A copycat from the menu of "Sizzler", which was a copycat of "Monterey Chicken", which was a copycat of "Chicken Cordon Bleu".... So copy away.

Steps:
- Stir egg and 1 tablespoons water together with a fork.
- Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly.
- Heat oil and butter in large skillet over medium heat.
- Brown chicken 4 to 5 minutes on each side.
- Place browned chicken on cookie sheet or oven proof platter, top each piece with a slice of ham and slice of cheese.
- Bake at 350 degrees, until cheese melts.
- For the dipping sauce combine mustard and mayonnaise.
MALIBU CHICKEN II
Normally I would fry the chicken breast like I would my fried chicken but I wanted to do something different this time. I switched up some ingredients and baked it. It turned out delicious! The mayo/mustard dipping sauce served along side will remind you of a similar version Sizzler had way back when.

- 1. Whisk together the egg, milk and seasoning in a bowl big enough to dip the chicken in. Place the onions and crackers on a plate and combine. Dip the chicken into the egg mixture then press into the cracker mixture on both sides. Place the chicken on a baking sheet lined with tinfoil and lightly greased. Bake in a 350 degree oven for 30 minutes. Remove and top with the ham and cheese. Return to the oven for 5-7 minutes for the cheese to get nice and melted.
- 2. Whisk together the mayo and mustard. Keep refrigerated until ready to serve.

- Mix together the creole mustard sauce ingredients and refrigerate.
- In a small bowl, beat egg yolks with garlic. Place chicken and egg mixture in a large Ziploc bag, squeeze out all the air and seal tightly. Refrigerate for at least 4 hours, or overnight if possible.
- Preheat oven to 400 degrees. Melt butter and pour into bottom of a 9x13 baking dish. Mix together the bread crumbs and Parmesan cheese, parsley, garlic powder, salt and pepper. Dip marinated chicken in crumb mixture. Place coated chicken in baking dish, and pour remaining egg mixture over the top.
- Bake for 15 min on each side or until chicken is no longer pink and juices run clear. Top each piece of chicken with ham and slice of Swiss cheese. Place back in the oven for about 5 min or until cheese is melted. Remove from oven and serve with Creole Mustard Sauce.
- These also make GREAT sandwiches or wraps the next day, just cut it into strips.

- Flatten chicken breasts to 1/4-in. thickness. Spread 1 tablespoon mustard over each; layer with ham, cheese and pineapple. Fold chicken over pineapple; secure with toothpicks. - Preheat your oven to 400 degrees. Line a cookie sheet with tin foil. Place an oven safe rack inside your tray on top of the cookie sheet. Set aside.
- Slice your chicken in half lengthwise giving you two thin chicken pieces.
- Whisk together the butter and 2 tablespoons of Dijon in a shallow bowl.
- Whisk together the Italian breadcrumbs and Parmesan in a separate shallow bowl.
- Dip your chicken into the butter mixture followed by the breadcrumbs. Make sure to coat evenly.
- Transfer to your prepared cookie sheet. Bake 20 to 30 minutes or until your chicken reaches an internal temperature of 165 degrees. Flip halfway through for even cooking.
- Top the chicken with a slice of ham followed by a slice of cheese. Bake an additional 3-5 minutes or until the cheese is melted.
- Combine all of the ingredients for the dipping sauce in a small bowl. Mix until combined. Serve with the chicken.

- Grab 3 pie plates or similar wide, shallow dishes. Place flour in one, bread crumbs in another, and whisk egg with vegetable oil in the 3rd dish. Pat chicken dry with paper towels. One by one, dip the pieces into flour, then into the egg/oil mixture, then lastly into the Panko bread crumbs.
- Coat an oven-proof skillet with a generous amount of olive oil and place over medium heat. As you bread each piece of chicken, transfer it to the pan. Allow to cook for about 3 to 4 minutes per side, until nicely browned. Season it with a little salt and fresh ground black pepper while it cooks. You don't want to cook the chicken through at this point. Once browned, layer the chicken with a piece of ham and then top with the Swiss cheese.

- Bake: Bake for 30 - 40 minutes or until the chicken is cooked through. Remove the chicken from the oven and add the ham and cheese on top. Place back into the oven until the cheese has melted. Serve. (Serves 4-6 people)
