MAMA'S MEATLOAF
I discovered the basic recipe years ago, and improved on it over the years. My southern mother was horrified that it wasn't made with milk, but when she tasted it she agreed it was an exceptionally good recipe. It's a family favorite, and I'm asked to take it to picnics and pot lucks.

Steps:
- Some cooks put all ingredients into a loaf pan "raw", but I prefer to sauté the onions first to take the "bite" out of them.
- Drain and set aside to cool.
- Into a large bowl place the ground beef, bread crumbs, catsup, egg, Worcestershire sauce and parsley.
- Add the sautéed onions to this mixture.
- Wash your hands and delve into this mixture like a mad man, squish it between your fingers and mix it very well.
- Form a loaf in a baking dish, leaving at least 1-inch around the sides so fat can drain off.
- Bake at 350°F about 45 minutes or until done.
- Serve this delicious meatloaf as is or with my recipe for curry sauce.
MOMMA'S MMM-MMM-MAGNIFICENT MEATLOAF
I've never been a big meatloaf fan but I like this recipe. My family raves about it! I think the onion, mushroom, cheese and bacon combination really makes it stand out from your ordinary meatloaf!

- Preheat an oven to 375 degrees F (190 degrees C).
- Mix the ground beef, sausage, mushrooms, onion, barbecue sauce, Worcestershire sauce, egg, oatmeal, garlic powder, pepper, and Cheddar cheese together in a large bowl until evenly mixed. Form into a loaf and place in a 9x13-inch baking dish. Lie the bacon strips across the top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

ALL-AMERICAN BARBECUE MEATLOAF
Hail to the red, white, and blue! This version of our basic meatloaf salutes that all-American tradition of the barbecue with the flavor of the grill.

- Preheat the oven to 400°F.
- Crush the crackers. I use the food processor to get finer crumbs.
- Mix the meat, soup, and egg together with the seasonings.
- Add cracker crumbs until the texture is firm but not dry.
- Press the meatloaf mixture into a loaf pan.
- Bake until almost done.
- Top with barbecue sauce and American cheese. Continue baking until sauce is heated, cheese is melted and meatloaf is done (160° on the meat thermometer).
- Muffin variation: Divide meatloaf mixture into 6 even portions.
- Press into large size muffin tin that has been sprayed with non-stick cooking spray.
- If adding a sauce, form a well in the top of each muffin.
- Check baking time carefully, as the smaller size allows the dish to bake more quickly. I have found that baking time is reduced to about 35 minutes in this form.

- Heat a smoker to 225°F.
- Combine the meat, eggs, bread crumbs, milk, barbecue sauce, and soup mix. Shape the mixture into a tube or loaf and place it inside a tin baking pan. Place the pan inside the smoker for 4 hours. Pat uses cured applewood in the smoker.
- Serve with a ribbon of your favorite barbecue sauce with grilled onions on top.

BBQ MEATLOAF

- Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
- Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
- Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
- Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
- Serve with additional warm BBQ sauce alongside.
QUICK & EASY BBQ MEATLOAF (5 INGREDIENTS)
Very easy quick meatloaf recipe. I make many varieties of meatloaf... sometimes the Italian with breadcrumbs, garlic, eggs, etc... This version is a tasty quick BBQ recipe that is great for busy nights or dinner in a rush. Sometimes I put the remaining BBQ sauce right on the loaf prior to putting it in oven if you like it a little hardened. For easy clean-up, I use a baking sheet lined with parchment paper that I spray lightly with Pam Olive Oil spray.

Steps:
- Combine the first 7 ingredients.
- Shape meatloaf into a ring and place in a dutch oven.
- In a bowl, mix together the worcestershire sauce, vinegar, sugar, ketchup, water and onion.
- Pour over meat and fill hole with sauce.
- Baste one or twice while cooking.
- Bake, covered, in dutch oven at 350 degree for approximately 1 hour, 30 minutes or until done.
