BAKED RICE (ROSS FIL-FORN)
Ross fil-forn is a traditional Maltese dish. Serve it with Parmesan cheese and enjoy the Mediterranean flavors!

Steps:
- Heat the olive oil in a skillet over medium heat. Add the ground beef, and cook, stirring to crumble, until evenly browned. Mix in the crushed tomatoes, chicken stock, and bay leaves. Simmer for 25 minutes over low heat.
- Meanwhile, place the rice into a saucepan with enough water to cover by one inch. Bring to a boil, and cook for about 10 minutes (halfway), then drain off water.
- Preheat the oven to 400 degrees F (200 degrees C).
- Remove the bay leaves from the sauce, and mix in the half-cooked rice. Stir in the basil, mint, eggs, and mozzarella cheese; season with salt and pepper. Transfer to a greased baking dish. Sprinkle Parmesan cheese over the top.
- Bake for 40 minutes in the preheated oven, or until the rice is tender, and the liquid has been absorbed.

MALTESE BAKED RICE (BETTER THAN THE ORIGINAL!!)
This is a Maltese baked rice dish that my pop used to make when i was a little girl. Tastes great and everyone loves it!

Steps:
- Cook rice.
- Heat oil in a large fry pan.
- Add Corned Beef and break into small pieces.
- Cook the Corned Beef for approx 5 mins until it starts to turn into a paste.
- Add Tomato Paste and stir until mixed throughly.
- Simmer for 10 minutes.
- Stir in Sugar to minimise acidity.
- Once the rice is cooked through, place the rice and Corned Beef mixture together in a large baking dish.
- Separate egg white's and egg yolk.
- Throw away egg white's and whip egg yolk's until mixed.
- Pour egg yolk over the top and place into the oven at 180 degrees for 30-40mins or until top is golden brown.
- Serve and enjoy!
