MAMA MINTZ'S ICEBOX COOKIES

1 cup butter
1 pound light-brown sugar
2 eggs
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup finely chopped nuts or shredded coconut

Steps:

  • In a bowl, cream the butter and sugar until fluffy. Add the eggs and mix well. Sift the flour, salt and baking soda onto wax paper and add the nuts or coconut. Stir the dry ingredients into the egg mixture. Divide the dough into four portions. Place each on a rectangle of wax paper and roll into a log about 1 1/2 to 1 3/4 inches in diameter and about 12 inches long. Refrigerate overnight or longer.
  • Preheat the oven to 350 degrees. Slice the dough in 1/4-inch rounds and place on ungreased baking sheets. Bake until the edges are brown and cookies are crisp, 6 to 8 minutes. Remove and cool on wire racks. Store in an airtight container.

A not-too-sweet Christmas cookie that goes great with cup of hot coffee or a glass of cold milk. One of Santa's favorites! These are great to make at the beginning of December and then simply bake in the oven when something sweet is quickly needed at the last minute during the holidays. Dough can be kept in refrigerator for a couple of weeks before baking.

2 cups brown sugar
1 cup butter, softened
½ cup white sugar
2 eggs, beaten
1 tablespoon vanilla extract
4 cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
1 cup chopped pecans
½ cup red or green candied cherries

Steps:

  • Beat brown sugar, butter, and white sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla extract with the last egg.
  • Mix flour, baking powder, and salt together in a bowl; stir into creamed butter mixture until dough is just mixed. Fold pecans and candied cherries into dough. Shape dough into 1 1/2-inch rolls on a piece of waxed paper. Seal waxed paper on the ends with tape; refrigerate until chilled and firm, at least 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Slice cookies to about 1/4-inch thickness and arrange on a baking sheet.
  • Bake in the preheated oven until edges are lightly browned, about 10 minutes.

1/2 cup butter, softened
1 cup packed brown sugar
1 large egg, beaten
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream the butter and brown sugar. Add egg and vanilla; beat well. Combine dry ingredients; add to creamed mixture. Stir in nuts if desire. , On a lightly floured surface, shape the dough into three 10-in. x 1-in. rolls. Tightly wrap each roll in waxed paper. Freeze for at least 12 hours. , Cut into 3/8-in. slices and place on greased baking sheets. Bake at 350° for 6-8 minutes. Remove to a wire rack to cool.

This is a nice basic cookie dough that you can expand upon as you wish. Very versatile. *for variation, add chocolate chips, shredded coconut, toffee chips, whatever suits your taste buds!

3/4 cup sugar
3/4 cup firmly packed brown sugar
1 cup margarine or 1 cup butter, softened
1 1/2 teaspoons vanilla
2 eggs
3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup finely chopped nuts (optional)

Steps:

  • In large bowl, combine the first 5 ingredients and beat well.
  • Stir in the next 3 ingredients, blend well.
  • If using nuts, add them now.
  • Divide dough into 3 equal parts and shape each part into a 1 1/2" diameter roll.
  • Wrap the rolls in saran wrap and put in fridge until firm, at least 2 hours.
  • At this point, you can do one of three things: Bake, freeze, or refrigerate.
  • To bake: Cut dough into 1/4" slices and bake 1 inch apart on ungreased cookie sheet at 425°F for 5-7 minutes, or until golden.
  • Remove immediately from sheets and cool completely.
  • To refrigerate:Leave in saran wrap and use within 2 weeks.
  • To freeze: Leave in saran wrap and use within 6 weeks.

5 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 pound margarine
1 cup white sugar
1 cup light brown sugar
3 eggs
1 cup chopped nuts

Steps:

  • In a bowl, whisk the flour, baking soda, and cinnamon together until evenly blended; set aside. Beat the margarine, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, allowing each egg to blend into the margarine mixture before adding the next. Mix in the flour mixture until just incorporated. Fold in the chopped nuts; mixing just enough to evenly combine.
  • Scrape the dough onto a sheet of waxed paper, and form into a log. Roll tightly in the waxed paper, and refrigerate until firm, about 4 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray baking sheets with cooking spray.
  • Unwrap the dough, and cut into 1/4-inch slices. Place the cookies onto baking sheets, spaced 1-inch apart. Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1 pound (4 sticks) butter, room temperature
1 cup brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans or walnuts

Steps:

  • Preheat oven to 350 degrees F.
  • With an electric mixer or by hand, cream butter and sugars in a large bowl. Add eggs and vanilla. In a separate large bowl, sift together the flour, cream of tartar, baking soda and salt. Add flour mixture to egg mixture in 3 additions. Stir in nuts.
  • Divide the dough into quarters, and then roll it into 4 logs. Place dough in refrigerator to chill for 2 hours. Remove dough and cut into 1/4-inch thick slices. Place on a floured, but not greased, baking sheet and bake for about 15 minutes. Remove to a rack and cool.
