MAMA'S SUMMER SQUASH CASSEROLE
This is a wonderful, cheese-enhanced squash casserole that my husband makes from memory of his mother's recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.
- Whisk egg and sour cream together in the prepared casserole dish; add squash, onions, 2/3 the crackers, and 2/3 the Cheddar cheese. Stir with a fork. Cover the squash mixture with remaining Cheddar cheese and crackers.
- Bake in the preheated oven until cheese is melted and crackers are lightly browned, about 30 minutes.

MAMA'S SQUASH
Talk about comfort food, this suits me right down to the ground. I would like to say Mama developed this recipe just for me but I doubt it and she's been gone since I was 18. There are just some things that are so identified by that invisible little golden chain between a person and their parents...and each of those little links...

Steps:
- 1. Cut squash into thick slices, then into 4 -6 pieces. Place in pan with 2-3 inches of water. Boil until very tender. (Covering pan with lid and steam/boiling them will speed the process). Drain off water. Push the squash a bit to push out a bit more water.
- 2. Mash squash with a potato masher until squash is mashed but still has some small pieces. Add butter, cream and seasonings, to taste. Return to a lower heat and cook until liquid is well incorporated.
- 3. Notes: Summer squash has a sweetness all its own, so taste before adding too much sugar. The fresher the squash the less sugar is needed. You can also use the frozen yellow squash slices from the grocery, its not as good as fresh but hey in winter... when you need a taste of home. Most children will eat this every time if you can get them to taste it once.

- Cook the two spaghetti squash. To do this, I wash the outside with water and vinegar, cut in half lengthwise, remove the seeds, and place cut-side down on a well-greased baking sheet (I grease my baking/cookie sheet with expeller-pressed coconut oil). Bake at 350 degrees for 30-45 minutes. Remove the strands of squash with a fork.
- While the squash is cooking, cook and shred the chicken. I put my chicken pieces in boiling water and let them cook/boil for about 30 minutes. Then I remove them from the water, cool, and shred with two forks. You can also cut the chicken with kitchen shears to make smaller pieces.
- As you're waiting for the squash and chicken to finish cooking, make a sauce using the cream cheese, sour cream, butter, 2 cups of the cheddar cheese, chicken broth, garlic powder, salt, and pepper. Depending on the size of your squash, decide how much chicken broth to use. You want it to be a soupy consistency, but not too watery. 4 1/2 cups has been just about right for me, but it depends on what you like and how big the squash are.

- Preheat oven to 350 degrees F. If using Sweet Mama, use half to three-fourths of the squash. If using butternut or acorn squash, cut in half lengthwise; remove and discard seeds. Arrange squash, cut sides down, in 3-quart rectangular baking dish. Bake for 1 to 1-1/4 hours for Sweet Mama, 45 to 60 minutes for butternut or acorn, or until squash is tender. Remove from oven; cool slightly. Scoop pulp from squash halves. Place cooked pulp in a bowl; mash with a potato masher or fork (you should have about 2 cups pulp).
- Meanwhile, in a saucepan cook onion in hot oil for 5 minutes or until onion is tender. Stir in broth, apples, and maple syrup. Bring to boiling, reduce heat. Simmer, covered, for 20 minutes or until apple is very tender. Remove from heat. Cool slightly. Stir in mashed squash.
- Transfer half the squash mixture to a blender container or one-fourth the squash mixture to a food processor bowl. Cover; blend or process until smooth. Repeat with remaining mixture.
- Return blended squash mixture to saucepan. Stir in whipping cream (if necessary, add additional broth to make desired consistency); heat through. Season to taste with salt and pepper. Sprinkle each serving with chopped apple. Makes 8 side-dish servings.
