MOM'S SIMPLE GOULASH

Mom's Simple Goulash image

I actually think my mom got this from an aunt of mine...so simple and you can add anything! We added a couple of things to the original...

Provided by TaraAnn66

Categories     Stew

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb lean hamburger
1 medium green pepper, chopped
1 sweet onion, chopped
1 1/2 cups elbow macaroni, cooked (or any other type of small pasta)
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can sliced mushrooms
italian seasoning (to taste)
ground black pepper (to taste)
salt (to taste) or garlic salt (to taste)

Steps:

  • Fry hamburger, pepper, and onion in large skillet.
  • Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
  • Add remaining ingredients and heat well.
  • Add macaroni and heat through.

2 c beef broth

Stir to combine, cover and cook till noodles are tender, about 7-8 minutes. Turn off the heat, uncover and top with the cheese. Cover back up and let it sit till the cheese is nice and melted.

MAMA'S BEST GOULASH

Mama's Best Goulash image

My family loves this goulash. It is a dish to feed a large group or two and freezes well. Always better the next day but we normally eat it 1st day too. I hope you enjoy it my way or with your own little twist.

MAMA'S GOULASH--MY WAY!

Mama's Goulash--My Way! image

My mother made this as long as I can remember in a pot on the stove. When Slow-Cookers came along, it adapted easily to that format, and my growing family loved it, too. It's easy and economical--always two pluses for any dish. When the kids like it, too, that makes it a Home Run Dinner. These days, I add some cayenne and...

Time 5h30m

Number Of Ingredients 15

1 lb ground beef or ground turkey
4 c tomato sauce
1 can(s) kidney beans, drained
1 can(s) garbanzo beans, drained
1 can(s) whole kernel corn, drained
1 lg. can(s) diced tomatoes, canned (approx. 28 0z.)
1 medium onion, chopped
1-2 clove garlic (minced--to hide it from the kids!)
1 c water chestnuts, diced or sliced (optional--these were not in mama's goulash!))
1 tsp salt
1/2 tsp black pepper
1/4-1/2 tsp cayenne pepper (optional)
1/2-1 tsp turmeric, ground (optional)
1 1/4 c dry shell macaroni (or whatever pasta you have on hand)
1-2 c hot tomato juice or hot water (if needed for consistency)

Steps:

  • 1. Brown ground meat with onion and garlic. Drain excess grease.
  • 2. Put all the ingredients except the meat and macaroni into the slow cooker and then stir the meat in (so it doesn't settle on the bottom). Cook on high for at least three hours (or on low for 6 to 8 hours) to allow the flavors to blend.
  • 3. A couple of hours before you want to eat stir in the dry macaroni. You CAN put it in at the beginning, but it will grow and grow, especially if you let it cook all day, so if that's your plan, start with really tiny pasta, like tiny elbow mac or stars. I sometimes just cook the pasta in a pan of water and stir it into the goulash 15 or 20 minutes before I serve it. That way, it's done perfectly--isn't mushy or "crunchy." Pasta can be very tricky in a slow-cooker.
  • 4. At this point, the goulash should be juicy--almost a soup, so if it starts to get too thick, add some hot water or hot tomato juice.
  • 5. None of these amounts or ingredients are critical. Use what you have or what your kids like. Use pinto beans if they don't like kidney beans or leave out the garlic. Leave out the cayenne and turmeric if your family doesn't like the little bit of "heat" they add.
  • 6. MY MOTHER'S METHOD (great for throwing together when you get home from work) was to cook the macaroni al dente, brown the meat, then put it all in a kettle on the stove and let it simmer for a couple of hours until dinnertime. The taste isn't quite as mellow, but it's still awfully good, and doesn't require as much advance planning! :D

This is one of my favorite comfort meals when growing up. I still love it today. I made a pot for my folks last night, as they love it even better the next day...They'll be so be happy when I surprise them today. Enjoy!

Time 55m

Number Of Ingredients 10

1 - 2 Tbsp oil
1 large each ~ onion, chopped & large green pepper, chopped
3 large cloves, garlic ~ minced
2 lb ground beef cooked & drained ~ sometimes she would split it up and use some italian sausage too
1 - 32 oz beef broth
30 oz each - chopped tomatoes & tomato sauce
1 tsp each - garlic salt, chili powder, garlic powder, salt & pepper - or to taste
1 Tbsp each - italian seasoning, worcestershire sauce & sugar
1 - 1 1/4 lb ( about 2 1/2 cups ) - elbow macaroni
condiments such as cheese & garlic bread

Steps:

  • 1. In a dutch oven, add some oil and brown the peppers and onions until tender. Add the garlic and cook another minute. Crumble the ground beef and cook until no longer pink. Drain and return to pot. Stir in the tomatoes, sauce, seasonings, broth & Worcestershire sauce. Stir well and bring to a boil. Reduce heat to simmer & stir in the macaroni and cover pot. Continue simmering for about 30 minutes.
  • 2. Remove from heat and let sit for 15 - 20 minutes. Add more seasoning if necessary. If becomes too thick, add more sauce or tomato juice. Serve with cheese and garlic bread. ***This recipe can easily be halved.
