SWEET AND SOUR HAM

Sweet and Sour Ham image

I CAME UP with this recipe several summers ago. I had a ham in the refrigerator and was trying to avoid heating up the kitchen by preparing it in the oven. The stovetop was the solution. Ever since, this recipe has been my standby for when I have leftover ham. Served over rice, it's delicious! -Diane Widmer Blue Island, Illinois

HAWAIIAN STYLE PINEAPPLE-GUAVA GLAZED HAM

HAWAIIAN STYLE PINEAPPLE-GUAVA GLAZED HAM image

This recipe for our Holiday Ham is made every year at either Thanksgiving or Christmas. The original recipe is my mom's, but this recipe here has a little twists and tweaks that I've made. It's sooooo delicious! The photo is not mine, but will soon be replaced with one of my own.

Provided by Jo Anne Sugimoto

Categories     Pork

Number Of Ingredients 20

HAM:
1 can(s) ham (5 lb.) or a smoked ham
whole cloves
5 Tbsp yellow mustard
1 c brown sugar
1 can(s) pineapple rings
toothpicks
maraschino cherries
GLAZE:
1 c guava jelly
2 Tbsp dark brown sugar
1 Tbsp dijon mustard
1/4 c white wine
1/2 c pineapple juice
1/4 c ketchup
1/4 tsp ground cloves
SAUCE:
1 c ham glaze that was set aside
1 can(s) cherry pie filling, (21 oz.)
1/2 c raisins (opt.)

Steps:

  • 1. Place the ham and the drippings in a deep dish roasting pan.
  • 2. Score the top of the ham, diagonal cuts about 1/4 inch deep and an inch apart. In each diagonal point (like a grid), push a whole clove in each point of the ham. Poke whole cloves around the sides of the ham.
  • 3. Spread the yellow mustard onto the top of the ham and the cloves.
  • 4. Pack the brown sugar on the top of the ham, making a slight mound.
  • 5. Arrange the pineapple rings on top of the brown sugar, over lapping them for a nice arrangement. Pour the pineapple juice into the roasting pan. Toothpick a maraschino cherry into the center of each pineapple ring to hold it there during the baking process.
  • 6. Bake the ham at 275 degrees for 2 hours, tenting the ham with foil during the last 30 minutes of baking.
  • 7. GLAZE:
  • 8. Combine all the ingredients and cook over medium-low heat till well incorporated.
  • 9. Set aside a cup of the cooked glaze mixture for the sauce.
  • 10. Pour the remaining glaze over the ham during the last 1/2 an hour of baking.
  • 11. SAUCE:
  • 12. Combine the juices in the roasting pan with the ham glaze, cherry pie filling and raisins (opt.), in a saucepan and warm it over low heat. Remove from heat.
  • 13. Slice the ham, use the pineapple rings and arrange it on a serving platter. Pour the hot sauce over the ham slices or serve it on the side.

Make and share this Mama Vi's Version of Sweet and Sour Hawaiian-Style Ham recipe from Food.com.

Provided by Tiomarrano

Categories     One Dish Meal

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 14

3 cups cooked ham
1 large onion, diced
1 medium green bell pepper, rough cut
1 cup pineapple chunk (in unsweetened natural juice)
2 teaspoons dry mustard
1/2 cup brown sugar
1 cup white sugar
1/3 cup vinegar (or to taste)
1 cup retained pineapple juice, from canned pineapple in natural juice
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
3 tablespoons cornstarch
2 tablespoons margarine
1 cup almonds (slivered and browned in butter or 1 cup cashews)

Steps:

  • Note: If you are going to use the slivered almond topping instead of the cashews (one of two optional toppings for this dish) then do this step first. Roast slivered almonds in a little butter in a hot skillet until browned. Remove from skillet and set aside.
  • Note: If you use pineapple that is in light syrup, then reduce the amount of white sugar by 1/2 cup. The recipe is for unsweetened pineapple in its natural juice. But some pineapple comes in light syrup. Just reduce the sugar amount in the recipe to compensate for the syrup.
  • Premeasure all the parts of the sweet sour sauce (the pineapple juice, the white sugar, the vinegar, brown sugar, dry mustard, Worcestershire sauce and soy sauce, and mix together in a large measuring cup or suitable bowl or dish Do not cook yet. Set aside mixture.
  • (At this point you can make the rice and set it to cooking over a back burner, as rice takes about 30 minutes or more to get done).
  • To assemble recipe: In a large skillet with margarine, sauté the ham, the onion and green pepper for about 3 to 5 minutes, until veggies are only part way cooked and still a little crunchy.
  • Add the pineapple chunks to the sautéeing ham, onion and bell pepper mixture and reheat, stirring pineapple in until mixed uniformly.
  • When the ham/veggie/pineapple mixture gets up to heated stage again, let it all sauté for about a minute or two.
  • Now add these previously combined sauce ingredients (both kinds of sugar, the vinegar, soy sauce, Worcestershire sauce and pineapple juice) to the sautéeing ham and veggie mixture.
  • Bring the resulting ham/veggie/pineapple mixture and sauce back up to the boiling point, covering the skillet and letting it all heat back up until it begins a gentle boil on medium high heat. Keep checking and stirring occasionally to prevent sticking.
  • In the meantime, while ham/pineapple mixture is heating up, mix the cornstarch into approx 1/2 cup very COLD water. Stir cornstarch until it thoroughly dissolves.
  • Now, when the sweet and sour ham and liquid sauce just reach boiling point, stir in the dissolved corn starch, all around, right into boiling sauce, stirring to spread the corn starch throughout the sauce using the flat side of a spatula in circular motions along the bottom of the pan in order to evenly it into every corner of the sauce.
  • Once the sauce thickens, lower heat to simmer while continuing to stir until the sauce is uniformly thickened.
  • After you reduce heat to simmer, cover the finished sweet/sour ham and leave on low simmer or warm setting until ready to serve. Check occasionally and stir to prevent sticking while waiting to serve.
  • In the meantime fluff finished rice.
  • Serve hot Hawaiian-style sweet/sour ham over the hot rice. Garnish each serving individually at table with as desired with either the toasted buttered almond slivers or with roasted cashews from a can of cashews.

HAWAIIAN SWEET AND SOUR CHICKEN

Hawaiian Sweet and Sour Chicken image

I've been making this for years - I even used to make it for the kids I babysat back in the 70's. It's not like Chinese sweet and sour - it's a brown sweet and sour sauce.

Provided by Buzymomof3

Categories     Chicken

Time 1h

Yield 6 serving(s)

Number Of Ingredients 14

3 lbs chicken, cubed
1 egg, for coating
2 tablespoons flour, for coating
1/2 teaspoon salt, for coating
1/8 teaspoon pepper, for coating
1/2 cup oil or 1/2 cup shortening, for frying
1 green pepper, boiled and cubed
1 bouillon cube dissolved in 1 cup hot water, for sauce
1 (20 ounce) can pineapple chunks in juice, for sauce
2 1/2 teaspoons cornstarch, for sauce
2 1/2 teaspoons soy sauce, for sauce
1/2 cup sugar, for sauce
1/3 cup vinegar, for sauce
white rice, cooked

Steps:

  • Whisk egg in small bowl. Mix flour, salt, and pepper in another small bowl.
  • Dip cubed chicken in egg, then in flour/salt/pepper mixture to coat - Put in pan with preheated oil and fry in batches.
  • While chicken is cooking cube the green pepper and boil till tender. Drain and set aside.
  • Once chicken is done, make sauce:.
  • In a medium saucepan put one cup of water and dissolve 1 bullion cube into it (or use 1 cup of chicken stock - either works). Add the juice from the can of pineapples, the soy sauce and the sugar. Mix the cornstarch into the vinegar before adding it to the sauce - it makes it easier to blend. Heat the sauce till thick and glossy. You will have to stir it often, especially when it starts to thicken.
  • Put the chicken, drained pineapples and peppers into a bowl - add the sauce and mix.
  • Serve over hot rice.
