MAMA'S BUTTERMILK COCONUT PIE
My mama showed me how to make this pie about 40 years ago, just as her mama showed her how to make it. I was 6 when Mawmaw passed away, but I can still remember her cooking in the kitchen in her beautiful cotton dresses dusted with flour. Steps:
- Preheat oven to 325°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Place pie plate on a rimmed baking sheet., In a large bowl, beat sugar, eggs, buttermilk, melted butter, flour, vanilla and salt until blended. Stir in coconut. Pour into crust. Bake until light golden brown and center is almost set, 50-60 minutes. Cool on a wire rack; serve or refrigerate within 2 hours.

Steps:
- Preheat oven to 425°F and adjust oven rack to lowest position. Roll pie crust and fit into a 9 inch pie plate. Refrigerate and chill for 15 minutes.
- Line the bottom of the crust with foil or parchment paper. Place pie weights or dried beans on top of liner. Bake on the bottom rack for 5 minutes. Lower the temperature to 325°F and bake 4 minutes longer. Remove the liner and weights and bake 3-4 minutes longer. Remove from oven and set aside to cool.
- In a large bowl whisk together sugar, cocoa powder, cornmeal, flour, and salt. Add softened butter, eggs, evaporated milk, and vanilla extract to the bowl. Use a mixer to beat until well combined.
- Pour filling into prebaked pie crust and bake at 325°F on the lowest rack for 55-60 minutes. The top layer should be set and underneath will have a slight jiggle, but not a liquidy one. Insert a toothpick to make sure it isn't liquidy. Place on a wire rack to cool 1-2 hours before slicing and serving. Either serve at room temperature or chill.

MAMA PAT'S CHOCOLATE BROWNIE PIE
Steps:
- Preheat the oven to 375 degrees F. Line the piecrust shell with parchment paper, and fill it with pie weights, dried beans, or uncooked rice. Bake for 15 minutes. Remove the pie weights and parchment paper. Return the pie crust to the oven, and bake until lightly browned, about 5 minutes more. Remove to a wire rack, and cool for 30 minutes.
- Meanwhile, let the prepared ganache stand at room temperature 30 minutes.
- Sprinkle the brownie cubes on the bottom of the pie crust; top with the caramel sauce, drizzling it evenly. Beat the ganache, heavy cream, and espresso with an electric mixer on medium-high speed until fluffy. Using a spatula, spread the ganache mixture evenly over the top of the pie.
- Chill the pie, uncovered, for 2 hours. Dust with the confectioners' sugar just before serving.
- Put the chocolate chips in a heatproof mixing bowl. Stir together the cream, corn syrup, vanilla, and salt in a small saucepan; bring to a boil over medium-high. Pour the hot cream mixture over the chocolate chips, making sure all the chips are submerged. (Do not stir or touch the chocolate mixture.) Cover the bowl with plastic wrap, and let it stand for 5 minutes.
- Using a spatula and starting from the bottom of the bowl, gently move the mixture from side to side to begin combining the chocolate with the cream mixture. Gradually and slowly stir from the middle until smooth and blended, 2 to 3 minutes.
MAMA BROWN'S CHOCOLATE PIE
This is a recipe my MIL always made especially for my DS. She mostly made blackberry pies because she knew how we loved them. After she made this, my 3 yr. old always ask for brownberry pie. I thought this would be good for anyone who couldn't have milk.

Steps:
- Mix sugar, cocoa & flour in saucepan.
- Beat egg yolks & add water.
- Add to saucepan. Cook over med. heat til boiling, reduce heat, continue to cook, stirring constantly til thickened.
- Remove from heat & pour into baked pie crust. Use egg whites for meringue.
- Meringue.
- 4 egg whites.
- 5-6 tab sugar.
- ½ tsp cream of tartar.
- Beat egg whites, as they start to thicken, gradually add sugar & cream of tartar. Beat til peaks form.
- Pour on pie & bake 10-12 min or until turning brown at 350º.

- Cut 1 stick butter into flour and salt. Slowly add ice water. Knead dough and roll out on dough board, or press into bottom and sides of a 9-inch pie plate.
- Filling:
- Preheat oven to 350 °F. Cream 2 sticks butter and sugar; add egg yolks, vanilla and cream. Gently blend in cornmeal. Pour into chess pie pastry. Bake until light brown on top, about 35 to 45 minutes.
