CAJUN BAKED FRENCH FRIES

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Mix olive oil, garlic powder, onion powder, chili powder, Cajun seasoning, and sea salt in a large resealable bag. Add potatoes and toss to evenly coat with seasoned oil. Spread coated potatoes in 1 layer onto a baking sheet.
- Bake in the preheated oven for 35 minutes. Stir potatoes with a spatula and continue cooking until crisp, about 10 more minutes.

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

- Place potato matchsticks in large bowl and cover with water. Soak for at least 2 hours up to overnight in the refrigerator. This draws out the excess starch in the potatoes to make them crispier.
- Preheat oven to 450ºF. Drain the potatoes, rinse, and lay out on lint free absorbent towels, such as flour sack towels. Blot dry as much as possible.
- Spray baking sheets with cooking spray. Divide the potatoes between the baking sheets. Divide and drizzle olive oil over the top of the potatoes. Toss to coat evenly with oil. Spread potatoes on pan so they aren't clumped together. The more space they have, the crisper they will get.
- Bake for 20-25 minutes, rotating pans 1/2 through. Remove pans to flip fries. If fries do not release easily, put back in oven and bake until crisp on bottom and freely releases from pan.After fries are flipped, bake for 5-10 minutes more, or until browned and crisp. Season with salt.

CRISPY BAKED GARLIC MATCHSTICK FRIES
Steps:
- Preheat oven to 450 degrees (232 C).
- Chop potatoes into matchsticks by halving, halving once more, then cutting into wedges and then strips.
- Line two baking sheets with foil or parchment paper (ensure the type you're using is safe up to 450 F / 232 C) and generously spray with nonstick spray.
- Add fries plus a generous drizzle of oil and sea salt, pepper, and garlic powder. Toss to coat.
- Arrange fries a single layer making sure they aren't touching too much. This will help them crisp up and cook evenly.
- Bake for 25-35 minutes, tossing/flipping at least once to ensure even baking.
- In the last 10 minutes of cooking, heat a small saucepan over medium heat and add 1-2 Tbsp olive oil (amount as original recipe is written // adjust if altering batch size) and the minced garlic. Sauté, stirring frequently, until just slightly brown to wake up the flavor.
- Remove from heat and set aside.
- When the fries are finished, remove from oven, sprinkle again with sea salt, and spoon the warm garlic on top. Toss to coat and serve immediately as is or with Whiskey BBQ Ketchup.
- You can also add more flavor by tossing the fries once more with the rosemary.

- Preheat the oven to 400 degrees F. Coat a large, rimmed baking sheet with cooking spray.
- In a large bowl, combine the potatoes and olive oil and toss to coat. In a medium bowl, mix together the Parmesan, parsley, salt, pepper, garlic powder and cayenne until fully combined.
- Sprinkle the parsley mixture on the potatoes and gently toss to evenly coat. Transfer to the prepared baking sheet and bake the potatoes, flipping them with a spatula every 10 minutes to prevent sticking, until golden brown, about 45 minutes. Season with salt and pepper to taste. Serve hot.
