ROBIN'S EASY GOODNESS COFFEE CAKE
This is one of my favorite recipes to make for breakfast, brunch, or anytime. Very easy, simple ingredients, and one that my kids (all grown now) ask for whenever they come home to visit. Hope you enjoy it as well!

Steps:
- 1. Combine salad oil, egg, and milk. Stir together dry ingredients (flour, sugar, baking powder, salt) and add to milk mixture - blend well.
- 2. Pour/scrape into a well greased 9 X 9 X 2 baking dish (brownie pan). Sprinkle cinnamon over top of batter (completely covering). Sprinkle brown sugar evenly over the top of the cinnamon, then chunk the butter evenly over the top (dot it randomly).
- 3. Bake in a preheated 375 degree oven for about 25 minutes, or until golden brown on top. Serve hot or cold.
- 4. Double the recipe for a 9 X 13 cake/casserole pan.
MAMA ROBIN'S COFFEE CAKE
I've been making this coffee cake for years and it's still my favorite one of all. It takes a little time to make, but well worth the effort. Just perfect for a Sunday morning with a nice hot cup-o-joe!

- 1. Preheat oven to 375. Lightly grease 8x8x2 square or 9x1-1/2" round cake pan.
- 2. Prepare strusel mixture by combining ingredients in a small bowl and mixing with a fork until crumbly.
- 3. Batter: beat egg with mixer until frothy. Add sugar & butter and beat until blended. Add milk & vanilla. Stir in flour, baking powder & salt and mix thouroughly.
- 4. Spoon 1/2 batter into prepared pan. Sprinkle 1/2 of the strusel mixture evenly over batter. Spread remaining batter on top and sprinkle remaining strusel mixture over batter again.
- 5. Put pan on center rack in over and bake 25-30 min. or until toothpick inserted in center comes out clean.
- 6. When done, cool on wire rack for 15-20 min. Cut warm coffee cake into squares or wedges and serve immediately.
MOM'S SOUR CREAM COFFEE CAKE
I learned the hard way that this recipe is very forgiving. I misread the directions and added a whole 16oz. container of sour cream. But it still came out fantastic! - 1. Preheat oven to 350 degrees. Cream butter, and sugar in a large bowl. Add eggs, sour cream and vanilla, beating on medium speed until well blended.
- 2. In another bowl, mix flour, baking powder, baking soda and salt together. Add gradually to creamed mixture, beating after each addition.
- 3. Have walnuts, sugar and cinnamon mixed together. Butter a 9-inch spring form pan. Put 1/2 the batter into pan and sprinkle 1/2 the cinnamon mixture over batter. Add remaining batter and sprinkle with the rest of the cinnamon mixture. **batter will be thick, so I dollop it over the cinnamon layer of cake, and gently blend it together with the back of a spoon, then sprinkle cinnamon over top of cake.
- 4. Bake for 45-60 minutes, or until a toothpick comes out clean.
OLD FASHIONED COFFEE CAKE WITH CINNAMON-STREUSEL TOPPING
Reminiscent of a pound cake, this deliciously moist and buttery coffee cake is anything but dry! - Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish; set aside.
- Prepare cinnamon layer by stirring brown sugar, flour, and cinnamon together in a small bowl until well combined; set aside.
- Prepare streusel topping by combining brown sugar, flour, cinnamon, and salt in a small bowl. Add butter and stir with a fork until mixture is crumbly; set aside.
- Prepare cake by whisking together flour, baking powder, and salt in a medium bowl.
- Beat sugar and butter in a stand mixer fitted with the paddle attachment on medium speed until fluffy, about 3 minutes. Scrape the sides of the bowl, then turn the mixer on low speed and beat in eggs until well blended. Gradually mix in flour mixture and milk. Add sour cream and vanilla and beat for 30 seconds.
- Pour 1/2 of the batter into the prepared baking dish. Sprinkle the cinnamon layer over the batter, then pour the remaining batter over top. Spread streusel topping evenly over the cake, pressing very lightly so it adheres to the batter.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Remove from the oven and let cool completely before serving, about 30 minutes.

MOM'S DIVINE COFFEE CAKE
I got this recipe from mom, who got it out of an old cookbook, and decided to rename it "Mom's coffee cake" . In fact, she renamed everything "moms" if it was good! Anyways, it is a great basic coffee cake, and can be made with or without the nuts. Impress your work friends, church group, or house guests. It is yummy, and tastes better the next day.

- COMBINE nuts with the 1/4 cup sugar and cinnamon; set aside.
- BLEND together flour, baking powder & soda; set aside. Cream butter with the 1 cup sugar until light and fluffy. Add eggs and vanilla; beat well. Add dry ingredients and sour cream; beat until well blended (do not overbeat).
- POUR half batter into greased and lightly floured 9 inch square pan;
- Top with half of cinnamon-nut mixture. Cover with remaining batter; top with last of cinnamon-nut mixture.
- Bake at 375° for 30 minutes or until golden brown.
