- Preheat the oven to 375 degrees F.
- Cream the butter, then add both sugars and cream until fluffy. Add the eggs and beat slightly, then add the vanilla and beat until combined. Add the malted milk powder and beat until combined.
- In a separate bowl, sift together the flour, baking soda and salt. Add to the butter mixture, beating gently until just combined. Add the chocolate chips and stir in gently.
- Drop by teaspoonfuls (or use a cookie scoop) on an ungreased baking sheet, leaving plenty of space between the cookies (they spread out quite a bit). Bake for 9 to 11 minutes. The cookies will be very flat and very chewy. Allow to cool slightly before removing from pan with a spatula.
- Optional: Allow to cool completely, then use 2 cookies to make an ice cream sandwich. Add sprinkles to the sides of the ice cream, then wrap individually in plastic wrap.

Steps:
- Whisk the flour, malted milk powder and baking powder in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low; add the flour mixture in 2 batches and beat until just incorporated. Divide the dough between 2 sheets of plastic wrap; shape each into a disk. Wrap and refrigerate until firm, 1 hour or overnight.
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Working with 1 disk at a time, roll out the dough on a floured surface until 1/4 inch thick. Cut out cookies with 2- to 3-inch cookie cutters; arrange about 1 inch apart on the prepared baking sheets. Reroll the scraps once and cut out more cookies. Freeze until firm, 5 to 10 minutes.
- Bake, switching the pans halfway through, until the cookies are golden around the edges, 12 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
- Make the royal icing: Whisk the confectioners' sugar and meringue powder in a large bowl. Add 5 tablespoons water; beat with a mixer on medium-high speed until soft glossy peaks form, adding up to 1 more tablespoon water if necessary. Tint as desired with food coloring. Spread or pipe on the cookies. Sprinkle with sanding sugar. Let set, 1 hour. Go to page 242 for decorating tips.

Steps:
- Preheat oven to 375F. Prepare sheet pans with parchment paper.
- In a large bowl, use hand held mixer to cream butter and sugars together. Mix on low speed until just combined. Then increase to medium speed and mix until pale and fluffy, about 3-5 minutes.
- Add vanilla and eggs, one at a time, mixing on low speed after each addition. Be careful not to overmix!
- Add flour, malted milk powder, baking soda, and salt. Mix on low speed until fully combined, about 30-60 seconds.
- Switch to a rubber spatula and add chocolate chunks. Mix until well combined. Use either a medium cookie scoop or 1 (rounded) Tablespoon to scoop onto parchment lined sheet pan. Make sure there's enough space in between, as the cookies do spread out. Bake until browned on the edges and puffy in the middle, about 8-10 minutes.
- Remove from the oven and sprinkle with flaky sea salt. The residual heat will help the salt stick to the cookies. Cool on sheet pan for 5 minutes before transferring to a cooling rack. Eat warm or room temperature. Enjoy!

- Double Chocolate Rye Cookies. This is the perfect chocolate cookie recipe. The secret to its deep flavor? it's full of both dark chocolate chunks and bits of unsweetened chocolate.
- Zebra-Striped Shortbread Cookies. These Christmas cookies look pretty intricate, but we promise that stacking the dough in alternating colors and then smushing them into a roll is as easy as making shapes with Play-Doh.
- Salted-Butter Oatmeal Chocolate Chip Cookies. Using salted butter, resting the dough, and using chopped chocolate instead of chocolate chips are all smart moves that add up to seriously good chocolate chip cookies.
- Goat Butter Shortbread. Sometimes it's the little swaps that make all the difference. Like using goat's milk butter, such as Meyenberg, instead of your regular cow's milk pick.
- Soft Gingerbread Tiles with Rum Butter Glaze. Cookie stamps give these snappy ginger cookies their embossed look and a rum-butter glaze lends a festive, antique finish.
- Frosted Malt-Chocolate Cookies. Chocolate cookies topped with chocolate frosting and a sprinkle of salt? We're in. The old-school malted milk powder this cookie recipe calls for can be found in the baking aisle or online.
- Cinnamon–Chocolate Chunk Skillet Cookie. This shareable cookie has all the flavors of a piping-hot latte, plus chocolate. Lots of hot, melting milk chocolate.
- Pastel Butter Cookies. Freeze-dried fruit provides the color for these gorgeous cookies. We especially like to use tangy mango, though an assortment of options makes an especially pretty plate.
- Butterscotch–Potato Chip Balls. People have been adding unexpected ingredients like potato chips to their cookies since the mid-1950s, and the result is nothing short of delicious.
- Peanut Butter Fingers with Salty Milk Chocolate Glaze. These chewy peanut butter bars, inspired by a vintage recipe, are dipped in a milk chocolate glaze.
