1-3/4 cups butter, cubed
3 ounces bittersweet chocolate, chopped
1 cup malted milk powder
1 cup baking cocoa
1-1/2 cups sour cream
4 large eggs, room temperature
3-1/2 cups sugar
3-1/2 cups cake flour
2-1/2 teaspoons baking soda
1 teaspoon salt
FROSTING:
1 cup sugar
1/2 cup Irish cream liqueur
6 large egg yolks, beaten
1-1/2 teaspoons vanilla extract
1-1/2 cups butter, softened
1/2 cup malted milk powder
Chopped malted milk balls, optional

Steps:

  • Grease and flour three 9-in. round baking pans; set aside., In a large saucepan, combine beer, butter and chocolate. Cook and stir over medium-low heat until butter and chocolate are melted. Remove from heat; whisk in milk powder and cocoa. Transfer to a large bowl. Let stand 15 minutes. , Preheat oven to 350°. Add sour cream and eggs to chocolate mixture; beat until well blended. Combine sugar, flour, baking soda and salt; gradually beat into chocolate mixture until blended. Pour batter into prepared pans., Bake until a toothpick inserted in the center comes out clean, 32-36 minutes. Cool 10 minutes before removing from pans to wire racks to cool completely., In a large heavy saucepan, bring sugar and liqueur to a gentle boil over medium heat; cook until sugar is dissolved. Remove from heat. Add a small amount of hot mixture to egg yolks; return all to pan, stirring constantly. Cook until mixture thickens, about 2 minutes longer, stirring constantly. Remove from heat; stir in vanilla. Cool to room temperature., In a large bowl with a whisk attachment, cream butter until fluffy, about 5 minutes. Gradually beat in sugar mixture. Add milk powder; beat until fluffy, about 5 minutes. If necessary, refrigerate until frosting reaches spreading consistency., Place bottom cake layer on a serving plate; spread with 2/3 cup frosting. Repeat layers. Top with remaining cake layer. Spread remaining frosting over top and sides of cake. Refrigerate at least 1 hour before serving. If desired, top with chopped malted milk balls.

1 cup water
1/2 cup vegetable oil

3/4 cup chocolate malted milk powder
1 teaspoon vanilla
1 cup chocolate-covered malted milk balls, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan.) Spray 13x9-pan with baking spray with flour.
  • In large bowl, stir together cake mix and 3/4 cup malted milk powder. Beat in water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter into pan.
  • Bake 38 to 43 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In medium bowl, beat cream, 3/4 cup malted milk powder and the vanilla on low speed until blended, then on high speed until stiff peaks form. Spread over cake. Place malted milk balls in small resealable freezer plastic bag; seal bag and crush with rolling pin or meat mallet. Just before serving, top with chopped malted milk balls. Store covered in refrigerator.

30g malted chocolate drink powder
30g cocoa powder
225g butter, softened, plus extra for greasing
225g caster sugar
225g self-raising flour
1 tsp baking powder
4 free range eggs
3 tbsps malted chocolate drink powder
1½ tbsps hot milk
125g butter, softened
250g icing sugar, plus extra for dusting
50g dark chocolate (at least 50 per cent cocoa solids), melted
1 tbsp boiling water
About 20 Maltesers, to decorate

Steps:

  • Preheat the oven to 180°C/Fan 160°C/Gas 4. Grease 2x20cm round sandwich tins with butter and line the bases with baking paper.
  • Measure the malted chocolate drink powder and cocoa powder into a large bowl, pour over 2 tablespoons of water and mix to a paste. Add the remaining cake ingredients and beat until smooth.
  • Divide evenly between the prepared tins and bake in the oven for 20-25 minutes. Set aside in the tins to cool for 5 minutes, then turn out on to a wire rack to cool completely.
  • To make the icing, measure the malted chocolate drink powder into a bowl, add the hot milk and mix until smooth. Add the butter, icing sugar and melted chocolate and mix again until smooth, then add the boiling water to give a gloss to the icing.
  • Place one cake on a plate and spread over half the icing. Sandwich with the other cake and spread (or pipe) the remaining icing on top, using the tip of a rounded palette knife to create a swirled effect from the centre to the edge of the cake.
  • Arrange the Maltesers over the top and dust with icing sugar before serving.

3/4 cup unsweetened cocoa powder
1/4 cup malted milk powder
1 teaspoon kosher salt

1 large egg yolk
1 1/2 cups plus 2 tablespoons granulated sugar
1 cup buttermilk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
3/4 cup coffee, cooled, divided
2 tablespoons light brown sugar
Glaze:
3 ounces bittersweet chocolate, chopped
1/2 teaspoon vanilla extract
1/2 cup heavy cream
1/4 cup malted milk powder
1/4 teaspoon kosher salt
Chocolate pearls; coarsely chopped malt balls (for serving; optional)

Steps:

  • Cake:
  • Preheat oven to 350°F. Lightly coat a 9x5" loaf pan with nonstick spray, then line with parchment paper, leaving overhang on long sides. Whisk flour, cocoa powder, malted milk powder, salt, baking soda, and baking powder in a large bowl.
  • Whisk eggs, egg yolk, and 1 1/2 cups granulated sugar in a medium bowl just to blend. Add buttermilk, oil, vanilla extract, and 1/2 cup coffee, whisking just to blend. Gradually add buttermilk mixture to dry ingredients, stirring with a rubber spatula or a wooden spoon until just combined (batter will be a little lumpy; you don't want to overmix).
  • Scrape batter into prepared pan (hold back a little if using a slightly smaller loaf pan) and smooth surface. Bake until cake pulls away from sides of pan and a tester inserted into center comes out clean, 60-70 minutes.
  • Meanwhile, combine brown sugar, remaining 1/4 cup coffee, and remaining 2 tablespoons granulated sugar in a small bowl, stirring to dissolve sugar.
  • Transfer cake pan to a wire rack set inside a rimmed baking sheet and brush with coffee mixture (use all of it). Let cake cool completely in pan before turning out onto rack.
  • Glaze:
  • Place chocolate and vanilla in a medium bowl. Bring cream, malted milk powder, and salt to a bare simmer in a small saucepan. Pour over chocolate mixture and let sit 5 minutes.
  • Gently stir with a rubber spatula until chocolate is melted and mixture is combined. While still warm, pour glaze over turned-out cake on wire rack, letting it drip over the sides (any extra glaze will pool in baking sheet). Decorate with chocolate pearls and malt balls, if desired. Let cake sit until glaze is set, about 30 minutes.
  • Do ahead:
  • Cake can be baked and glazed 3 days ahead. Store tightly wrapped at room temperature.

Chocolate Malt Frosting
2 cup malted milk balls or miniature malted milk balls
2 cup whipping cream
0.333 cup malted milk powder
2 ounce milk chocolate pieces
1 cup sugar
0.25 cup water
0.333 cup vanilla malted milk powder
2 tablespoon milk
5 pasteurized whole eggs, whites only*
2 cup unsalted butter, softened

Steps:

  • Preheat oven to 350°F. Grease three 8x8x2-inch square or 9x1 1/2-inch round baking pans. Lightly dust each pan with 1 teaspoon of the cocoa powder; set pans aside. In a medium bowl stir together the remaining cocoa powder, the flour, baking powder, and baking soda; set aside.
  • In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar; beat until combined. Add eggs, one at a time, beating for 30 seconds after each addition. Beat in chocolate and vanilla. Alternately add flour mixture and milk to beaten mixture, beating on low speed until thoroughly combined. Divide batter among prepared pans, spreading evenly.
  • Bake for 17 to 20 minutes or until a wooden toothpick inserted near the centers comes out clean. Cool cakes in pans on wire racks for 10 minutes. Remove cakes from pans. Cool completely on wire racks.
  • To assemble cake, spread 3/4 cup of the Chocolate Malt Frosting on tops of two of the layers; stack on a serving plate. Add top layer; frost the top and sides of the cake, reserving some of the frosting for piping. Place the remaining frosting in a decorating bag fitted with a medium round tip. Starting from the bottom, pipe a zigzag pattern on sides and top edge of cake. If desired, coarsely chop or halve some of the malted milk balls. Decorate the cake with malted milk balls. Cover and chill until ready to serve. Cover and store any leftovers in the refrigerator. Chocolate Malt Frosting
  • In a medium saucepan heat cream over medium-high heat just until boiling. Remove from heat. Stir in malted milk powder. Add milk chocolate pieces (do not stir). Cover and let stand for 5 minutes. Stir until smooth. (Mixture will be thin.) Transfer to a large bowl. Cover and chill about 3 hours or until frosting is thoroughly chilled. Set the bowl of frosting in a larger bowl of ice water. Beat frosting with an electric mixer on medium speed about 3 minutes or until fluffy and of spreading consistency. (The frosting will turn light brown during beating.) Malted Buttercream Frosting
  • In a small saucepan combine sugar and water. Heat over medium-high heat just until boiling, stirring to dissolve sugar. Reduce heat, simmer, uncovered, 5 minutes or until just golden.
  • Meanwhile, combine malted milk powder and milk; set side.
  • In a large mixing bowl beat egg whites with an electric mixer on high speed until soft peak forms (tips curl); reduce speed to medium. Carefully pour the hot syrup down the side of the mixing bowl while beating (pour very slowly to avoid scrambling the egg whites). Once all the syrup is added, beat on high speed until meringue is cooled, about 15 minutes. Gradually beat in butter, a tablespoon at a time, until creamy and smooth (the mixture may appear curdled during beating, but will become creamy when all of the butter is added). Drizzle in malted milk mixture and beat until combined. Prepare cake as directed through Step 3. Place cake layers on baking sheets; freeze until firm. When firm, place cakes in large freezer bags; seal, label, and freeze for up to 3 months. To serve, thaw at room temperature for several hours. Assemble as directed in Step 4.

1 cup/ 250 ml whole milk
1/2 cup/ 125 ml vegetable oil
2 tsp vanilla
2 1/4 cups 510 g unsalted butter, room temperature
4 cups 500 g confectioners' sugar
1/2 cup chocolate Ovaltine or malted milk powder of your choice
1/3 cup 80 ml double cream/whipping cream
2 teaspoons pure vanilla extract
Pinch of salt
1/4 cup 60 ml creme fraiche or sour cream
9 ounces 265 g good quality milk chocolate
2 chocolate bunnies
lemon thyme leaves

Steps:

  • Preheat your oven to 350 F/180 C, butter and line 3 8"/20cm cake pans with parchment paper.
  • Mix together flour, sugar, cocoa, baking powder, baking soda and salt in a large bowl until combined. In a separate bowl mix eggs, milk, oil and vanilla essence. Add the wet ingredients to the dry ones and beat with an electric mixer until well incorporated.
  • Divide evenly among 3 pans and bake in the preheated oven for 25 minutes until a toothpick comes out clean. I baked 2 layers together and then the third one later.
  • Cool in the pans for 10 minutes, then remove cakes from the pans and cool completely on a wire rack.
  • Combine all ingredients except melted chocolate in a food processor and pulse until well combined. Take the lid off and check to make sure the ingredients on the bottom are well incorporated, use a spatula to mix them in if necessary.
  • Add melted chocolate and pulse a few more times until the frosting is creamy and spreadable.
  • Use immediately to fill the layers and cover the cake.
  • Decorate with a sprinkling of lemon thyme leaves for the "grass" and "ivy" on a side and place chocolate bunnies on top.

  • Preheat oven to 350°.

  • Prepare Frosting: In a large mixing bowl, combine cream cheese, 3 tablespoons butter, and vanilla; beat at medium-high speed for two minutes.
  • Gradually add powdered sugar, beating at low speed until smooth.

  • Add eggs, 1 at a time, beating well after each addition.

  • With the mixer on low speed, add the one-third of the flour mixture to the chocolate egg mixture, then add 1/3 cup of milk, add half of the remaining flour mixture and the remaining 1/3 cup of milk, then add the remaining flour mixture.
  • Pour batter into prepared pans. Sharply tap pans once on counter to remove air bubbles.
  • Bake at 350° for 25 minutes or until the top bounces back when lightly pressed.
  • Cool in pans 10 minutes on a wire rack; remove from pans. Remove wax paper. Cool completely on wire rack.
  • Place 1 cake layer on a plate; spread with 1/2 cup frosting; top with remaining cake layer. Spread remaining frosting over top and sides of cake.
  • Shave your chocolate for the nest, arrange in the center of cake leaving an indentation in center for the Whopper Robin Eggs. Place eggs in the center. (Alternatively, sprinkle the top of cake with chopped malted-milk balls.)
  • Chill 1 hour. Store cake loosely covered in refrigerator.

2/3 cup all-purpose flour
1/3 cup whole-wheat pastry flour
3/4 cup packed light brown sugar
1/4 cup Dutch processed cocoa powder, plus 2 tablespoons
2 teaspoons baking powder
1/2 teaspoon fine salt
1 cup chocolate malt powder, such as Ovaltine
1/2 cup low-fat (1 percent) milk
1 large egg white
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract
1 1/2 cups boiling water
Confectioners' sugar, for dusting, optional

Steps:

  • Preheat the oven to 350 degrees F. Coat a 2-quart baking dish with nonstick cooking spray.
  • Whisk together both flours, 1/2 cup of the brown sugar, 1/4 cup cocoa, baking powder, and salt in a large bowl. In a separate bowl whisk 1/2 cup of the malt powder with the milk, egg white, butter, and vanilla until the malt dissolves. Stir into the dry ingredients until only a few small lumps remain and spread the batter in the prepared baking dish.
  • Combine the remaining 1/4 cup of brown sugar with the remaining 2 tablespoons of cocoa and sprinkle over the batter. Stir the remaining 1/2 cup malt powder into the boiling water and pour it over the batter. Bake until the cake springs back when lightly touched and a toothpick inserted in the center comes out with a few moist crumbs, 30 to 35 minutes. Cool for 30 minutes on a wire rack. If desired, dust the top of the cake with confectioners' sugar and immediately spoon the warm cake and sauce onto plates or shallow bowls.

Gradually add buttermilk mixture to dry ingredients, stirring with a rubber spatula or a wooden spoon until just combined (batter will be a little lumpy; you don’t want to overmix).
  • Scrape batter into prepared pan and smooth surface. Bake until cake pulls away from sides of pan and a tester inserted into center comes out clean, 60–70 minutes.
  • Meanwhile, combine brown sugar, remaining ¼ cup coffee, and remaining 2 Tbsp. granulated sugar in a small bowl, stirring to dissolve sugar.
