3 1/4 cups flour

Steps:

  • cream butter and sugar. add eggs, vanilla and flour. work until smooth. put mix in a cookie tube dispenser. squeeze out any shape you like onto greased cookie sheet. bake at 325 til golden brown.

MAMA'S LEMON CUSTARD DELIGHT

This amazing dessert is so rich and sweet that you can practically taste the love that's been handed down through the generations. One bite of this custard and all will be right with your world... it's THAT good.

5 can(s) sweet condensed milk
10 egg yolks
2 c pure lemon juice
1 Tbsp pure vanilla flavoring
2 box real vanilla wafers
1/2 stick pure butter

Steps:

  • 1. CRUST: Finely crush 1/2 box of vanilla wafers. Then coarsely chop the remaining 1/2 of the box of vanilla wafers.
  • 2. In a small saucepan on low heat, melt 1/2 stick of pure butter.
  • 3. Using a mixing bowl, mix the crushed wafers and butter together, then spread evenly over the bottom of a 13x9 glass pan.
  • 4. Place in refrigerator for 15-30 min. to allow the crust to set.
  • 5. FILLING: Open all 5 cans of the sweet condensed milk. Pour all the milk in a large mixing bowl.
  • 6. Add the vanilla flavoring. Gradually stir in the lemon juice until completely blended (you may not use all of it).
  • 7. Separate the egg yolks from the egg whites.
  • 8. Stir in the egg yolks. The mixture should be slightly stiffening up by now.
  • 9. Once the filling is complete, line the sides of the glass pan with whole vanilla wafers.
  • 10. Now pour in the lemon filling in the pan.
  • 11. Once the pan is full with the lemon filling, crush a few vanilla wafers on top of the lemon custard for decoration.
  • 12. Cover with SaranWrap to prevent a film from developing while chilling in the fridge.
  • 13. Place the lemon custard dessert in the refrigerator for 4-6 hours or until set. Enjoy!

CHOCOLATE CARAMEL WAFERS

This came from a bonus section from Taste of Home magazine. They can be made into a modified turtle cookie, if you add the optional pecans.

1 (14 ounce) package caramels
1/4 cup evaporated milk
1 (12 ounce) box vanilla wafers
8 (1 5/8 ounce) chocolate candy bars
1 cup chopped pecans (optional)

Steps:

  • Preheat oven to 225 degrees.
  • Place unwrapped caramels and milk in a microwave-safe bowl; microwave, uncovered, on high for 3 minutes or until melted. Stir until smooth.
  • Place vanilla wafers on ungreased cookie sheets.
  • Spread caramel mixture over vanilla wafers.
  • Top each wafer with a square of chocolate bar.
  • Place in 225 degree oven for 1-2 minutes or until chocolate melts.
  • Remove from oven and spread chocolate with an icing knife.
  • Top with pecans if desired.

These are crisp and puffy sandwich cookies. The filling can be colored to match any occasion.

1 cup butter, softened
⅓ cup heavy whipping cream
2 cups sifted all-purpose flour
⅓ cup granulated sugar for decoration
¼ cup butter, softened
¾ cup sifted confectioners' sugar
1 egg yolk
1 teaspoon vanilla extract
2 drops red food coloring

Steps:

  • Combine the 1 cup butter, cream and sifted flour. Mix well and chill for at least 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • On a floured board, roll out 1/3 of the dough to 1/8 inch thick. Cut with 1 1/2 inch round cookie cutter. Transfer rounds to waxed paper heavily covered with white sugar. Turn rounds so that both sides are coated with sugar. Place rounds on ungreased baking sheets and prick each round with a fork about 4 times. Repeat with remaining dough.
  • Bake at 375 degrees F (190 degrees C) for 7 to 9 minutes. Let cookies cool then put 2 cookies together with the filling.
  • To Make Filling: Blend the remaining 1/4 cup of butter, the confectioners' sugar, egg yolk and vanilla together. Tint with food coloring, if desired. You may double the filling for a nicer looking cookie.

1/4 lb unsalted margarine, at room temperature
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon grated orange zest
1/4 teaspoon grated lemon, zest of
3/4 cup sifted cake flour

Steps:

  • Preheat the oven to 375 degrees F.
  • Line 2 large baking sheets with parchment paper.
  • Cream the margarine together with the sugar on low speed until fluffy.
  • Beat in the egg and vanilla until incorporated.
  • Stir in the zests.
  • Still on low speed, beat in the flour until fully blended.
  • By teaspoonfuls, drop the batter onto the baking sheets, leaving a good two inches between each cookie.
  • Bake for about 7 minutes, or until the wafers are lightly browned along the edges.
  • Transfer to a cooling rack where they will crisp as they cool.
  • Store carefully in layers in an airtight container.

mama never bought bread. she baked bread 3 times a week until she paissed away at the age of 96. this was her famous coffee bread recipe.she handed it down to me. i treasure it as i treasured her. i buy the already shelled cardamom seeds (not ground) and whisk them through a coffee bean grinder to crush them up. great sliced, toasted and buttered.

4 cups milk
1/2 lb butter
2 1/2 cups white sugar
6 beaten eggs
2 teaspoons salt
1 tablespoon cardamom seed, crushed
5 lbs unbleached flour
3 (1/4 ounce) packages yeast, 3-4 pkg, in
1/2 cup warm water, with
1 pinch sugar
1 egg, with
sugar, small amount, for glaze

Steps:

  • dissolve yeast in warm -not too hot- water with a small amount of sugar to feed the yeast. in a large pot,heat milk and butter until boiling. remove from heat and cool until lukewarm. beat eggs and sugar together. add salt, cardamom, flour and yeast mixture. kmead well on a floured surface. cover and let rise til double. separate dough into halves and then separate each half into 3 loaves.(6 loaves total) separate each loaf into 3 sections. roll each section between your hands into long tubular shapes. braid the 3 sections together and tuck ends. put loaves on a greased cookie sheet. let rise double again. bake at 325 for 15 minutes. remove from oven. brush top of loaves with a beaten egg mixed with a little sugar. sprinkle sugar over egg glaze. return to oven for 15 minutes more.

FILLING:
1/4 cup butter, softened
3/4 cup confectioners' sugar

1-1/2 to 2 teaspoons heavy whipping cream
1 drop each red and green food coloring

Steps:

  • In a small bowl, beat butter, flour and cream. Cover and refrigerate 1 hour or until easy to handle. , Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 1-1/4-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Sprinkle with sugar. Prick each cookie 3-4 times with a fork. , Bake 7-9 minutes or until set. Remove to wire racks to cool., In a small bowl, combine butter, confectioners' sugar, vanilla and enough cream to achieve desired consistency. Remove half to another bowl; tint one portion of filling with red food coloring and the other half with green. Carefully spread filling on bottom of half of the cookies; top with remaining cookies.
