1/3 cup chicken stock
1/4 yellow onion
1 clove garlic
1/2 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
1/3 cup plain breadcrumbs
2 eggs
1/4 cup Parmigiano-Reggiano
grated
1 teaspoon red pepper flakes
1/4 cup Italian flat-leaf parsley
chopped fine
1 teaspoon salt
3 to 6 cups Mama's Marinara (recipe follows) or your favorite marinara
1/4 cup extra virgin olive oil
3 cloves garlic
crushed
1/2 yellow onion
peeled and chopped fine
3 tablespoons olive oil
Chili flakes
to taste
2 28-ounce cans tomato purée
Red Pack brand if possible
1 28-ounce. can crushed tomatoes
Red Pack brand if possible
1 tablespoon tomato paste
Red Pack brand if possible
1 teaspoon sugar
1 cup chicken stock
Red pepper flakes
to taste
Salt
to taste

Steps:

  • Place the chicken stock, onion, garlic and parsley in a blender or food processor and purée
  • In a large bowl, combine the puréed stock mix, meat, breadcrumbs, eggs, Parmigiano- Reggiano, red pepper flakes, parsley and salt
  • Combine with both hands until mixture is uniform
  • Do not over mix
  • Put a little olive oil on your hands and form mixture into balls a little larger than golf balls
  • They should be about 1/4 cup each, though if you prefer bigger or smaller, it will only affect the browning time
  • Pour about 1/2-inch of extra virgin olive oil into a straight-sided, 10-inch-wide sauté pan and heat over medium-high flame
  • Add the meatballs to the pan (working in batches if necessary) and brown meatballs, turning once
  • This will take about 10-15 minutes
  • While the meatballs are browning, heat the marinara sauce in a stockpot over medium heat
  • Lift the meatballs out of the sauté pan with a slotted spoon and put them in the marinara sauce
  • Stir gently
  • Simmer for one hour
  • Serve with a little extra Parmigiano-Reggiano sprinkled on top
  • Serve alone or over spaghetti (in which case, you will need 6 cups of marinara)
  • For the marinara, Cook the garlic and onion in the olive oil in a sauce pot over a medium-low flame, about 10 minutes or until garlic is tender and onions translucent, not brown (this is called "sweating" because it will draw out a lot of moisture and flavor)
  • Add the chili flakes to taste
  • Add all the tomato products
  • Pour the chicken stock into one of the 28-oz cans
  • Fill it the rest of the way with water and add that and the sugar to the pot
  • Stir and bring to a simmer
  • Taste and season with salt and cover
  • Simmer the sauce for about 1 hour
  • The sauce should be fairly thin, but not watery and very smooth
  • Uncover and simmer for 3 minutes if it is too thin for your taste; add a little water if it seems thick

1/4 cup extra-virgin olive oil
2 ounces salt pork, thinly sliced
3 tablespoons minced onion
2 garlic cloves, minced
2 28-ounce cans imported Italian crushed tomatoes
6 leaves fresh basil, torn into small pieces
Pinch of dried oregano
Salt and ground black pepper
1 pound ground lean beef
1/2 pound ground veal
1/2 pound ground pork
2 large eggs
1 cup freshly grated Pecorino Romano cheese
1 1/2 tablespoons finely chopped flat-leaf parsley
1 small garlic clove, minced
Salt and ground black pepper
2 cups fine dry bread crumbs
1 cup extra-virgin olive oil
1 clove garlic, lightly smashed

Steps:

  • Make the sauce: Heat the oil in a large saucepan over medium-low heat, then add the salt pork. Sauté until fat has rendered, about 5 minutes. Remove and discard salt pork. Add onion and sauté until translucent, about 3 minutes. Add garlic and sauté just until softened. Add tomatoes with their juice and bring to a boil. Reduce heat to low and simmer until sauce is slightly thickened, about 45 minutes. Add the basil, oregano and salt and pepper to taste. Cook for 1 minute more.
  • Make the meatballs: In a mixing bowl, combine the beef, veal and pork. Add the eggs, cheese, parsley and minced garlic, then salt and pepper as desired. Add the bread crumbs and mix well. Slowly add up to 2 cups water, 1/2 cup at a time, until the mixture is moist; all the water may not be needed. Shape into 1 1/2 -inch meatballs.
  • Heat the oil in a large sauté pan over medium heat. Add the smashed garlic and sauté until lightly browned, 1 to 2 minutes, then discard the garlic. Working in batches and taking care not to crowd the pan, add meatballs and fry until undersides are brown and slightly crisp, 5 to 6 minutes. Turn and brown the other sides, about 5 minutes more. Transfer cooked meatballs to paper towels to drain, then add to the marinara sauce. Mix gently and serve.

1 cup Italian breadcrumbs
½ cup Italian Cheese Parmesan (freshly grated)

½ cup Extra-Virgin olive oil
1 Onion (finely diced)
4 cloves Garlic (finely minced)
1-28- ounce- can of organic San Marzano Italian-style tomatoes
1-28- ounce- can of organic tomato purée (*Do not sub with paste*)
3 tablespoons Fresh parsley (finely chopped)
2 teaspoons Fresh (Dried thyme)
Kosher salt (to own taste)
Fresh ground white pepper (to own taste)
1 pound Dried Pasta (organic preferred)
Extra chopped parsley for serving
fresh basil (optional)

Steps:

  • Combine lean ground beef, ground pork, breadcrumbs, grated Italian cheese, minced garlic, parsley, eggs, if desired, season with kosher salt and freshly ground black pepper. Form into balls, and brown in olive oil till done. Reserve till needed.
  • In a frying pan, add the olive oil, the onion, and the four cloves of garlic. Stir often over medium heat until onion is golden. Remove garlic cloves and discard.
  • Drain the Italian-style canned tomatoes, saving ¼ of a cup of the liquid. Place the liquid from the canned Italian-style and tomato purée in the blender for about 6 seconds.
  • Add the drained tomatoes and blended tomato purée in the saucepot; cook for about 10 minutes on medium heat. Do not sub with tomato paste
  • Season the Marinara sauce with fresh parsley, dried thyme, and kosher salt, and black pepper stir the sauce well; simmer for about 20 minutes, stirring sauce a few times.
  • Cook 1 pound of pasta according to the package directions for al dente style pasta, drain pasta once was done, rinse if desired, and re-drain.
  • Pour spaghetti on the heated platter, cover with the sauce.
  • Sprinkle with two Tablespoons chopped parsley and grated Parmesan cheese.

In culinary school, I learned the term Mother Sauce, which refers to a sauce that is the base for other sauces. When I opened Rocco's and was developing the recipes for it, my cooks and I joked that marinara was "Mama Saucer" because it is an ingredient in many other dishes, and of course it's the mother of all sauces. It is also excellent on its own, especially with fresh pasta, which is more porous than dried pasta and therefore grabs the sauce and thickens it. I encourage you to make this in large quantities and keep it on hand in glass or plastic containers. It will keep in your refrigerator for weeks or your freezer for months. Once, when I was a kid, my mother and aunts slathered it all over my back, thinking it would cure "the itchies." I was probably riddled with lice or poison ivy, but whatever it was, they prescribed marinara. At least the trauma of that experience made me forget about the itchies.

There are a lot of meatballs out there, folks, and I'm sure you have tasted your fair share, but I believe these are the best meatballs in the world. I can't, to this day, pinpoint what it is that makes them so phenomenal; I think it is largely the fact that you mix and roll them by hand. They are not dense like many meatballs, but they also don't fall apart in tomato sauce. It's not just my bias speaking here; everyone loves them. People who hate pork love them; people who never go near veal can't get enough. Vegetarians make exceptions for them. I encourage you to make these meatballs your own. Homemade Italian Meatballs image

Italian meatballs (AKA the best Italian meatball recipe on the internet) is a crowd-pleasing childhood favorite of mine. They're simply made with ground beef, breadcrumbs, parmesan, and your favorite marinara!

1 lb. ground beef, 80% lean/20% fat
1 large egg
1/2 cup Italian bread crumbs (option to sub gluten-free or whole wheat bread crumbs)
1/4 cup parmesan cheese (+ more for topping)
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
25 oz. marinara sauce (use our homemade marinara sauce!)
1/4 cup dry red wine
8 oz. spaghetti noodles (or any kind of noodle!)

Steps:

  • Place ground beef, egg, bread crumbs, parmesan cheese, salt, and pepper in a large bowl.
  • Then, use a large wooden spoon or your hands to thoroughly mix, combining all ingredients. I recommend using your hands as it's faster and easier.
  • Once combined, heat olive oil in a large skillet or cast iron over medium heat.
  • Use a standard-size cookie scoop to scoop meat into your hands. Then, form into a ball and place on the skillet. Repeat until there is no meat left. You should get around 16 medium-size meatballs.
  • Brown meatballs on all sides for around 8 minutes. Use a pair of tongs to flip each meatball, being careful not to burn the outsides.
  • Once all sides are brown, pour in marinara sauce and red wine. Toss so that the meatballs are covered in sauce.
  • Lower heat to low and cover. Let simmer for about 20 minutes, tossing every 5 minutes.
  • While the meatballs are simmering, prepare your spaghetti of choice by following the directions on your package.
  • Once your noodles are cooked, strain and serve with meatballs and sauce. Top with a generous amount of parmesan cheese and fresh ground pepper.

1 6 oz. can tomato paste
½ cup red wine
3 cups water

1 bay leaf
4 tablespoons sugar (sugar sweetens the acid in the tomatoes)
1 teaspoon salt

1 tsp garlic powder

Steps:

  • Begin by dicing the onion and mince the garlic.
  • In a large heavy bottom pan over medium heat, sauté the onion and garlic in 2 tablespoons good olive oil.
  • When it's lightly browned - about five minutes - add the tomato paste and 3 cups water. Increase the heat to high. Stir together well, bring to a boil then reduce to medium low.
  • Simmer for twenty minutes on medium low heat, stirring frequently. This makes a rich base and concentrates the onion/garlic flavors.
  • Next add the remaining ingredients; 1 can of crushed tomatoes, the fresh or dried basil, bay leaf, sugar, salt, pepper, chili powder, red wine & garlic powder.
  • Continue to cook, stirring occasionally until well blended. Simmer on the stove for 1 1/2 hours. Adjust seasonings to your taste.

2 large Spanish onions, cut into 1/4-inch dice

1 large onion, 1/4-inch dice
Salt
2 cloves garlic, smashed and chopped

Steps:

  • For the marinara sauce: Coat a large saucepot with olive oil and add the pancetta. Bring the pot to a medium-high heat and cook the pancetta for 4 to 5 minutes. Add the onions, season generously with salt and stir to coat with olive oil. Cook the onions for 6 to 7 minutes, stirring frequently. The onions should become very soft and aromatic but have no color. Add the garlic and crushed red pepper and cook for another 2 to 3 minutes, stirring frequently.
  • Pulse to combine the tomatoes in a food processor. Add the tomatoes to the pot and rinse out 1 of the empty tomato cans with water and add that water to the pot (about 2 to 3 cups). Season generously with salt and TASTE IT!!!! Tomatoes take a lot of salt. Season in baby steps and taste every step of the way. Cook the sauce for 2 to 3 hours, stirring occasionally and tasting frequently.
  • Use the sauce right away on pasta or for any other tomato sauce need. This sauce can also be cooled and stored in the refrigerator for a few days and freezes really well.
  • For the meatballs: Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Season the onions generously with salt and cook for about 5 to 7 minutes. The onions should be very soft and aromatic but have no color. Add the garlic and the crushed red pepper and saute for another 1 to 2 minutes. Turn off heat and allow to cool.
  • In a large bowl combine the meats, eggs, Parmigiano, parsley and breadcrumbs. It works well to squish the mixture with your hands. Add the onion mixture and season generously with salt and squish some more. Add 1/2 cup water and do 1 final really good squish. The mixture should be quite wet. Test the seasoning of the mix by making a mini hamburger size patty and cooking it. The mixture should taste really good! If it doesn't it is probably missing salt. Add more. Add more anyway.
  • Preheat the oven to 500 degrees F.
  • Shape the meat into desired size. Some people like 'em big and some people like 'em small. I prefer meatballs slightly larger than a golf ball. Place them on a cookie sheet and bake them for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to your big pot of marinara sauce. If not using right away, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot! Top with fresh ricotta cheese, garnish with chopped pickles and chives and serve with grilled garlic bread. YUM!

1 tablespoon olive oil
1 cup finely chopped onion
6 cloves garlic, minced
2 28 ounce cans San Marzano tomatoes, undrained and snipped*
2 28 ounce cans crushed tomatoes
2 teaspoon sugar (optional)
1 tablespoon dried Italian seasoning, crushed
1 teaspoon salt
0.5 teaspoon black pepper

Steps:

  • In an 8-qt. Dutch oven heat oil over medium. Add onion and garlic; cook 3 to 5 minutes or until onion is tender, stirring occasionally. Stir in remaining ingredients.
  • Bring to boiling; reduce heat. Simmer, uncovered, 30 minutes or until slightly thickened, stirring occasionally.
  • To serve, serve 1/2 cup sauce over every 1 to 2 cups hot cooked pasta.
