7 peaches, peeled and sliced
1 tablespoon cornstarch
1 teaspoon lemon zest
1 teaspoon lemon juice
2 tablespoons water
1 ½ cups sugar, divided
1 cup flour
¼ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon baking powder
¾ cup milk
½ teaspoon vanilla extract
¼ teaspoon almond extract
¼ cup butter, plus 1 tablespoon

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a medium saucepan over low heat combine peaches, cornstarch, water, lemon zest, lemon juice, and ½ cup sugar in a medium saucepan. Raise the heat to medium and cook until thick and bubbly, stirring often.
  • Add the flour, cinnamon, nutmeg, and baking powder to a sieve and sift into a large bowl.
  • In a small bowl, combine sugar, milk, vanilla extract, almond extract, and 1 tablespoon of melted butter and stir to combine.
  • Pour the wet ingredients into the dry and mix well.
  • Grease a 12x8 inch (30x20 cm) (4.8 quart) baking dish with the remaining butter.
  • Pour the batter into the bottom of the greased baking dish and smooth into an even layer with a spatula.
  • Transfer the peaches gently by placing them on top of the batter. Do not stir.
  • Bake for 50 minutes to 1 hour or until golden brown.
  • Serve warm and enjoy!

Ok, this is really from the 1973 McCall's recipe cards, but it's the recipe my mom always made and I identify it as hers. But, whatever you want to call it, it's fabulous on a cool winter day fresh from the oven and served with melting vanilla ice cream.

2 (14 ounce) cans sliced peaches, drained (reserve 1/4 cup syrup) or 5 cups peaches, sliced and peeled (about 3 lb)
1/4 cup water or 1/4 cup syrup, reserved from canned peaches
1/2 cup sugar
2 tablespoons flour
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons margarine or 2 tablespoons butter
1/2 cup all-purpose flour (unsifted)
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons margarine or 2 tablespoons butter, softened
1 egg, slightly beaten

Steps:

  • Make filling: in medium bowl, combine peaches, all filling ingredients except butter. Turn into an 8 in x 8 in dish. Dot with butter.
  • Preheat oven to 375°F.
  • Make batter: in medium bowl, combine all batter ingredients and beat with a wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly (batter will spread during baking.).
  • Bake 35 to 40 minutes or until peaches are tender and crust is golden.
  • Serve warm with cream or vanilla ice cream.

Every summer, when I was growing up, brought time spent together as a family picking peaches, green beans & tons of other vegetables & fruits to can & freeze. The first bushel of peaches would yield the best tasting peach cobbler of the entire year. My family now enjoys this same quick & easy recipe & hopefully yours will too!

1 cup(s) milk
1 cup(s) self rising flour
1 cup(s) sugar
6 medium peaches
1 stick(s) butter or margarine

Steps:

  • Melt butter/margarine in baking pan in a 350 degree oven. Combine milk, flour & sugar in a seperate bowl. Add peaches to melted butter/margarine. Then pour flour mixture over peaches & butter/margarine.
  • Bake in 350 degree oven for 25 to 30 minutes. Let cool & serve. Ice cream or cool whip is optional.
