The first time I made this, it was an instant hit and we agreed I wouldn't change a thing about the recipe. Mustard may seem like an odd ingredient, but it adds a really nice touch. This rich-tasting dish is surprisingly light. -Beverly Norris, Evanston, Wyoming

4 boneless skinless chicken breast halves (4 ounces each)
1/2 cup honey Dijon mustard, divided
4 thin slices deli ham
4 slices reduced-fat Swiss cheese
1 can (8 ounces) unsweetened crushed pineapple, well drained
1-1/2 cups panko bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
SAUCE:
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1/4 cup reduced-fat sour cream
1/8 teaspoon dried tarragon

Steps:

  • Flatten chicken breasts to 1/4-in. thickness. Spread 1 tablespoon mustard over each; layer with ham, cheese and pineapple. Fold chicken over pineapple; secure with toothpicks. Brush bundles with remaining mustard., In a shallow bowl, combine the bread crumbs, salt and pepper. Roll bundles in bread crumb mixture; place in an 11x7-in. baking dish coated with cooking spray. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 170°. Discard toothpicks., Meanwhile, in a small saucepan, combine the sauce ingredients. Cook, stirring occasionally, until heated through. Serve with chicken.

6 boneless skinless chicken breasts (pound 'em thin)
6 slices cooked ham
6 slices swiss cheese
1 egg
1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup fine dry breadcrumb
2 tablespoons vegetable oil
2 tablespoons butter
1 tablespoon water
1 teaspoon mustard
1/4 cup mayonnaise

Steps:

  • Stir egg and 1 tablespoons water together with a fork.
  • Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly.
  • Heat oil and butter in large skillet over medium heat.
  • Brown chicken 4 to 5 minutes on each side.
  • Place browned chicken on cookie sheet or oven proof platter, top each piece with a slice of ham and slice of cheese.
  • Bake at 350 degrees, until cheese melts.
  • For the dipping sauce combine mustard and mayonnaise.

These are so easy to make and very delicious! I used thin sliced chicken breasts, so flattening wasn't necessary. The flavors blend well together for a tropical twist to this chicken dish!

4 (4 ounce) boneless skinless chicken breasts
1/2 cup honey dijon mustard, divided
4 thin slices deli ham
4 slices provolone cheese or 4 slices swiss cheese
1 (8 ounce) can unsweetened crushed, pineapple
1 1/2 cups panko breadcrumbs (Japanese)
1/4 teaspoon salt
1/4 teaspoon pepper
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup sour cream
1/8 teaspoon dried tarragon, parsley or 1/8 teaspoon dill weed

Steps:

  • Flatten chicken breasts to 1/4" thickness (I just bought the thinly sliced breasts and didn't flatten).
  • Spread 1 tablespoon mustard over each; layer with ham, cheese, and well drained pineapple. Fold chicken over pineapple; secure with toothpicks.
  • Brush bundles with remaining mustard.
  • In a shallow bowl, combine bread crumbs; place in an 11"x7"x2" baking dish coated with cooking spray. Bake, uncovered, at 350 degrees for 45-50 minutes. Discard toothpicks.
  • Meanwhile, in a small saucepan, combine the sauce ingredients. Cook, stirring occasionally, until heated through. Serve with the chicken.
