MALAWAH (SOMALI SWEET PANCAKE)
Steps:
- Gather the ingredients.
- Beat or whisk all ingredients together in a bowl. Alternatively, mix together with a hand-held blender.
- Heat up a frying pan with enough butter or oil to lightly coat surface.
- Ladle some batter into pan and swirl such that batter distributes to make a thin layer which spreads towards curving sides of pan
- Fry for about a minute or until lightly golden, then flip over and fry another minute or so on the other side.
- Serve malawah by spreading melted butter and honey on top or sprinkling some sugar on top.

Steps:
- Procedure:.
- 1.Put flour and salt in food processor and add water. (Use plastic blade.).
- 2.Process until dough forms a ball.
- 3.Add more flour or water as needed. Dough should be very soft, but not sticky.
- 4.Transfer dough to a bowl, cover and let stand 1 hour.
- 5.Divide it into 2 parts.
- 6.Roll out 1 part and spread with half the margarine.
- 7.Fold in thirds, roll out and fold in thirds again. Do this 1 more time.
- 8.Let stand covered with a damp towel for 1 hour.
- 9.Do the same with rest of dough.
- 10.Divide dough in thirds.
- 11.Roll out each piece very thinly.
- 12.Heat skillet add 1 tsp margarine and fry bread in until golden brown. Flip over and cook second side until golden too.
- 13.Transfer to a warm plate while you do the rest.
- 14.Serve warm with hummus or a tomato sauce.

This is a flaky Yemenite bread that my friend Yechiel taught me to make in Israel. It is delicious with puréed tomatoes and zhoug (a spicy condiment--I posted the recipe separately) or with honey. Well worth the effort! (Cook time is rest time).

Steps:
- Sift the baking powder into the flour, make a well in the center and add water, 1 tablespoon of the butter, salt, sugar and vinegar.
- Knead to a smooth elastic consistency.
- Cut into 6 equal portions,and allow to "rest" in a cool place for 20 minutes Flatten each piece to a 6-inch round.
- Brush each round with the melted butter, then roll it into a tight sausage shape Allow the rolls to rest for 20 minutes.
- Repeat the flattening,rolling and brushing procedure twice more, waiting 20 minutes between rolling and re-flattening (final results should be flat like pita).
- Using a non-stick skillet/frying pan, fry the malawah on both sides until golden brown, flipping them over at half time.

Malwah is a Yemenite fried dough that you can easily make at home with help from Tnuva, it is delicious on its own, but can be dressed up to make a full meal with this simple chicken topping.

- Begin by whisking together the flour, sugar and salt in a bowl. Then add the milk and egg and whisk this together until you have a smooth consistency.
- Heat 1 teaspoon of vegetable oil on a griddle or in a non-stick pan. Spoon the pancakes onto the griddle and use the base of the ladle to spread the batter. Cook until the top of the pancake is translucent.
- Pour 1/2 tsp of vegetable (or sunflower) oil onto the pancake and flip. Let the base cook until its golden brown and crisp, 1 to 2 minutes. Using a spatula, transfer the pancakes to a serving plate.
- Wipe the griddle clean with paper towels, add more oil, and repeat with the remaining batter. Serve the pancakes while still hot with chocolate, or granulated sugar if desired.

- In a large bowl, whisk together the flour, pastry flour, sugar, salt and baking powder. Make a well in the center and slowly add the water, stirring with your hands or a wooden spoon, until a shaggy dough forms. Transfer the dough to a clean surface and knead until smooth and elastic, 5 minutes. Wipe the bowl clean and lightly grease with oil, then place the dough inside and cover with a kitchen towel to let rest 30 minutes.
- Turn the dough onto a clean surface and, using a pastry scraper or large knife, cut into 9 even pieces. Cover and let rest another 30 minutes.
- Grease one rimless metal baking sheet with 1 tablespoon of the butter. Line a second baking sheet with parchment and set aside.
- Place one piece of dough onto the buttered baking sheet and pat 2 tablespoons of soft butter on top. Using flat hands, press and slide the buttery dough outward, stretching it into a very thin rectangle, around 10-by-12-inches. It's OK if a couple little tears occur.

- In the bowl of a stand mixer, combine the flour and water and mix using the dough hook until a soft dough is formed. Leave the motor running to knead the dough for a few minutes - it should leave the sides of the bowl clean.
- Roll a piece of dough into a circle roughly 20-25cm (8-9 inches) in diameter and spread a quarter of the margarine evenly over it - it will look like a lot of margarine! Roll up to form a long roly-poly, then fold the ends in to give three layers. Finally, flatten together slightly with the rolling pin and set aside.
