cup butter, divided
3 milk chocolate candy bars (two 7 ounces, one 1.55 ounces), broken into pieces
4 cups semisweet chocolate chips
1 jar (7 ounces) marshmallow creme
1 can (12 ounces) evaporated milk
4-1/2 cups sugar
2 cups chopped walnuts

Steps:

  • Line a 13-in. x 9-in. pan with foil and butter the foil with 1 tablespoon butter; set aside. In a large heat-proof bowl, combine the candy bars, chocolate chips and marshmallow creme; set aside. , In a large heavy saucepan over medium-low heat, combine the milk, sugar and remaining butter. Bring to a boil, stirring constantly. Boil and stir for 4-1/2 minutes. Pour over chocolate mixture; stir until chocolate is melted and mixture is smooth and creamy. Stir in walnuts. Pour into prepared pan. Cover and refrigerate until firm., Using foil, lift fudge out of pan; cut into 1-in. squares. Store in an airtight container in the refrigerator.

12 ounces semisweet chocolate morsels
12 ounces German's sweet chocolate, broken into small pieces
2 cups marshmallow cream
4 1/2 cups sugar
pinch salt
2 tablespoons butter
1 1/2 cups (12 ounces) canned evaporated milk
2 cups coarsely chopped nuts

Steps:

  • Butter a 9-by-13-inch baking dish pan, or mist it in with nonstick cooking spray.
  • Stir together the semisweet chocolate, German's chocolate, and marshmallow cream in a large bowl.
  • Bring the sugar, salt, butter, and evaporated milk to a boil in a medium saucepan over medium-high heat. Boil for 1 minute. Reduce the heat and simmer 7 minutes, stirring continuously. Pour the hot syrup over the chocolate mixture and stir until smooth. Stir in the nuts.
  • Pour into the prepared pan. Let stand undisturbed at room temperature until firm, preferably overnight.
  • Cut the fudge into small squares. Store in an airtight container for up to two weeks. Some people prefer the texture of this fudge when it is chilled after it is cut.

2 cups coarsely chopped pecans
1 pint (1 jar) marshmallow cream
12 ounces semisweet chocolate
12 ounces German's sweet chocolate

Steps:

  • In a heavy saucepan over medium heat, bring the sugar, salt, butter and evaporated milk to a boil. Boil for 6 minutes.
  • Meanwhile, place the pecans, marshmallow fluff and chocolate in a large bowl. Pour the boiled syrup over the chocolate mixture. Beat until chocolate is all melted.
  • Spray a 15 1/2 by 10 1/2 by 1-inch jelly-roll pan with a nonstick cooking spray and pour fudge into pan. Let harden at room temperature before cutting into 1-inch squares (can be placed in the refrigerator or freezer to speed hardening process).

4 1/4 cups granulated sugar
1 pinch salt
1 2/3 cups evaporated milk (one 12 ounce can)
2 tablespoons butter
2 cups semisweet chocolate pieces
3 (4 ounce) semi-sweet chocolate baking squares
1 pint marshmallow creme (two 7 ounce jars)
1 teaspoon vanilla extract
2 cups chopped pecans

Steps:

  • In a large saucepan, combine the sugar, salt, milk, and butter. Bring to a vigorous boil, stirring often; then reduce heat and simmer 6 minutes, stirring continuously.
  • Meanwhile, place the chocolate, Marshmallow Creme and vanilla into a large bowl. Gradually pour boiling syrup over the chocolate-marshmallow mixture and beat until chocolate is melted. Stir in nuts.
  • Pour into a buttered pan ( I used a buttered 11 x 16-inch jellyroll pan) and store in a cool place several hours to harden before cutting into 1-inch squares.
  • Store in a covered tin; keeps up to 6 months in a cool place.

In response to the request for Chocolate Fudge with Evaporated Milk, I have a recipe from my mother's collection which is for "Mamie Eisenhower's Fudge." It used Evaporated Milk, so thought I'd pass it along. It's quite old, and I'm going to type it exactly as it appears on her recipe card.

4 1/2 cups granulated sugar
1 (12 ounce) can evaporated milk
1 dash salt
2 tablespoons butter
3 pieces Baker's German's chocolate (sweet)
2 (12 ounce) packages chocolate chips
1 pint marshmallow whip (marsmallow creame)
2 cups nutmeats, chopped
1 tablespoon butter

Steps:

  • Put granulated sugar in a sauce pan. Add evaporated milk, salt. and 2 tablespoons of butter. Let come to a boil and boil 6 minutes.
  • Cut up chocolate fine and add Chocolate bits and Marshmallow Whip. Pour hot liquid on above and beat and beat until thick.
  • Add chopped nut meats.
  • Pour in 8x8x2 pan which has been greased with butter.
  • Hope this works - I know my mother made excellent fudge every year at Christmas, and I think this is the recipe she used! Happy Holidays!

1 pinch salt
2 tablespoons butter
1 (12 ounce) can evaporated milk
12 ounces semi-sweet chocolate chips
12 ounces German chocolate
1 pint marshmallow cream

Steps:

  • Boil sugar, salt, butter, and evaporated milk together for 6 minutes. Remove from heat.
  • While mixture is still hot, add semisweet chocolate chips, German chocolate, and marshmallow fluff.
  • Beat together by hand until all the chocolate is melted.
  • Refrigerate until set. Cut into small squares.
  • Makes 1 9X13" pan.
