MALTED MILK CHOCOLATE CHIP COOKIES

2 sticks unsalted butter, softened
3/4 cup golden brown sugar
3/4 cup granulated sugar
2 whole eggs
2 teaspoons vanilla extract
1/2 cup (rounded) malted milk powder
2 cups all-purpose flour
1 1/4 teaspoon baking soda
1 1/4 teaspoon salt
One 12-ounce bag milk chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter, then add both sugars and cream until fluffy. Add the eggs and beat slightly, then add the vanilla and beat until combined. Add the malted milk powder and beat until combined.
  • In a separate bowl, sift together the flour, baking soda and salt. Add to the butter mixture, beating gently until just combined. Add the chocolate chips and stir in gently.
  • Drop by teaspoonfuls (or use a cookie scoop) on an ungreased baking sheet, leaving plenty of space between the cookies (they spread out quite a bit). Bake for 9 to 11 minutes. The cookies will be very flat and very chewy. Allow to cool slightly before removing from pan with a spatula.
  • Optional: Allow to cool completely, then use 2 cookies to make an ice cream sandwich. Add sprinkles to the sides of the ice cream, then wrap individually in plastic wrap.

2 1/2 cups flour
1/2 cup malted milk powder
1 tsp baking powder
1 1/4 tsp kosher salt
2 tsp cornstarch
1 cup butter, melted
1 1/2 cups light brown sugar
2 eggs
1 Tbsp vanilla
2 cups chocolate chips, (optional ~ plus 1 more cup for pressing into tops of cookies)

Steps:

  • Whisk flour, malted milk powder, baking powder, salt and cornstarch together. Set aside.
  • Melt butter in a small saucepan over medium low heat. Remove from heat.
  • In large mixing bowl combine the butter and brown sugar, using wooden spoon or mixer set on lowest setting.
  • Stir in eggs and vanilla with mixer still on lowest setting until combined.
  • Stir in dry ingredients until evenly incorporated.
  • Fold in chocolate chips.
  • Chill dough for 2 hours or up to 3 days.
  • Preheat oven to 350°
  • Line baking sheet with parchment paper.
  • Scoop approximately 2 Tbsp of dough and form into a ball. Place dough 3 inches apart on lined baking sheet. Press additional chocolate chips into the top of the dough balls if desired.
  • Bake for 11-12 minutes until the edges golden. Don't over-bake.
  • Allow to cool on baking sheet for 3 minutes and then transfer to a wire rack to continue cooling.

1/2 cup (65g) malted milk powder
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cornflour/cornstarch

1/2 cup (115g) unsalted butter, melted
1/2 cup (100g) caster/granulated sugar
1/4 cup (50g) light brown sugar
1 large egg
2 teaspoons vanilla extract
1 cup Maltesers/Whoppers, chopped
1/2 cup (90g) chocolate chips, and some extra for topping

Steps:

  • Preheat the oven to 180C/350F/Gas 4, and line a baking tray with parchment paper, or a silicone mat. Set aside.
  • Whisk together the flour, malted milk powder, baking powder, cornflour, baking soda, and salt. Set aside.

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, malted-milk powder, baking powder, and salt.

Steps:

  • Whisk the flour, malted milk powder and baking powder in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low; add the flour mixture in 2 batches and beat until just incorporated. Divide the dough between 2 sheets of plastic wrap; shape each into a disk. Wrap and refrigerate until firm, 1 hour or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Working with 1 disk at a time, roll out the dough on a floured surface until 1/4 inch thick. Cut out cookies with 2- to 3-inch cookie cutters; arrange about 1 inch apart on the prepared baking sheets. Reroll the scraps once and cut out more cookies. Freeze until firm, 5 to 10 minutes.
  • Bake, switching the pans halfway through, until the cookies are golden around the edges, 12 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
  • Make the royal icing: Whisk the confectioners' sugar and meringue powder in a large bowl. Add 5 tablespoons water; beat with a mixer on medium-high speed until soft glossy peaks form, adding up to 1 more tablespoon water if necessary. Tint as desired with food coloring. 3/4 cup brown sugar
1/2 cup sugar (white, granulated)
2 eggs (large)
1 Tbsp vanilla
2 cups flour
1/2 cup malted milk powder ((Horlicks brand, preferred))
1 tsp baking soda
1/2 tsp salt
1 cup/ 8 oz milk chocolate chunks ((bittersweet also works))
flaky sea salt (for sprinkling) ((I use Maldon))

Steps:

  • Preheat oven to 375F. Prepare sheet pans with parchment paper.
  • In a large bowl, use hand held mixer to cream butter and sugars together. Mix on low speed until just combined. Then increase to medium speed and mix until pale and fluffy, about 3-5 minutes.
  • Add vanilla and eggs, one at a time, mixing on low speed after each addition. Be careful not to overmix!
  • Add flour, malted milk powder, baking soda, and salt. Mix on low speed until fully combined, about 30-60 seconds.
  • Switch to a rubber spatula and add chocolate chunks. Mix until well combined. Use either a medium cookie scoop or 1 (rounded) Tablespoon to scoop onto parchment lined sheet pan. Make sure there's enough space in between, as the cookies do spread out. Bake until browned on the edges and puffy in the middle, about 8-10 minutes.
  • Remove from the oven and sprinkle with flaky sea salt. The residual heat will help the salt stick to the cookies. Cool on sheet pan for 5 minutes before transferring to a cooling rack. Eat warm or room temperature. Enjoy!
