MALVA PUDDING
This is a very popular pudding here in South Africa, very gooey and not for the calorie concious! My youngest son adores it so I make it at least once a week!

Steps:
- Preheat oven to 180c (350F degrees).
- In a bowl beat sugar, egg, butter, and jam until pale and fluffy.
- Sift flour, bicarb of soda and salt into a bowl.
- Mix milk, vinegar, and vanilla essence.
- Fold flour mixture and milk mixture alternatively into egg mixture.
- Pour into a buttered large baking dish; cover with foil, shiny side down.
- Bake for 45-50 minutes until firm, or until a skewer inserted in centre comes out clean.
- Remove foil 10 minutes before end of baking time to allow pudding to brown on top.
- For Sauce: Combine ingredients in a saucepan.
- Heat stirring, until butter melts and sugar is disolved.
- Pour over hot pudding.
- Serve with whipped cream.

MALVA PUDDING
From: Boschendal Wine Estate Restaurant, Cape Province, South Africa. It is actually a delicious cake but rich!! Very simple to make.

Steps:
- Beat the egg and sugar well in a mixer. Add the jam,
- Sift flour, bicarbonate of soda, baking powder and salt.
- Melt the butter add the vinegar and milk.
- Add liquids to egg mixture alternately with the flour. Beat well .
- Bake in a COVERED dish such as Corel at 350F for 45 minute to 1 hour. It is important to use a covered dish otherwise the sauce won't soak into cake.
- Melt together the ingredients for the sauce and pour over the pudding as it comes out of the oven.
- You will not beleive the taste! I never add whipping cream or Cool whip as it is quite rich the way it is.
- ENJOY!

- Pudding:.
- Preheat the oven to 180º Celsius/ 360ºF.
- Mix together the baking soda and half a cup of milk. Put aside.
- Grease an oven dish. I used a 20 x 30cm.
- Mix together the rest of the ingredients, remember you already used ½ a cup of milk.
- Add the baking soda mix.
- Pour mixture into dish, bake till golden brown.
- Before you pour the sauce over the pudding remember to press holes in the pudding with a fork, DO NOT let the pudding cool completely before you pour the sauce over, begin with the sauce a while before the pudding is ready.
- Sauce:.
- Mix everything together till it begins to boil.
- Pour over pudding.
- Let it stand for a while.
- Serve with custard or ice cream.

MALVA PUDDING

Steps:
- Preheat oven to 350.
- Whip together sugar and eggs until thick and lemon colored. Then add the apricot jelly and mix thoroughly.
- Sieve together the flour, soda and salt. Melt the butter and add the vinegar. Add this mix as well as milk to egg mix in the bowl, alternately with the flour and mix well.
- Pour into an oven proof dish and bake for 45-50 minutes.
- In a pot, melt together the ingredients for the sauce. When the cake is halfway baked, take it out of the oven. Make holes in the cake and pour the sauce over the pudding. Return the cake to oven and continue baking for the remaining time.

- Beat the eggs and sugar until light and creamy.
- Add the apricot jam to this mixture and beat inches
- Add the flour, bicarbonate soda and salt and beat.
- Melt the butter in the microwave and add the vinegar.
- Add to the egg mixture and while beating add the milk.
- (mixture is very runny).
- Pour into a dish 25cm x 30cm.
- Bake at 350 deg c for about 1 hour.
- While it is baking boil all the sauce ingredients for 10 minutes in the microwave on high stirring occasionally.
- When the cake is cooked stab all over with a skewer. Pour over the sauce and allow to soak inches Serve with either fresh cream or custard.

Steps:
- Preheat the oven to 180C/gas 4.
- Butter a baking dish thoroughly.
- To make the pudding; beat together the sugar and butter until smooth, light and fluffy, then add the egg and the jam beating until pale.
- Sift together the flour, salt and bicarbonate of soda
- Mix together the milk, vinegar and vanilla extract.
- Fold the dry ingredients into the egg mixture. Then add the milk mixture a little at a time and stir together.
- Pour into the buttered baking dish and cover lightly with buttered foil.
- Bake for approx 35-45 minutes until firm.
- To make the sauce; combine the evaporated milk, butter, demerara sugar and hot water in a pan. Heat, stirring continuously until the butter melts and the sugar has dissolved.
- To make the Amarula cream; lightly whisk the whipping cream and then add the Amarula cream liqueur.
- To serve; pour the sauce over the hot pudding and serve with the Amarula cream.
