Steps:
- Brown the sausage in a large, deep skillet. I like to use a cast iron skillet. Cook the sausage on medium heat, breaking it up into pieces, cooking until no pink remains, about 10 minutes.
- When the sausage is cooked through add the unsalted butter and stir until melted. Next, add the flour and stir into sausage until dissolved.
- Pour the milk into the skillet with the sausage and raise heat the bring the mixture to a boil. Once boiling reduce heat and continuously whisk until the gravy begins to thicken. About 5 minutes.
- Add in spices and stir until combined. Taste and adjust gravy seasoning to you liking, then serve over top of warm biscuits, enjoy!

- Preheat oven to 450° F.
- Line a large sheet pan with parchment paper and set aside.
- In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
- In a small bowl, whisk together butter and buttermilk until mixture appears lumpy.
- Add wet ingredients to dry ingredients and mix together until just combined.
- Scoop about a ¼ cup of dough onto the prepared baking sheet. Continue with remaining dough, spacing them 1-2 inches apart.
- Bake 15-17 minutes until tops are golden brown.
- Add ground pork to large skillet and season with ginger, sage, salt, and pepper. Cook over medium-high heat until browned and no longer pink, about 5-7 minutes.
- Reduce heat to medium. Melt the butter in the skillet with the pork then mix in the flour. Cook an additional minute, stirring occasionally. Mix in the milk until combined and cook until thickened, about 1-2 minutes.
- Reduce heat to low and whisk in the heavy cream. Simmer for about 5 minutes or until thickend. Mix in the cheddar cheese.

- 1. Cook pork sausage in a skillet until no longer pink. Drain the fat off, and add in cayenne pepper, hot sauce, and red pepper flakes. Cook stirring until the meat is completely. - Sausage -- In a medium sauce pan, saute the sausage, breaking it up as it cooks, on medium heat until cooked through. Make sure to drain the sausage well before making the rest of the sauce. I use hot breakfast sausage, but use what you like best).
- Once the sausage is drained well, return to the sauce pan and add the green chilies, scallions, cream, red pepper flakes, cumin and oregano. Mix well to combine and taste for any additional seasoning (salt or pepper). Let it simmer on medium to medium low for 4-5 minutes. The cream will help it thicken naturally.
- After the gravy cooks 4-5 minutes, stir in the cheese and heat through just to melt the cheese. This should be done just a few minutes before serving.
- Prepare the Base -- As I said, you can really use anything. Grits were excellent, croissants would be wonderful too. I happen to use Pillsbury (or a canned) biscuit, or you could certainly make your own too. I cooked the biscuits according to package directions. But NOTE, I brushed the biscuits (before baking) with a mix of butter, chili powder, and cumin for a little extra flavor.
- Serve -- Simply serve the gravy over your choice of the bottom layer. Garnish with extra cheese if you want and the extra scallion. A poached egg would be great, or even some scrambled eggs on the side. Just ENJOY!

- DIRECTIONS FOR BISCUITS: Preheat oven to 450 degrees.
- Cut shortening into flour until small dough pieces form and all flour mixture is blended. Slowly stir in milk and blend thoroughly. Form into large ball.
