MAMA'S SALSA RECIPE

Mama's Salsa Recipe image

This is my Salsa recipe that has been adapted from many different recipes over the years. I use my food processor to eliminate alot of the work. Add more crushed red pepper to adjust the heat to your desire and less sugar if you find it too sweet. We like the mix of the sweet with the spicy. Every year the tomatoes are different, but as a rule of thumb-a 5 gallon bucket of tomatoes will yield 4 batches of salsa. This year I made 12 batches. When the kids leave for college in the fall they make sure they take plenty since there may not be any left when they come back. This year they are getting a few jars at Christmas that I stashed back!

Categories     Low Protein

Time 12h45m

Yield 7 pints

Number Of Ingredients 9

12 cups tomatoes, chopped
5 cups onions, chopped
1/4 cup pickling salt
1 cup vinegar
2 1/4 cups sugar
1 tablespoon red pepper, crushed
3 cups green peppers, chopped
10 garlic cloves, minced
1 (5 1/2 ounce) can tomato paste

Steps:

  • Sprinkle pickling salt over chopped tomatoes and onions and let stand overnight.
  • In the morning drain all liquid from the veggies and place the veggies in a large stock pot.
  • To the pot add the vinegar, sugar and crushed red pepper.
  • Bring to a boil and boil for 45 minutes.
  • Add chopped green peppers, minced garlic cloves and tomato paste and boil for 20 minutes.
  • Pour into hot sterilized jars and place in a hot water bath for 10 minutes.
  • NOTE: To make Sweet & Hot Salsa I removed all of the garlic cloves, reduced the green peppers to 1 1/2 cups & used 1/2 tablespoon ground (cayenne) red pepper instead of the crushed red pepper. Just a few simple changes but the flavor is amazing!

THE BEST HOMEMADE SALSA FOR CANNING

The Best Homemade Salsa for Canning image

The BEST homemade salsa for canning. Have fresh tomatoes? Then you'll want to make this salsa, either hot or mild. It's so delicious and inexpensive to make!

Provided by Alex Caspero

Categories     canning

Time 1h30m

Number Of Ingredients 8

9 cups peeled and chopped tomatoes (they must be peeled first, see directions below or tutorial here)
2 1/2 cups chopped green bell peppers
2 1/2 cups chopped white onion
4 medium jalapeños, chopped (see notes)
8 large cloves garlic, chopped
6 teaspoons canning salt
1 cup white vinegar
1 (12-ounce) can tomato paste

Steps:

  • To do this, bring a large saucepan filled with water to a boil. Your saucepan needs to be tall enough to have the water cover the jars by 2 inches- though the jars will displace some of the water as they are added.

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
  • Bring a large pot of water to a boil. Score an "X" on the bottom of each tomato. Place tomatoes in boiling water for 2-3 minutes to loosen the skins. Remove the tomatoes with a slotted spoon to a bowl or strainer.
  • Carefully, remove the skins, then cut tomatoes in half or quarter them. Working in two batches, pulse the tomatoes a few times in a food processor, (I prefer the tomatoes chunky) then drain off juices. Place in an extra large bowl and repeat.

  • Use a damp paper towel to wipe the dried chiles clean before toasting. In a heavy, dry skilled (such as cast iron) toast the chiles in batches until pliable. Place them in a shallow bowl and pour the boiling water over them, then weigh them down with a plate. Let soak for 10 minutes.
  • Meanwhile, place the onions, garlic, tomatoes and tomatillos on a rimmed baking sheet pan lined in aluminum foil. Broil, turning occasionally, until they are blistered all over and the peels begin to peel back from the Romas.
  • Transfer the tomatillos to a blender or food processor. Pulse until smooth and add to a large stockpot. Add the onions to the blender. Squeeze the cooked garlic from the peels into the blender then pulse and add to the stockpot with the tomatillos. Cover the Roma tomatoes still on the baking sheet with foil and allow to cool. This will help release the skins as well.
  • Add the soaked chiles and the chipotle chiles and 2 tablespoons or so of adobo sauce to the blender. Strain the guajillo pepper soaking liquid through a fine mesh sieve and add it to the blender and blend on high until smooth. Add to the stockpot.
